"My mother would make a batch of sauce on Saturday, buy the ham, and after church on Sunday, our hungry family would be able to have a fast meal," she writes.

PITTSBURGH HAM BARBECUES
I grew up on these delicious, sweet, and tangy barbecue sandwiches made from chipped deli ham. This dish is a staple in Western Pennsylvania, although each family seems to have its own way of making them! It's a terrific last-minute meal. Chipped chopped ham is a pressed ham loaf sold at deli counters in the Pittsburgh area which is always chipped. If you can get Islay's Chipped Ham, that is the original and still the best for these sandwiches. Otherwise, just get any deli ham and have it chipped or shaved paper thin. Enjoy!

- Preheat an oven to 275 degrees F (135 degrees C).
- Melt the butter in a large skillet over medium-high heat; cook and stir the onions in the butter until translucent, about 5 minutes. Stir the ketchup, vinegar, water, brown sugar, mustard, and Worcestershire sauce into the skillet with the onions; simmer about 10 minutes. - Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- In a bowl, mix together butter, Dijon mustard, Worcestershire sauce, poppy seeds, and dried onion. Separate the tops from bottoms of the rolls, and place the bottom pieces into the prepared baking dish. Layer about half the ham onto the rolls. - Cut the ham. You want to make small squares or rectangles, so I guess it's chopped? Cut the ham into thin strips, then cut the strips into little rectangles.
- Heat a big blob of BBQ sauce in large skillet over medium heat. Toss the chopped ham into the BBQ sauce and add a bunch more sauce on top. Stir the sauce and the ham so that the ham is evenly coated. Continue to heat until the whole thing is a bubbly mess of amazing BBQ aroma.
- Make the sandwiches by topping the toasted bun with a big spoonful or three of the hot BBQ ham, a slice of cheese, and the top bun.
