FEIJOA JELLY

This is a fun and different jelly to make! I buy my Feijoas online from Melissa's Produce and this recipe comes from www.melissas.com. My addition to the recipe was the butter which will make skimming the foam unnecessary but don't add more than 1/2 teaspoon as this could raise the ph of the recipe too much and make it unsafe for canning. Cook time includes processing time.

Feijoa Jelly image

Steps:

  • Place the finely diced feijoa into a 6 quart stock pot. Add the vinegar, butter and pectin and stir to combine.
  • Bring the mixture to a full rolling boil on high heat, stirring constantly. Stir in the sugar quickly, return to a full rolling boil and boil for 1 minute, stirring constantly.
  • Skim foam off the top if necessary (you shouldn't need to if using the butter in the recipe) and quickly ladle the hot jelly into prepared hot jars leaving 1/8 inch headspace. Adjust two-piece caps.
  • Process 5 minutes in a boiling-water canner (adjust for altitude).

4 cups finely diced feijoas
1 cup cider vinegar
5 cups white sugar
1 (1 3/4 ounce) package dry pectin
1/2 teaspoon butter

FEIJOA WHIP

This recipe was passed onto me by a good friend and has become a firm family favourite when the feijoas start dropping off the trees. Cook time includes refrigeration.

Steps:

  • Chop feijoa's finely.
  • Put in pan with sugar.
  • Bring to boil.
  • Add jelly and cook until disolved.
  • Chill the jelly mixture until starting to set.
  • In seperate bowl whip the milk and salt until doubled in bulk and stiff.
  • Fold in the feijoa jelly mixture that should be half set.
  • Pile into a serving dish and chill until set.

I found this recipe on the net per a recipe request. There was no processing time attached. I would process 10 minutes.

Steps:

  • Place feijoas, water, lemon juice and zest in a large stainless steel pot and bring to a boil over medium heat, and cook until fruit is soft, around 15 minutes.
  • Add warmed sugar and stir until it dissolves.
  • Bring jam to a rapid boil and boil without stirring until the mixture reaches the setting point, around 20 minutes.
  • Pour jam into hot sterilized jars, seal and process.

2 lbs feijoas, peeled and sliced

  • Peel the feijoas and chop roughly into a large pot. Add the sliced ginger, orange and lemon zest. Fill with water to 1cm above the feijoas. Bring to a simmer for 10-12 minutes or until the feijoas are completely soft. If the feijoas are hard it may take a little longer.
  • Place a bowl under a strainer and line it with muslin. Carefully pour in the feijoas and juice. Gather up the sides and tie with string. Hang the muslin over the bowl, tying it high enough for the juice to drip slowly through. Do not be tempted to squeeze the muslin. Leave overnight to drain.
  • Next day, measure the juice into a clean pot. For each cup of juice add 1 cup of sugar. Slowly bring to a simmer, then boil gently for 15 minutes. Remove the scum from the top as it boils — it is ready when a little is tested on a saucer and it will almost set.
