Steps:

  • For the fig-infused bourbon: Put the figs in a pint jar, pour over the bourbon and cover tightly. Set aside in a cool, dark place for at least 2 days and up to 7 days.
  • For the fizz: Divide the fig between 2 old-fashioned glasses. To each glass, add 1 teaspoon of the maple syrup, a small squeeze of lemon juice and a couple of dashes of bitters. Muddle the ingredients until well incorporated.
  • Fill the glasses with crushed ice. Pour over 1 1/2 ounces of fig-infused bourbon, then top with some ginger beer. Garnish with a lemon twist and serve.

  • For the sauce:
  • In a large saucepan, melt the butter. Add the shallot and garlic cloves and saute, about 2 to 3 minutes. Stir in the bourbon, brown sugar and the honey to heat through, 1 minute. Next add the ancho pepper, chili sauce, barbecue sauce, and wing sauce and cook, stirring occasionally for 2 minutes. Keep warm until ready to serve.
  • For the chicken wings:
  • Heat oil in a deep-fryer. As you make the sauce, drop chicken wings, in batches (the amount you drop in at 1 time will depend on the size of your fryer) into the deep-fryer. Fry until golden brown on both sides. Remove the wings from the oil and drain.
  • Add the wings to a large mixing bowl and toss in the sauce, coating each wing.
  • Serve blue cheese dressing and 1/2 shots of bourbon, on the side, for adults to sip.

Tired of the same old red pepper and butter 'hot sauce' on your wings? Try this on your next batch for a change of pace. We're crispy wing lovers, so we always make them fried. It might work for baked wings as well, but that hasn't been tested...yet. Make your fried wings according to your favorite recipe, coat the wings in this sauce, and sprinkle with sesame seeds just prior to serving. You should be able to coat about a dozen wing pieces with the recipe. Your wings are going to be sticky but the wing lovers I hang with claim they're well worth the mess.

Steps:

  • Stir the bourbon, brown sugar, ketchup, white vinegar, hot sauce, cayenne pepper, garlic powder, honey, and butter together in a saucepan over medium heat; cook, whisking occasionally, until the mixture begins to bubble. Reduce heat to low and cook at a gentle simmer, whisking occasionally, until the sauce thickens nearly to the consistency of maple syrup or molasses, about 15 minutes. Remove from heat and allow to cool.

Steps:

  • Lightly coat large non-stick skillet with cooking spray. Place frozen wings in a single layer in the prepared skillet.
  • In a small bowl, combine the remaining ingredients. Pour mixture evenly over chicken.
  • Cover and cook over medium heat 20 minutes or until chicken is no longer pink inside, turning wings often to prevent from sticking.

Sticky bourbon BBQ wings with blue cheese dip image

Steps:

  • Heat oven to 220C/200C fan/ gas 7. Cut the chicken wings into winglets by slicing through each of the joints. Keep the two meaty pieces and discard the wing tips, or freeze for stock.
  • Put the winglets on a large baking sheet, drizzle with the olive oil, then season. Roast in the oven for 20 mins, then reduce the temperature to 180C/160C fan/ gas 4 and cook for a further 25 mins.
  • Meanwhile, make the barbecue sauce. Put all the ingredients, except the butter, in a pan and mix together with plenty of black pepper. Let it bubble away for 3-5 mins to thicken up a little, then add the butter and stir until it has melted and made the sauce nice and shiny. Season to taste.
  • Half an hour before the chicken wings are ready, take them out of the oven and brush over three-quarters of the barbecue sauce. When they're fully cooked, toss them in the rest of the sauce so that they become sticky.
  • In a small bowl, mash the blue cheese dressing ingredients together with some seasoning, until combined. The barbecue sauce and dip can be made a day ahead, covered and chilled. Serve alongside the wings with the celery sticks and radishes for dipping.

  • If you don't have the sauce prepared ahead of time, you can easily make it while the wings bake, too. Whisk together the sauce ingredients in a pan over medium heat and bring to a simmer. Whisk occassionally and simmer for 10-15 minutes.
  • Preheat the oven to 425°F. Line a large rimmed baking sheet with foil and place oven-safe wire cooling racks on top of the pan/foil.
  • Pat the chicken wings dry, then evenly coat with salt and pepper. Evenly sprinkle the baking powder (NOT SODA) across the chicken wings, tossing to coat, ensuring they are covered and no baking powder clumps remain; you want to lightly and evenly coat the wings, we're not making a breading. Place the wings on the cooling rack/pan, skin side up, and place in the oven.
  • Bake for 35 minutes, flipping halfway through cooking time if desired. I like to flip them, for good measure on the crispiness factor, but it isn't totally necessary. At 35 minutes, check the internal temperature of the wings. They need to be at an internal temperature of at least 165°F. If they are, and the skin is crispy enough to your liking, remove them from the oven. If the skin needs to get a little more crispy, flip them back to the skin side and bake for an additional 10 minutes (note the cooking time is going to depend on how big/small your wings are, too).
