FIRESIDE COFFEE
This is not your regular cup of hot chocolate. It's gets an extra kick from the coffee. I keep this stuff made up all the time and love to make it using decaf so I can enjoy a cup in the evening. This is good stuff!

Steps:
- Mix all ingredients, place in tins or jars.
- Mix 2 heaping Tablespoons (1/3 cup) mix to 2/3 cup hot water.
- Cinnamon and nutmeg can be substituted with 1 1/2 teaspoon Pumpkin Pie spice.

FIRESIDE CREME BRULEE COFFEE
Steps:
- Preheat the broiler on low. Line a baking sheet with a silicone baking mat.
- Sprinkle 2 teaspoons of the turbinado sugar in a 3 1/2-inch circle on the baking mat; you can use a biscuit cutter as a template if needed. Repeat with the remaining sugar to make 4 sugar circles/discs. Broil until the sugar melts and caramelizes, 1 to 2 minutes. Let cool completely.
- To each of 4 coffee mugs add: 1/4 cup rum cream liqueur, 1 tablespoon light cream, 1 teaspoon vanilla extract and 1 cup coffee. Carefully remove the caramelized sugar discs from the baking mat and place 1 disc on top of each mug. Crack the sugar with a spoon, let it fall into the coffee and stir to dissolve.
FIRESIDE COFFEE
Warm and soothing hot drink that is a relaxing companion. Great for camping, hiking, or just to unwind the stress of your day. You can use decaf instant coffee if preferred. To use, mix 2 to 3 heaping tablespoons of mix in a mug of hot water.

- Use two or three Tbsp of mix per cup of boiling water.
HOLIDAY SPICED COFFEE
Steps:
- Add the ground coffee and pumpkin pie spice to the coffee filter of a drip coffee maker. Add 6 cups of water to the machine. Add the strips of orange zest to the empty carafe.
- Brew according to the manufacturer's instructions. The orange zest should stay in the carafe as the cups are filled.
FIRESIDE HOLIDAY COFFEE
I found this recipe in our local electric co-op magazine. I love to keep mixes like this fixed up so that there is always something for making those hot drinks on the spur of the moment. Besides, guest will think you are great when you serve them this. And if you are watching your caffine, it is just as good with decafinated coffee.

- In a 2-cup glass measuring cup, microwave the half-and-half on HIGH for 1-2 minutes or until steamy.
- Pour over chocolate; let stand 1 minute, and whisk until smooth.
- Stir in coffee and next 4 ingredients (stir until sugar is dissolved; may need to heat on stove over low heat to maintain desired drinking temperature).
- Serve immediately with whipped cream on top.

HOLIDAY COFFEE
This is delicious! I use a tablespoon of ground coffee for each cup of coffee. You could always change the amounts to suit your tastes. It would be nice to serve this with chocolate spoons. To make chocolate spoons melt chocolate chips in a double boiler. Coat a teaspoon with the chocolate. Place on parchment paper and freeze. Happy Holidays!
