- Preheat oven to 425°. Mix first 4 ingredients and 1 tablespoon cheese. Place tilapia on a baking sheet coated with cooking spray; spread evenly with mayonnaise mixture. , Toss bread crumbs with melted butter and remaining cheese; sprinkle over fillets. Bake until fish just begins to flake easily with a fork, 12-15 minutes.

This is from a WW cookbook called "15-Minute Cookbook" dated 1998. I have notes in it saying "really good". Dijon mustard has a strong, distinctive flavor. You can us honey mustard, sweet-hot mustard, or spicy mustard. Enjoy!

- Heat oven to 450 degrees.
- Arrange fillet in an 11X7 inch baking dish coated with cooking spray.
- Combine mustard, lemon juice, and Worcestershire sauce, stirring well; spread mixture evenly over fillet.
- Sprinkle breadcrumbs evenly over fish.
- Bake, uncovered, at 450 degrees for 12 minutes or until fish flakes easily when tested with a fork.
- Cut fillet in half, and serve immediately.

- Preheat oven to 450°F. Butter 13 x 9 x 2-inch glass baking dish. Arrange fish fillets in prepared dish. Season with salt and pepper. Blend butter, Dijon mustard, lemon juice and Worcestershire sauce in small bowl. Spread half of butter mixture over each fillet, covering completely. Sprinkle half of breadcrumbs over each.
- Bake fish until just cooked through, about 7 minutes. Sprinkle parsley over. Garnish with lemon wedges.

- In a small saucepan, melt butter. Remove from the heat; stir in the lemon juice, mustard and salt. Remove 2 tablespoons; set aside. Pour remaining marinade into a large resealable plastic bag; add the fillets. Seal bag and turn to coat; set aside for 20 minutes., Drain and discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. MONKFISH FILLETS DIJON STYLE

- Preheat the oven to 450 degrees.
- Select a baking dish large enough to hold the monkfish fillets in one layer without crowding. Pour olive oil over the bottom. Turn the fillets in the oil to coat well all over. Sprinkle with salt and pepper. Brush the fillets with mustard. Scatter onions and garlic around the fillets.
- Place the baking dish on top of the stove and heat until the oil begins to sizzle. Add the white wine and scatter the mushrooms around the fillets. Bring the wine just to a simmer.
- Place the baking dish in the oven and bake 15 minutes. Baste the fillets and return to the oven. Continue baking about 5 minutes. Swirl the butter in the sauce. Sprinkle with parsley and serve.

HONEY DIJON SALMON
This dish is so delicious but also so simple to put toghether. It tastes great with rice and roasted asparagus. You could add a tablespoon or so of melted butter to the mustard mix but it's not necessary. Add the garlic and soy sauce depending on how salty and garlicky you like your food.

- Preheat oven to 375 degrees.
- Rinse the fillets and pat dry; set aside.
- In a shallow bowl, whisk together the honey, mustard, and lemon juice.
- In a separate shallow bowl, combine the bread crumbs with the thyme and add a few shakes of salt and pepper.
- Dip each fillet into the honey-mustard sauce and then dredge it in the bread crumb mixture to coat both sides evenly.

- Line a shallow baking pan/sheet with foil, lightly grease the foil.
- Place the salmon fillets skin-side down on the foil.
- Spread about 1 tablespoon of Dijon mustard over the top of each fillet then season with salt and lemon pepper (or use black pepper in place of the lemon pepper).
- Top each fillet with about 1/4-1/3 cup dry bread crumbs (pushing down gently to adhear to the fish).
- Drizzle about 2 tablespoons (or more) of melted butter on top.
- Bake for about 15 minutes or until the fish flakes easily with a fork.
