Easy, inexpensive and really tasty.Mix 1/2 c. mayo and 1/2 c. sweet pickle relish to make a tartar sauce to go with this.

Steps:
- Beat all ingredients (except flour for coating fillets) with electric mixer until well incorporated.
- Optional: Cover fillets with flour before dipping in batter.
- Dip 2 1/2 lbs of cut up fish into batter.
- Cook in hot oil until golden brown 3-6 minutes.
- Drain well on paper towels.
UNBELIEVABLE FISH BATTER
In the early 1950's, I received this recipe on an open-line, talk-radio show. It makes the lightest, crispiest batter imaginable. This makes enough to coat approximately 2 pounds of fish.

- Place panko, flour, and eggs in three separate shallow dishes; season flour with salt and pepper.
- Fill a large skillet with enough oil to reach a depth of 1/4-inch; heat over medium-high heat. Working in batches, dredge fish in flour, shaking off any excess; dip into egg. Transfer fish to panko, covering fish completely and pressing lightly to adhere. Arrange fish in the pan in a single layer without crowding; fry until golden and cooked through, about 1 minute per side. Transfer to a paper towel-lined plate to drain; season with salt. Serve immediately.

- Preheat oven to 400°. In a shallow bowl, mix bread crumbs and seasonings. Place flour and egg in separate shallow bowls. Dip fish in flour to coat both sides; shake off excess. Dip in egg, then in crumb mixture, patting to help coating adhere., Place on a baking sheet coated with cooking spray; spritz with butter-flavored cooking spray. Bake 10-12 minutes or until fish just begins to flake easily with a fork, turning once.

- Dry & cut fish: Pat fish dry using paper towels or a tea towel. Cut into 7 x 3cm / 3 x 1¼" batons, or larger fillets if you prefer. If you have very thick fillets, cut in half horizontally (Note 1)

- Place the fish fillets in the freezer until firm, about 30 minutes, then finely chop. (If you bought them frozen, thaw for half an hour at room temp before cutting.)
- Place the fish in a bowl along with 1/4 cup of the panko, 1 of the eggs, and the mayonnaise, mustard, salt, onion powder, and cayenne pepper. Use your hands or a large spoon to combine.
