Easy fried cakes very similar to pancakes.

Steps:
- Beat egg. Mix in milk. Sift flour, salt, sugar, and baking powder; beat into egg mixture until smooth.
- Pour oil into a heavy pan until it is 1 inch deep. Heat to 375 degrees F (190 degrees C).
- Pour batter through funnel into oil with a circular motion to form a spiral. Fry until lightly brown; turn over to brown the other side. Cook to golden brown, and remove to drain on paper towels. Sprinkle with confectioner's sugar while still warm.

- Sift together flour, baking powder, salt, and sugar in a large bowl.
- Whisk in melted butter, egg, and milk until combined. Let batter rest for 5 minutes.
- Preheat a large skillet over medium-high heat. Spray with cooking spray. Pour batter into the hot skillet, about 1/4 cup of batter for each pancake. Cook for 2 to 3 minutes, until bubbles appear on the sides and center of each pancake. Flip and cook until golden, about 1 to 2 minutes.

BEST EVER PANCAKES
I'm not a pancake lover, but these are delicious. Recipe courtesy of Feeding the Flock (For All Our Friends--From the Koffee Pot, Nampa ID) and Maxine Carroll. I threw in a splash of buttermilk to regular milk to make buttermilk. The recipe doesn't state how to cook, but I used 1/4 cup measure for the batter and cooked in a slightly greased pan (flip when you see bubbles on the first side). Serving size is estimated.

- Pour enough oil into a skillet to completely coat the bottom and heat over medium-high heat.
- Blend flour, sugar, water, milk, egg, baking powder, vanilla extract, and salt together in a blender until smooth. Add more flour if batter is too watery. Put your finger over the hole of a funnel and fill funnel with batter.
- Hover filled funnel over the skillet, release finger, and swirl batter into the hot oil; cook until golden brown, about 5 minutes per side.

This recipe comes from my Mother's first cook book. The American Woman's Cook Book, copywrited in 1938. To this day, these are still the best pancakes I've tasted. Light, fluffy and delicious!

- Sift flour, salt and baking powder together.
- Beat egg yolks and add milk and shortening.
- Beat in flour with a rotary beater (or electric mixer).
- Fold in stiffly beaten egg whites.
- Bake on hot griddle, turning to brown both sides.
- Makes 24.
FLANNEL CAKES
This is the world's best pancake recipe. It comes from the "American Woman's Cookbook", circa 1938, revised 1970. I learned to make these because my mother's pancakes sank like lead in your stomach. These float like air! I like to serve these with jam instead of syrup.

Steps:
- In a small bowl, sift together dry ingredients.
- In a large bowl, beat egg YOLKS only.
- Add milk and oil to egg yolks and mix well.
- In a separate bowl, beat egg whites until stiff peaks form.
- Stir dry ingredients into the egg yolk and milk mixture.
- Fold egg whites into batter.
- Be sure to FOLD and not STIR so that the egg whites retain as much air as possible.
- Measure out by the 1/4 cupful onto a griddle or skillet over medium high heat.
- When bubbles just start to"pop" in the batter and edges are set, flip over.
- Pancake will puff up and rise as it cooks.
- Cook until just golden brown.
- If you are going to hold the pancakes in the oven until you serve them, undercook the first ones so that they continue to cook in the oven.

Steps:
- In a large bowl, whisk together the first 5 ingredients. In another bowl, whisk remaining ingredients; stir into dry ingredients just until moistened., Preheat griddle over medium heat. Lightly grease griddle. Pour batter by 1/4 cupfuls onto griddle; cook until bubbles on top begin to pop and bottoms are golden brown. Turn; cook until second side is golden brown. Serve with toppings as desired.

BEST PANCAKES EVER
These pancakes are so easy to whip up on the weekends. They always turn out perfect. They are not to flat, just light and fluffy. My kids beg for them. I double or triple my recipe and put the leftovers in plastic bags in the refrigerator. The kids or whomever wants them can heat them up in the microwave in the mornings. Hope you like these as much as my family does.

Steps:
- In a mixing bowl, add the eggs and sugar; beat on high speed for about 5 minutes or until light and fluffy.
- Sift the flour, baking powder, and salt into another bowl.
- Stir 1 cup of milk and the melted butter gently into the egg mixture just until blended.
- Pour the liquid ingredients over the dry.
- Fold gently until the dry ingredients are moistened.
- If the batter seems too thick, add milk 1 tablespoon at a time.
- Do not over mix.
- Heat a non-stick skillet or griddle over medium heat until it is hot enough for a drop of water to sizzle.
- Brush skillet with a small amount of oil or spray with non-stick cooking spray.
- Pour 1/3 cup batter into the skillet; spread evenly.
- Lower heat to med-low.
- Cook until top side is covered with tiny bubbles and bottom side is golden.
- Flip pancake and cook until lightly browned.
- Keep pancakes warm while cooking the rest of the batter.
- Serve with syrup of your choice.
