FLATBREAD WITH CARAMELIZED ONIONS AND GORGONZOLA

Onion and bleu cheese lovers, this is a decadent treat! This makes a lot, I usually cut down the recipe a bit unless I'm having guests.

Flatbread With Caramelized Onions and Gorgonzola image

Steps:

  • Cook onions in butter in a large skillet for about 10 minutes, or until wilted.
  • Sprinkle with sugar, salt and pepper and continue to cook for 20-30 minutes until browned and tender.
  • Cool.
  • Place tortillas in a single layer in a preheated 375°F oven directly on oven racks until crispy and lightly browned, 4 to 6 minutes.
  • Place tortillas on baking sheets in a single layer.
  • Spread tortillas with onions and dot with Gorgonzola.
  • Sprinkle with Parmesan and rosemary.
  • Bake 8 to 10 minutes until cheese melts.
  • Sprinkle with basil.
  • Cool one minute.
  • Cut each into 8 wedges with a pizza cutter.

2 lbs onions, chopped
2 tablespoons butter or 2 tablespoons oil
2 tablespoons brown sugar
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
4 large flour tortillas (not the super size, not the 7-inch, the size in-between)
3/4 lb milk gorgonzola, in little pieces
1/2 cup freshly grated parmesan cheese
1 tablespoon chopped fresh rosemary
1/4 cup shredded basil

ONION FLATBREAD

This impressive flatbread couldn't come together more simply. Prepared pizza dough is stretched and topped with thinly sliced onions and shredded cheese. Bake until browned in a hot oven and that's it! Top with herbs and flaky salt and you have a delicious side dish perfect with any meal or on its own.

Steps:

  • Press 12 ounces pizza dough into an 8-by-12-inch rectangle on a floured parchment-lined inverted baking sheet. Rub with 2 tablespoons olive oil, then top with 1/2 cup shredded cheddar and 1/2 thinly sliced red onion. Slide the parchment onto a preheated pizza stone or baking sheet in a 475˚ F oven; bake until browned, 9 to 11 minutes. Top with sea salt and chopped parsley.

Steps:

  • Melt butter in 7-inch skillet over medium heat. Cook onions, brown sugar and vinegar in butter 20 to 25 minutes, stirring frequently, until onions are golden brown.
  • Set oven control to broil. Place baguette slices on ungreased cookie sheet. Broil with tops 4 to 6 inches from heat 1 to 2 minutes or until lightly toasted.
  • Spoon about 1 teaspoon caramelized onions evenly onto each baguette slice. Sprinkle with 1/2 teaspoon of the cheese. Broil about 1 minute or until cheese is melted.

  • Coat a pizza baking sheet with nonstick cooking spray or olive oil. Roll the pizza dough so that it fits on the baking sheet. Brush 1 tsp of the olive oil over the top of the dough. Bake 5 to 7 minutes or until golden brown. Remove from oven and let cool.

  • In a large bowl, dissolve yeast in 1 cup warm water (about 100°). Let sit until foamy, about 5 minutes. Stir in flours, 2 tbsp. oil, and 1 tsp. salt. (Dough will be stiff.) Cover bowl with plastic wrap and let sit in a warm place to rise until 1 1/2 times its original volume, about 1 hour.
