PINE NUT-CRUSTED TILAPIA
This golden-brown fish has a tender texture, nutty coating and hint of sweet honey. It's fast to fix and can be served for a special family meal or when you want to impress guests.

- In a shallow bowl, combine the pine nuts, flour, dill and lemon-pepper. In another shallow bowl, combine the egg, lemon juice and honey. Dip fillets in egg mixture, then coat with nut mixture., In a large nonstick skillet, cook fillets in butter over medium heat for 4-5 minutes on each side or until fish flakes easily with a fork. Drizzle with additional honey if desired.

FISH IN PINE NUT SAUCE

- Preheat the oven to 350°F. Spread the pine nuts on a baking sheet and toast in the oven, stirring occasionally, until fragrant and golden, about 8 minutes. Pour onto a plate to cool. Transfer 1/4 cup of the toasted nuts to a nut grinder or small food processor and grind or pulse until finely ground.
- In a frying pan, heat 2 tablespoons of the oil over medium heat. Add the onion and cook, stirring occasionally, until softened and translucent, about 8 minutes. Add the paprika, garlic, ground pine nuts, bread crumbs, and saffron, if using, and cook, stirring often, for 3 minutes. Add the tomatoes and stock and cook, stirring occasionally, until thickened, 5 to 8 minutes. Season to taste with salt and pepper. Keep warm over low heat.
- In a large frying pan, heat the remaining 2 tablespoons oil over medium heat. Sprinkle the fish with salt and pepper, add to the pan, and cook, turning once, until browned on both sides, about 3 minutes on each side. Pour the sauce over the fish, add the peas, if using, and simmer until the fish is opaque throughout, about 5 minutes longer. Transfer to a serving dish or individual dishes, and garnish with the remaining pine nuts and the parsley. Serve at once.
- Variation
- You can skip the step of browning the fish, and instead poach it in the sauce. Or, you can combine the fish and the sauce in a baking dish, making sure the fish is fully covered by the sauce, and bake in a preheated in a 450°F oven until fish is tender, 10 to 12 minutes, depending on the thickness of the pieces. If baking, do not reduce the sauce too much, as some of the liquid will evaporate in the oven.
FLOUNDER WITH LEMON ORANGE SAUCE
Created this to tickle the taste buds! Hope you enjoy it as much as we do! You can use other fish or even chicken in lieu of the flounder. I served it recently with my cole slaw. We enjoyed potato salad and string beans too with this flounder.

- 1. Beat eggs and place in a shallow bowl.
- 2. Mix together flour, tarragon, salt, garlic and onion powder, old bay, paprika and black pepper. Place in a shallow bowl. Reserve 1 tbsp. flour for the sauce.
- 3. In a large skillet, heat butter and oil over medium heat. Dip fillets in flour and then in the egg. Place in skillet; if right temperature you will hear fish sizzling.
- 4. Fry over medium heat until both sides are a golden brown. Depending on the thickness this can be 2-4 minutes per side. Repeat process until done. Remove each finished batch of fish from pan and keep warm in a slightly covered plate.
- 5. To make the sauce, drain the pan and wipe clean. Oven medium heat, add butter and olive oil. Then whisk in the reserved tbsp. flour until smooth. Add the lemon and orange juice, water, fresh parsley and red pepper flakes if using. Whisk constantly to blend.
- 6. Bring to a boil and cook 5 minutes, whisk every now and then. If sauce thickens too much, dilute by adding 1 tsp. of water at a time until you get desired consistency.
- 7. Place flounder on individual plates and spoon sauce over the fish. Garnish with lemon wedges and fresh basil.
SNAPPER WITH SEVILLE ORANGE JUICE, PINE NUTS AND OLIVES

- Heat oven to 400 degrees. Oil a piece of foil large enough to wrap fish in. Place fish in middle of foil, and fill its cavity with peppercorns, 4 bay leaves and Seville orange zest (or orange and lime zest).
- Sprinkle fish with salt and fold two sides of foil together, sealing with a pleat. Fold other two sides in to enclose fish; place on a baking sheet with folds up. Bake 45 minutes.
- About 15 minutes before fish is ready, place Seville orange juice (or orange and lime juice) in a small saucepan. Add remaining bay leaf, olives and pine nuts. Place over high heat to bring to a boil, then reduce heat to low. Simmer uncovered for 5 minutes. Remove from heat, cover and keep warm.
- To serve, open foil and peel away skin from top of fish. Carefully remove top fillets and place on warm serving plates. Lift bone from tail end, and place bottom fillets on plates, leaving skin behind. Top each serving with a spoonful of orange sauce and a sprinkling of parsley. Pass remaining sauce at table.

GRILLED ORANGE FLOUNDER
A way that I cooked a whole flounder on the BBQ that turned out well. The orange juice runs through the fish during cooking giving it a sweet flavour, while the remainder of the rind when placed to the side of the dish can be eaten from time to time as a more sour offset.

- Place flounder on top of piece of foil large enough to wrap it securely.
- Cover with orange slices and sprinkle with pepper and herbs.
- Wrap tightly in foil and cook in a pre-heated BBQ with hood down for approximately 30 minutes, turning once during cooking.
- Open the foil and continue to cook approximately 15 minues with the BBQ hood still down.

FLOUNDER IN ORANGE SAUCE WITH PINE NUTS

- Heat broiler. Arrange fish on broiler pan and rub them with a few drops of oil. Broil about 2 inches from source of heat, 4 to 5 minutes, depending on thickness of fillets. Do not turn them.
- Heat 1 tablespoon of oil in small skillet. Saute raisins and pine nuts over medium heat 2 to 3 minutes, until nuts begin to color. Stir in orange juice concentrate, lemon juice and water and simmer to heat.
- When fish is cooked, arrange on serving plates and spoon sauce over. Sprinkle with parsley.
