Be very careful to stand away from the stove when you add the rum -- the flames will be brief but dramatic.

Steps:

  • Peel bananas, and carefully cut in half lengthwise.
  • In a medium saute pan over medium heat, melt 1 tablespoon butter. Add 2 tablespoons brown sugar, and swirl until dissolved.
  • Add 2 bananas, cut side down, and cook for about 2 minutes on each side, turning very carefully.
  • Pouring from a measuring cup, with the pan off the heat, add 1/4 cup rum. Stand back from stove, and return pan to heat. Shake the pan, allowing rum to ignite. Let the alcohol burn off, and again shake the pan, to coat the bananas. Cook until glazed and translucent, about 1 minute longer.
  • Remove bananas to warm plates, divide sauce between them, and repeat with remaining 2 bananas.
  • Garnish each banana with a little dab of creme fraiche or sour cream, and serve immediately.

4 bananas, ripe but firm
2 tablespoons unsalted butter
1/4 cup dark-brown sugar
1/2 cup dark rum
Creme fraiche or sour cream, for topping

FRIED PLANTAINS WITH POWDERED SUGAR...AND RUM

You will probably purchase green plantains, let them ripen to the yellow/brown/black stage. Rum is optional, but very delicious in the recipe and served with the recipe. (They look like huge fat long green bananas)

  • Sprinkle a little rum over the strips if desired.
  • Sprinkle a little nutmeg on one side.
  • A dash of salt on the strips.
  • Take out the strips and place on a warm plate. Keep warm in a 250° oven.
  • Fry the second batch. Follow the steps.
  • Fry the third batch. Follow the steps.
  • When the frying is completed, take out the plates. Cut the strips in half of the length. Roll up and secure with toothpick.
  • Place back on plate.
  • Let the strips cool, then take out the toothpicks. The plantains will hold the rolled shape.
  • Sprinkle with powdered sugar right before serving. You can serve warm or cold, but if you serve warm the powdered sugar will soak in and you have have to pass separate powdered sugar, I pass a separate sifter after serving and each person can sift their own sugar on their serving.

  • You'll be dealing with a flame, so take precautions in case something doesn't go as planned! If you have long hair, tie it back. Have a lid for your skillet or a box of baking soda ready by the stove to extinguish a flame if you need to.

  • Pat the fish fillets dry. Set up the fish, the egg yolk, and the ground almonds assembly line fashion.
  • Using a pastry brush, lightly coat one side of each fillet with a little of the beaten egg yolk. (Dorie likes to coat the side that previously had skin.) Dip the coated side of each fillet into the nut mixture.
  • Place a large nonstick skillet over medium heat. Add 1 tablespoon of the butter and a small pinch of salt, if your butter isn’t salted, and cook the butter until it turns light brown, about 3 minutes. Slip the fillets into the skillet, nut side down, without crowding the skillet. Reduce the heat and cook until the coating is golden and the fish is cooked halfway through, 3 minutes or so. Season the exposed side of each fillet with salt and pepper, add another 1/2 tablespoon cold butter to the pan, and very gently turn the fillets. Cook, spooning some of the browned butter over the fillets once or twice, until the fish is opaque throughout, about 2 minutes more. If it looks like the pan is dry, add a little more butter.
