- Chill cocktail shaker and glass (champagne flute or collins glass) in the freezer. Add ice to shaker. Pour gin, simple syrup, and lemon juice into shaker. Shake well. Fill chilled glass half full of ice, then strain cocktail into the glass. Top with champagne and garnish with a lemon slice.

- Pour Champagne (2 3/4 cup) into a small saucepan with Lemon (1/4 cup). Wait until the bubbles calm down and then add Gold Sprinkles (to taste), Granulated Sugar (1/4 cup) and Gelatin Powder (4 package).
- Heat over medium heat, stirring constantly, until gelatin and sugar have both dissolved. Remove from heat and stir in Gin (1/2 cup).
- Lightly spray a mini muffin tin with Nonstick Cooking Spray (to taste) and then wipe out with a paper towel.
- Dry off Maraschino Cherry (to taste) and gently shave off the bottom of the cherry so they will stand upright.

- Combine the simple syrup and lemon juice in a cocktail shaker filled with ice. Shake well, then pour into a medium saucepan and sprinkle with gelatin.
- Allow the gelatin to soak for two minutes, then heat over medium low heat, stirring constantly, until the gelatin is completely dissolved (about 2 to 5 minutes).
- Remove from heat and add the gin and Champagne, stirring well to blend. Pour into a very lightly greased loaf pan and chill until fully set, several hours or overnight.
- Turn out the set gelatin onto parchment paper, then slice carefully (a thin knife like a boning knife works best) into rectangles or squares.
