FRENCH APPLESAUCE CAKE

I'm not sure what's French about this cake, exactly, but it's spicy and moist. It's also egg and dairy free and fairly low fat.

French Applesauce Cake image

Steps:

  • Combine first 9 ingredients in a large bowl.
  • Heat applesauce and oil slightly in microwave and add to dry ingredients.
  • Mix thoroughly.
  • Pour into 9x13 pan that has been sprayed with nonstick spray.
  • Bake at 350* for 45 minutes.
  • (Can also be baked in a bundt pan at 325* for 45 minutes. Cool in pan for about 20 minutes, then turn out and cool on rack.) Can be eaten as is, or dust with powdered sugar or frost with your favorite buttercream or cream cheese frosting.

2 cups flour
1 1/2 cups sugar
1 teaspoon baking soda
2 teaspoons cinnamon
1 1/2 teaspoons nutmeg
1/2 teaspoon salt
1 1/2 teaspoons cloves
3 tablespoons cocoa (e.g. Hershey's)
1 tablespoon cornstarch
1/2 cup oil
2 cups unsweetened applesauce

CHUNKY FRENCH APPLESAUCE

This will keep covered tightly for up to 4 days ahead, make certain to add in the sugar at the end of cooking, it makes a difference in the texture of the applesauce, the complete recipe can be doubled and the applesauce can be cooled and frozen in 1/2 - 1 cup plastic containers, this applesauce freeze well, use it in cakes and muffin recipes to add moistness, or simply as a dessert, it's much better than the store-bought and much cheaper too!. We love this sprinkled with brown sugar on top!

Chunky French Applesauce image

Steps:

  • Melt butter in a large saucaepan over medium heat; add in apple slices, stir for 1-2 minutes until well coated with the butter.
  • Add in water or apple juice, lemon juice and cinnamon (if using) cover and cook stirring occasionally until the apples are tender (about 20-25 minutes, if the apples become to dry then add in 1-2 tablespoons water or apple juice).
  • Once the apples are tender, stir in 4-6 tablespoons sugar (can use more or less to taste) until dissolved.
  • Chill covered in refrigerator or freeze.

Mother's Applesauce Cake image

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Grease and flour a tube pan.
  • Whisk together flour, salt, cinnamon, cloves, and soda. Set aside.
  • Cream together 1/2 cup butter and 2 cups brown sugar, beating until light and fluffy. Mix in eggs. Add flour mixture into creamed mixture alternately with applesauce, beginning and ending with flour mixture. Stir in the raisins, dates, and walnuts. Pour batter into prepared pan.
  • Bake in preheated oven until a tester inserted in the center of the cake comes out clean, about 1 1/2 hours. Cool on wire rack.
  • To make icing, melt 1/2 cup butter or margarine in a small saucepan over low heat; stir in 1 cup brown sugar. Boil for 2 minutes. Stir in milk, and continue to stir until the mixture returns to a boil. Remove from heat, and cool for 5 minutes. Beat in vanilla and confectioners' sugar. Frost cooled cake.
