FRENCH ONION CHICKEN MEATBALLS
Richly seasoned meatballs baked with a rich French onion sauce and topped with melted Gruyere cheese make this a meal fit for hosting guests. Serve them with egg noodles or some seasoned red potatoes and French bread on the side.

- Preheat the oven to 400 degrees F (200 degrees C).
- Mix ground chicken, bread crumbs, egg, onion soup mix, and garlic together in a medium bowl until the ingredients are well incorporated. Roll into sixteen 1 1/2-inch meatballs.
- Melt butter in a saucepan over medium heat. Add onions and sugar; saute until onions are softened, about 12 minutes.
- Meanwhile, heat olive oil in an oven-safe skillet over medium-high heat. Add meatballs and cook, flipping occasionally, until edges are browned, about 4 minutes.
- Transfer skillet to the preheated oven and bake until meatballs are no longer pink in the center, about 15 minutes. Check the meatballs halfway through and flip if they are browning too much on the bottom.
- Add red wine, salt, and pepper to the onions and stir. Cook over medium heat for 3 minutes. Stir in beef broth and thyme. Bring to a boil. Reduce heat to low and slowly stir in flour. Cook until slightly thickened, 2 to 3 minutes more.
- Remove meatballs from the oven and pour onion sauce on top. Cover evenly with Gruyere cheese and return to the oven until melted, about 5 minutes.

- Preheat the oven to 350 degrees F (175 degrees C). Line a rimmed baking sheet with foil.
- Combine ground chicken, bread crumbs, 4 tablespoons French onion soup mix, and pepper in a bowl; blend well. Cover and let mixture rest for 10 minutes.
- Portion chicken mixture into balls using a 1 1/2-tablespoon scoop. Press a mozzarella ball into each chicken ball and roll between your hands to enclose the cheese. Place stuffed chicken balls onto the baking sheet.
- Bake in the preheated oven until meatballs are lightly browned and cooked through, about 18 minutes.

- In a large bowl, combine Beef Mince, Onion, Breadcrumbs, French Onion Soup Mix, Egg and Worcestershire Sauce. Mix well.
- Roll mixture into even balls, no bigger than level dessert spoon, dust individual balls with plain flour and place on dinner plate (or container to out meatballs on). When complete put in fridge for minimum of 10 minutes to set.
- Turn fan forced oven to 200 degrees Celsius to lightly spray tray and place the meatballs place in oven for approx 10 minutes.

- CARAMELIZE THE ONIONS: Position a rack in the center of the oven and preheat the oven to 400ºF. In a large cast-iron skillet over medium heat, melt the butter with a small drizzle of oil (any kind.) Add the onions and sauté them for 5 minutes or until they start to sweat and shrink a little. Lower the heat to medium-low, season with sugar and Italian seasoning and continue to cook for 25 minutes or until the onions start to turn golden and caramelize. You want to just stir the mixture every 5 minutes or so. If the onions are caramelizing too fast, you can turn the heat down a little bit. Prepare and bake your meatballs while the onions are caramelizing to save time.
- MEATBALLS: In a medium bowl, using a fork, mix together all the ingredients except the chicken. When the ingredients are combined, add the ground chicken and mix until *just* combined. Shape the mixture into 1 tablespoon mixture (roughly 30 meatballs?) Place the meatballs on a baking sheet lined with parchment paper, about 1 inch apart and bake for 18–22 minutes or until the meatballs are moist but a bit firm to the touch (or they reach an internal temperature of 165ºF.)
- FRENCH ONION SAUCE: If your meatballs aren’t done, you can turn the stove off until they’re finished then pick the recipe up. Deglaze the pan with the Worcestershire sauce, season with salt, and add the minced garlic. Kick the heat up to medium and continue to stir and cook. Sprinkle the flour and cook for 30 seconds, slowly drizzle with the beef stock with one hand while you continue to stir the sauce with the other hand. Allow the sauce to gain a simmer and cook for 1-2 minutes or until the sauce thickens. Add the meatballs into the sauce and then sprinkle the cheese over the top and turn the stove off. Cover with a tight-fitting lid and allow the cheese to melt. Alternately, you can place the skillet in the oven under the broiler for 1-2 minutes for the cheese melt (be sure to only use the broiler if your skillet is oven safe!)
