FRENCH STYLE PATE CHINOIS

I like this dish because it is easy to prepare and it can be frozen. My mother used to serve this dish with a pie crust covering the top but I prefer without.

French Style Pate Chinois image

Steps:

  • Peel and cook the potatoes, mash, adding milk and butter (I whip the potatoes for smoother consistency) Set aside.
  • Chop onion and cook with the ground beef until done and spread evenly in the baking dish.
  • Pour the cream corn evenly over the ground beef, and pour the kernel corn evenly over the cream corn.
  • Last but not least, spread the mashed potatoes evenly for the last layer.
  • Dot the top with butter, and sprinkle paprika evenly over this.
  • Bake at 350 degrees for 45-60 minutes.
  • As an added variety, shredded cheddar can be sprinkled on as a topping.
  • This dish freezes very well.

8 potatoes
1 (20 ounce) can creamed corn
2 cans kernel corn
2 lbs ground beef
garlic or 1 medium onion
salt
pepper
2 teaspoons dried parsley
2 tablespoons butter
2 teaspoons paprika

Shepherd's Pie (Pate Chinois) image

Steps:

  • Boil potatoes.
  • Mash potatoes, add a little butter and milk, (a little lumpy and not too creamy) salt and pepper.
  • Brown ground beef (drain if necessary), add mushrooms and onion and cook till a bit tender.
  • Sprinkle a little soya sauce on ground beef mixture (about 1-2 tblsp), and pepper.
  • Put ground beef in bottom of roasting pan.
  • Then the cream corn.
  • Next the can of kernel corn.
  • Finally the mashed potatoes.
  • Brush the top with a little melted butter Bake at 375 for about an hour, or until the potatoes are golden brown.
  • Remove from oven and sprinkle with parsley.
  • I like to put a little soya on my serving.

6 -8 potatoes

1 (8 ounce) package sliced button mushrooms

When we go to the U.S. ea yr & visit *SusieQusie* in Dallas, we always go to *Half Price Books* & I usually find a cookbook treasure on the clearance table. This yr it was a little jewel titled *Microwave Cooking* by Lorna Rhodes & it had some great recipes to help me (us) use our microwave to its full potential. I'm really into that now as it's fast, gives you an "extra oven" that doesn't heat up your kitchen & helps relieve the stress of entertaining. This is the 1st recipe from it I will enter & it combines the starter & salad courses or stands alone as a luncheon entrée if served as suggested. (This is fixed the day b4 intended use & time does not include chilling overnight) *Enjoy* !

French Style Pate (Easy Microwave Fix) image

Steps:

  • Lay the bacon rashers flat on a cutting board & stretch w/the back of a knife. Use half of the bacon to line a 1 lb microwave safe loaf pan or terrine.
  • Combine the chicken livers, grd pork & sausage meat in a bowl. Cover & cook on HIGH for 6 minutes or till the meats are fully cooked, stirring twice during cooking.
  • Transfer mixture to a blender or food proc. Add the next 5 ingredients (garlic thru salt & pepper) & mix till smooth.
  • Spoon the mixture into your prepared pan or terrine & cover w/the remaining bacon. Place 3 bay leaves on top, cover w/greaseproof paper & cook on HIGH for 4 minutes. Allow pate to cool. Cover w/foil, weight down & chill overnight.
  • TO SERVE: Remove bay leaves, turn out onto a serving plate & slice. Serve w/French bread & a green salad.
  • NOTE: While the recipe doesn't say to do this & I haven't made this dish, I will drain the cooked meat mixture of the rendered fat as the bacon will add flavor & moistness in the final cooking stage.

A staple in every french canadian household, named "Pate chinois" in french, which could be translated by "Chinese pie". It is said that in the early 18th century, there was a lot of chinese people coming to Canada to work on the train tracks and the food served on the building sites were mainly made with corn, beef and potatoes, the main ingredients of the "Pate chinois".

French Canadian Shepherd's pie image

Steps:

  • Preheat the oven to 190C/fan 170C/gas 5.
  • Boil the potatoes in a pot until they are soft, about 12-15 minutes.
  • Meanwhile, heat the oil in a skillet and brown the onions for 2-3 minutes.
  • Add the beef mince to the onions and season well with the salt and the pepper. Cook for an additional 10 minutes or until the mince has a nice brown color.
  • When the potatoes are cooked, drain them, add the butter, the milk and mash them. Add salt and pepper to your taste.
  • In a baking dish, put the beef and onions in the bottom first, then top it wih the cream corn and finally, with the mashed potatoes.
  • Sprinkle the parsley flakes and the paprika on the top and put it in the oven for 10 minutes.
  • Broil for an additionnal 5 minutes or until the mashed potatoes have a nice golden crust.
  • Serve with a lot of ketchup, as that is the way people eat it in Canada.

'CHINESE' PIE

This one-dish meal doesn't have anything to do with Chinese food. Originating more than a century ago in Canada, it came from Chinese immigrants making do with ingredients from their new environment. This is a wonderful comfort food dish that is a family favorite. Kids love this dish! Serve with a green salad and some nice crusty rolls.

'Chinese' Pie image

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 2-quart casserole with butter.
  • Heat canola oil in a skillet over medium heat; cook and stir onion until translucent, about 5 minutes. Stir ground beef into onion, season with salt and black pepper, and cook ground beef mixture until browned and crumbly, about 10 more minutes. Drain excess grease.
  • Spread cooked ground beef mixture into bottom of the prepared casserole dish; pour cream-style corn over the ground beef in a layer; top with layer of mashed potatoes.
  • Bake in the preheated oven until potatoes are browned and casserole is bubbling, about 30 minutes.

Drain and add the milk, 1 Tbsp butter, ¾ tsp salt, garlic powder, and black pepper. Beat using an electric hand mixer to achieve very smooth and fluffy mashed potatoes. (If using leftover mashed potatoes, beat them to create a smooth texture, adding a splash of milk if necessary.) Set the potatoes aside.
  • In a large skillet, heat 1 Tbsp butter. Add the diced onion and sauté over medium-high heat until the onions are golden, 3-5 minutes. Add the ground beef and brown the beef until it is cooked through. Add the paprika, thyme, and salt. Taste and adjust the seasonings as desired.
  • Pour the onion and beef mixture into the bottom of a greased 8x8 baking dish. Evenly distribute the corn over the meat. Finally, dollop the potatoes over the corn, spreading them to create an even top crust.
