Steps:

  • Cut salmon into fine strips and chill until serving time. Mix spinach with half of chives and all of mayonnaise and white wine vinegar; season to taste with salt and pepper.
  • Chill dinner plates. Arrange spinach on the plate and arrange salmon in the center and over the spinach; garnish salmon with remaining chives, cucumber curls and serve with croutes.

6 ounces smoked salmon, chilled
6 ounces fresh spinach, stemmed and washed, dried
1 large bunches of fresh chives, snipped finely
3 tablespoons mayonnaise
1 to 2 tablespoons white wine vinegar
Salt and freshly ground black pepper

Hot and Cold Smoked Salmon Salad image

Steps:

  • For the hot salad put the chopped sweet potatoes in the microwave to steam on full power for a few minutes (about 4 minutes). It won't be cooked through but it will be softened.
  • Coat the sweet potatoes and other vegetables for the hot salad in the plain oil (TOP TIP put the veggies in a plastic bag with the oil and give it a shake to lightly coat). Add to a cold griddle pan in a single layer.
  • Heat the pan to medium. Don't be tempted to touch the vegetables - you want them to warm up slowly to cook through and caramelise/char on the outside. It'll take around 10 minutes. Test one or two pieces to see if it's caramelising - if not give it a few more minutes before tossing the vegetables and charring the other side for another 5 minutes. When done, set aside to slightly cool for a couple of minutes.
  • As the hot salad takes on its thermal namesake, prepare the dressing by mixing all the ingredients together. You might need to add a little water to thin it - it should be the consistency of double cream.
  • When the hot salad has cooled a little mix the hot salad and cold salad together with ⅔rds of the dressing. It will be a light coating. Decant in to bowls to serve and curl pieces of the salmon atop. Blob the remainder of the dressing to finish.

A little plain oil (I use vegetable oil)
1 clove of garlic, finely sliced
1 clove of garlic finely chopped Salt and pepper to taste Vegetables chopped in to 3cm cube pieces (I used 2 sweet potatoes, 3 large vine tomatoes, 1 yellow pepper and 1 red onion - any vegetables with a high sugar to caramelise will work well)
1 bag of rocket (40g)
2 spring onions shredded
1 little gem lettuce torn
2 sheets of hot-smoked salmon torn in to pieces
2 tbsp Greek yoghurt (full fat ideally, but that's up to you)
Juice and pulp of ½ lemon
¼ tsp of fresh dill
¼ tsp of dried tarragon
A little salt and finely ground pepper
1 tsp of spring onion (green part only) or chives finely chopped
A splash of water if the dressing needs thinning a little

ASPARAGUS FLAN WITH SMOKED SALMON-POTATO SALAD

Flan is essentially custard-the creamy melding of milk and eggs in what has proved to be a delectable revelation: you can make a savory flan out of virtually any vegetable. We do several savory flans at my restaurants, including mushroom and carrot, but its delicate flavor and pale green color makes asparagus flan my hands-down favorite. A potato salad made with smoked salmon (which is great on its own for lunch or brunch) is a stylish partner, but you can easily serve this flan with toasted slices of French bread and Grana Padano (or your favorite cheese) and a simple green salad with tomatoes.

Yield makes 4 individual (6-ounce) flans, or 3 cups

Asparagus Flan with Smoked Salmon-Potato Salad image

Steps:

  • Blanch only the asparagus tips in a small saucepan of boiling salted water for 2-3 minutes, drain, and shock in ice water to stop the cooking process. Drain again and set aside. Melt the butter in a 2-quart saucepan over medium heat and add the shallots. Sauté for 2 minutes, until softened, then add the chopped asparagus stalks, cream, and milk and simmer gently over low heat for about 10 minutes, or until the asparagus pieces are quite tender. Remove them from the heat and cool about 10 minutes, then pour the mixture into a blender (in batches if necessary) and puree until smooth. Strain the asparagus cream through a fine sieve.
  • In a large mixing bowl, whisk the egg yolks and whole egg together until well mixed and just barely frothy. Slowly whisk in the asparagus cream and season with salt, pepper, and nutmeg.
  • Preheat the oven to 325°F.
  • Butter 4 individual ramekins (with sides about 2 inches high) and place them in a baking dish. Pour the asparagus mixture into the dishes, dividing equally. Carefully fill the baking dish with hot water until it comes halfway up the ramekins. Cover the baking dish with foil and bake in the water bath for about 30 minutes. Watching for steam, carefully open the foil and jiggle the pan to see if the flans are set. They should be firm around the outside but just barely set in the middle, with no bubbles. If they are still liquid in the middle, return to the oven and bake for another 5-10 minutes. Remove the flans from the oven, uncover, and set aside until ready to serve. These flans can be prepared up to 24 hours in advance, refrigerated, and gently reheated in a water bath.
  • Put the potatoes in a small pot, cover with cold water, add a sprinkling of salt, and bring to a boil. Reduce the heat and simmer until cooked through but still firm, about 5 minutes. Drain and cool.
  • Whisk the shallots, vinegar, and olive oil together in a small bowl. In a large bowl, mix the potatoes, celery, onion, croutons, and salmon. Stir in half the dressing, season with salt and pepper, toss, and add more dressing to desired taste. Add the bacon and toss again. To serve, divide the salad among four plates. Place one warm flan on each plate. Place two asparagus tips on top of each flan and add the rest to the salad.
  • This recipe will result in a pale green flan. To brighten the color, you can add 1/4 cup blanched, finely chopped spinach or 2 tablespoons fresh parsley to the cream the minute before you remove it from the heat. Proceed to blend the mixture as described above, and the result will be a delightful emerald green flan.

Steps:

  • Rinse the lentils, then put them in a pan and cover generously with water. Bring to the boil, then turn down the heat and simmer for 25-30 mins until tender. Drain well and leave to cool. Put the shallot in a bowl with the mustard, vinegar and seasoning. Mix well and whisk in the oil.
  • Put the eggs into a small pan and cover with water. Bring to the boil, then simmer for 3 mins. Cool quickly under running cold water and peel off the shells. Put in a bowl of cold water until ready to serve.
  • Stir the dill into the dressing and pour it over the lentils. Spoon onto 6 plates, then halve the eggs and put one half on each plate with two slices of smoked salmon. Sprinkle with black pepper, scatter over a few dill fronds and serve.
