FRESH CAMPARI SALSA

A new twist on an old favorite.

Fresh Campari Salsa image

Steps:

  • 1. Remove kernels from ear of corn. In hot dry saute pan, toss kernels til they start to blacken slightly and roast. Remove corn from pan and let cool.
  • 2. Cut tomatoes in half and squeeze out seeds and juice. Strain, reserving 1/4 cup juice. Roughly chop tomatoes. Cut jalapeno in half, remove seeds and pith and finely dice
  • 3. Mix corn, tomatoes and strained juice, jalapeno, onion, grated lime peel and cilantro in bowl. Toss to mix. Squeeze in lime juice. Add salt and pepper to taste. Serves 4

1 ear of corn, or 3/4 cup frozen corn kernels
2 lbs. tomatoes
1 jalapeno chile
1/2 red onion, finely diced
juice and grated peel of 1 lime
1/4 cup cilantro leaves, washed, dried and chopped
salt and pepper

Steps:

  • In a bowl, combine all ingredients; mix well. Let stand for about 1 hour. Serve at room temperature. Store in a covered container in the refrigerator.

4 cups chopped peeled fresh tomatoes
1/4 cup finely chopped onion
1 to 4 jalapeno peppers, seeded and finely chopped
1 tablespoon olive oil
1 tablespoon vinegar
1 teaspoon ground cumin
1 teaspoon salt, optional
1 garlic clove, minced

I just throw this together, but it is very popular and requested at potlucks. Serve with tortilla chips.

Steps:

  • In a small mixing bowl, combine tomatoes, onion, garlic, cilantro and lime juice. Add jalapenos 2 teaspoons at a time, tasting after each addition to see how hot the salsa has become. Jalapeno peppers vary in heat, so it is important to taste the salsa to ensure you do not make it too hot to handle. Salt to taste. Enjoy!
