The best salsa I have EVER tasted....who needs chips!! This came from a restaurant in Key West, but I added garlic which wasn't originally there and it made it irresistable!

Fresh Key Lime Salsa image

Steps:

  • In a medium size glass bowl mix together the tomatoes, jalapeno pepper, cilantro, onion, garlic, sugar, and salt and pepper.
  • Combine well.
  • Add in the juice.
  • Cover and refrigerate for 3-4 hours before serving.
  • Serve with fresh tortilla chips.

Steps:

  • Combine canned and fresh tomatoes, onion, and garlic in a food processor; pulse 5 times to chop. Add cilantro, serrano and jalapeno peppers, lime juice, salt, and cumin and process for 10 seconds. Pulse further to desired consistency. Check and adjust seasoning as desired.

The Only Salsa You Need image

Steps:

  • Heat broiler. Place tomatoes cut side down on a foil-lined rimmed baking sheet. Fit onion, chiles, and garlic around tomatoes so everything is snug but not overlapping. Broil, turning onion and chiles once, until lightly charred, about 6 minutes for chiles and garlic and 15-18 minutes for tomatoes and onion.
  • Peel garlic and place in a food processor along with half of the tomatoes. Pulse until very smooth. Add remaining tomatoes and pulse until tomatoes are mostly broken up but mixture still has some texture. Transfer to a medium bowl. Finely chop onion and chiles and mix into purée; season with salt. Let cool. Stir in lime juice and cilantro. Season salsa with more salt if needed. Serve with chips.

Fresh Salsa- for Cooking or Plain- Lime and Cilantro Free image

Steps:

  • Chop and combine all ingredients.
  • If using the salsa plain, I prefer to simmer it in a saucepan for 20 minutes or until the onions are cooked. If using it in another recipe that involved cooking, I skip this step.
  • If a smooth salsa is desired, blend in a blender as needed.
  • Cooked, it can keep for several weeks in the fridge.
  • Feel free to substitute the parsley with cilantro and add the lime juice if you like of course! Adjust the spices and peppers to your taste. This combination is a little hot, especially if you use 5 jalapenos! Enjoy

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place jalapeno chile peppers on a medium baking sheet. Bake in the preheated oven 15 minutes, or until roasted. Remove from heat and chop off stems.
  • Place jalapeno chile peppers, garlic, onion, white sugar, salt, ground cumin and diced tomatoes with green chile peppers in a blender or food processor. Chop using the pulse setting for a few seconds. Mix in whole peeled tomatoes. Chop using the pulse setting to attain desired consistency. Transfer to a medium bowl.
