FRIED SWEET BANANAS

A very traditional breakfast or dessert in northeast Brazil, bananas or plantains are fried in butter and coated with cinnamon-sugar. Delicious with vanilla ice cream too.

Steps:

  • Make the Caramel
  • Place a nonstick skillet over medium-high heat and add the brown sugar and butter. Allow both to melt and mix well using a heatproof silicone spatula.
  • Fry the Bananas
  • When the caramel is hot and bubbly, add the bananas, cut side down, along with the pecans. Allow the bananas to cook for about 3 minutes before turning them over. The cut side should have a deep golden brown color and a slightly crispy texture. (Depending on the ripeness of the banana, they may break. Don't worry about this; they will still be delicious.)
  • Cook for another 2 minutes, using a spoon to drizzle the caramel sauce over the bananas to keep infusing them with caramel flavor.
  • Serve
  • Place the bananas on a serving dish or platter, top with scoops of ice cream, and drizzle the caramel sauce and nuts all over it.
  • COOKING NOTES
  • ADVANCE PREPARATION
  • The bananas are best served just after they are made. They will lose their crispy caramelized texture as they sit but will still retain their flavor so long as they are not refrigerated.
  • If you must make them in advance, the bananas can be held in a warm oven for a few hours.

1/2 cup light brown sugar, firmly packed
4 tablespoons unsalted butter
3 bananas, peeled and halved lengthwise
1/4 cup chopped pecans
1 pint vanilla ice cream

CARAMELISED BANANAS

This is a delicious and impressive dessert however, a little care must be taken when making this dish as you are working with very hot sugar, but the results are well worth the effort.

Steps:

  • In a large frying pan, heat the sugar over a moderate heat, after about 1-2 minutes the sugar will start to caramelise around the edges of the pan. Stir the sugar with a wooden spoon until the sugar has changed to a golden amber colour, continue cooking but be careful not to burn.
  • Remove from the heat and stir in the Kerrygold butter, vanilla seeds and 2 tbsp of cold water, to stop it cooking any further.
  • Add the bananas cut side down and return to the heat; cook for 1-2 minutes and then turn over, the bananas should have taken on the caramel colour.
  • Place the slices of vanilla sponge in the middle of the plates, pile 2 halves of bananas on top of the sponge and pour over the caramel sauce so it soaks into the sponge and add a scoop the Greek yoghurt
  • Quick Tip: To melt the butter faster use Kerrygold Softer Butter which is soft straight from the fridge and without the addition of vegetable oil.

4 Bananas (skinned and sliced once length ways)
100g caster sugar
1 Vanilla pod
50g Kerrygold Butter (Softer)
4 Vanilla Sponge slices
4 tbsp Greek yoghurt

CARAMEL FRIED BANANAS

this is fast and easy and would make a great ice cream topping. This was just my husband throwing something together. He used Splenda and no sugar added syrup but I am sure it would begood with sugar ingredients.
