CRUNCHY ICE CREAM DESSERT
I like to start my meal prep with dessert. I sandwich vanilla ice cream with layers of cereal, peanuts and coconut. Then I put it in the freezer until it's ready to serve!

- In a large bowl, combine the cereal, brown sugar, peanuts and coconut. Drizzle with butter; stir until combined. , Press half of the mixture into an ungreased 13-in. x 9-in. dish. Cut ice cream into 3/4-in.-thick slices; arrange evenly over crust. Top with remaining crumb mixture; press down lightly. Cover and freeze until serving.

- Preheat oven to 350°. Using a 1/2-cup ice cream scoop, place 8 scoops of ice cream on a baking sheet. Freeze until firm, about 1 hour. Meanwhile, combine brown sugar, butter and cinnamon. Stir in cornflakes. Transfer to an ungreased 15x10x1-in. baking pan. Bake until lightly browned, 4-6 minutes. Cool completely., Roll ice cream balls in crumb mixture. Cover and freeze until firm, at least 1 hour. If desired, serve with toppings.

Steps:
- Scoop ice cream into 8 - 1/2 cup sized balls. Place on baking sheet and freeze until firm, about 1 hour.
- In a shallow dish, combine cornflakes and cinnamon. In another dish, beat egg whites until foamy. Roll ice cream balls in egg whites, then in cornflakes, covering ice cream completely. Repeat if necessary. Freeze again until firm, 3 hours.
- In deep fryer or large, heavy saucepan, heat oil to 375 degrees F (190 degrees C).
- Using a basket or slotted spoon, fry ice cream balls 1 or 2 at a time, for 10 to 15 seconds, until golden. Drain quickly on paper towels and serve immediately.

- In a large skillet, melt butter over medium heat. Add cornflakes and cinnamon; cook and stir until golden brown, about 5 minutes. Remove from heat; stir in sugar. Cool completely., In a large bowl, beat cream, evaporated milk and salt until it begins to thicken. Gradually beat in condensed milk and vanilla until thickened., Sprinkle half the cornflakes onto bottom of a greased 9-in. square baking pan. - Line shallow pan with waxed paper. Scoop ice cream into 8 (1/2-cup) scoops; place in prepared pan. Freeze 2 hours or until very firm. Meanwhile, process corn flakes, coconut and 1 tsp. cinnamon in food processor until finely chopped. Pour into shallow dish.
- Whisk egg whites in medium bowl until frothy. Add ice cream balls, 1 at a time to egg whites, then crumb mixture, turning to evenly coat each ball with each ingredient. Return to prepared pan. Freeze 4 hours.
- Heat oil to 375°F in medium saucepan. Use slotted spoon to carefully add 2 ice cream balls, 1 at a time, to hot oil; cook 15 to 20 sec. or until golden brown. Transfer to serving bowl. Repeat with remaining ice cream balls.
- Melt chocolate as directed on package. Add COOL WHIP; whisk until blended.
- Serve ice cream balls topped with chocolate mixture; sprinkle with remaining cinnamon.

FRIED ICE CREAM AKA CRISPY COCONUT DESSERT
My SIL makes this and we all LOVE it! She usually tops it with whipped cream and chocolate sauce. It is SO good with the crispy cereal, crunchy coconuts, and creamy ice cream! Prep time is the active time it takes to make the dessert and the cooking time is the freezing time.

Steps:
- Preheat oven to 300 degrees.
- Mix together all ingredients except ice cream and place on cookie sheet lined with tin foil.
- Place pan in oven for 30 minutes, stirring every 10 minutes.
- Layer 2/3 of the mixture into a 9x13 pan and press into the bottom.
- Top with ice cream and smooth out.
- Top with remaining mixture.
- Place pan into freezer for 8 hours.
- Slice into squares, serve, and enjoy!
RICE KRISPIES ICE CREAM DESSERT
This always bring's back chilhood memories. It's an old time dessert that my mom made quite frequently. You may also use CornFlakes or RiceChex instead of the Krispies.

- Mix all together. (omitting the icecream).
- Spread 1/2 the mixture in a buttered 9x13 inch baking pan.
- Slice icecream (softened) on top.
- Sprinkle with remaining crumbs over the top.
- Refreeze.
- It's already quite sweet, but if you're so inclined, drizzle with a little of your favorite ice-cream topping. Butterscotch, caramel, or hotfudge all work.
