CHICKEN CAULIFLOWER "FRIED RICE"

Steps:
- Cut the cauliflower into chunks. Working in batches, pulse the cauliflower in a food processor until coarse in texture, like rice. This recipe uses about 4 cups of cauliflower rice. If you have any leftover, save it for another use.
- Heat a wok or large skillet over medium-high heat. Add 1 teaspoon of the canola oil. Add the eggs and quickly scramble. Transfer the eggs to a plate and set aside. Heat the remaining 2 teaspoons canola oil. Add the garlic and ginger and cook, stirring constantly, about 1 minute. Add the peas and carrots, scallions and cauliflower. Stir-fry until the vegetables are tender, about 5 minutes.
- As the vegetables are cooking, whisk the soy sauce and sesame oil together in a small bowl. Stir the sauce and chicken into the cauliflower mixture. Cook an additional minute or 2. Stir the cooked eggs back into the mixture. Serve with hot sauce and additional soy sauce if desired.

- Whisk the eggs with a pinch of salt in a small bowl. Heat 1 tablespoon of the oil in a large nonstick skillet over medium-high heat. Add the eggs and cook, without stirring, until almost set, about 1 minute. Flip the egg pancake with a rubber spatula and cook until just set on the other side, about 1 minute. Transfer to a cutting board and cut into thin strips.

- Heat a large nonstick skillet or wok over high heat and then swirl in 1 tablespoon of the oil. When the oil begins to smoke, add the egg and swirl the skillet to make a flat egg pancake that's only half set, about 10 seconds; scoop onto a plate.
- Add the chicken to the skillet, season with 1/4 teaspoon salt and stir-fry until golden brown and just cooked through, about 4 minutes. Transfer to a bowl. Add the remaining 1 tablespoon oil to the skillet, then add the bell pepper, corn, curry powder, ginger and 1/4 teaspoon salt and stir-fry until crisp-tender, 2 to 3 minutes.

- Marinate the chicken in teriyaki sauce in the refrigerator for at least an hour.
- In a wok or deep skillet, add the chicken in the teriyaki marinade and cook thoroughly over high heat. Set aside.

- In a large bowl, combine the peas and carrots, rice, onion, parsley flakes and chicken.
- Mix well.
- Pour into 4 bags (enough serve 4) or less for family size.
- Seal, lable and freeze.
- Thaw bag of rice mixture.
- Heat 1 Tbs oil in a large skillet.
- Dump rice mixture into the skillet.
- Cook and stir over medium heat, breaking up any chunks of rice, until hot, about 5 minutes.
- Push rice mixture to the side of the skillet.
- Add 1 Tbs oil to the empty side of the skillet and add the eggs.

- Heat a splash of oil in a large frying pan and tip in the beaten eggs. Swirl the pan to coat in a thin layer of egg and cook for a few mins until set. Tip onto a chopping board, roll up, slice thinly and set aside.

- Beat eggs with a whisk in a small bowl and season with salt and pepper, to taste. Heat very little oil in a medium frying pan over medium heat and make an omelette using half the beaten eggs. Turn out onto a plate to cool (do not fold omelette). Repeat process with remaining beaten eggs. Place 1 omelette on top of the other, fold and coarsely chop. Set aside.
- In a medium bowl, toss chicken strips with the sesame oil and season with salt and pepper, to taste. Heat 3 tablespoons vegetable oil over high heat in large frying pan or wok and stir-fry the prepared chicken strips until lightly golden, about 2 to 3 minutes. Add the onion and garlic and stir-fry for 1 to 2 minutes or until onion has softened. - Add the canola oil and 1 tablespoon sesame oil to a large nonstick saute pan. Whisk the eggs in a small bowl and season with the salt and some pepper; set aside. - STEP 1.
- In a hot wok, add the first tablespoon of oil and scramble the eggs, chopping them into bite size or smaller pieces while they cook.
- When the eggs are cooked, remove them and set them aside in a clean dish.
- Remove any bits of egg from the wok before moving on to the next step.
- STEP 2.
- In the same wok, quickly combine the second tablespoon of oil, garlic, crushed red pepper and meat, in that order. **If you wait long enough that you can smell the garlic warming before you add the other ingredients, you will burn your garlic. If you hesitate any at all to add the meat after adding the red pepper, it will burn and your lungs will feel like they are closing on you. DO NOT ASK HOW I KNOW! **
- When the meat is cooked, remove it and set it aside in a clean dish.
- STEP 3.
- Still in the same wok, add the last tablespoon of oil and onion.
- Once the onion begins to become translucent add the peas and carrots.
- After the peas and carrots look as if they have thawed, add the cooked rice and drizzle the soy sauce in three or four portions over the rice. After adding each portion of the soy sauce, toss to coat the rice with soy sauce. More than flavor, we're looking to color the rice evenly. More or less than ¼ cup of soy sauce may be necessary. I like a nice, even, golden brown color. That color seems to flavor the rice best. (If you like a darker fried rice, a few drops of dark soy sauce will go a long way for adding the desired color, but it adds no flavor.).
- Once the rice has the right color, add the eggs from step 1 and the meat, garlic, red pepper mix from step 2, and combine all thoroughly. Stir constantly until rice is evenly heated.
- Serve in bowls with extra soy sauce available to season to taste.
