- In a large bowl, combine the egg, milk, bread crumbs, onion, salt, pepper and paprika. Add ground beef, pork and ham; mix well. Pat meat mixture into a 7-1/2x3-3/4x2-1/4-in. loaf pan. , Bake at 350° for 1 hour or until no pink remains and a thermometer reads 160°. Drain. Invert meat loaf onto a heat-proof platter. , In a bowl, combine frosting ingredients. Cover top and sides of meat loaf with frosting mixture. Place under a preheated broiler; broil until lightly browned.

SOUPERIOR FROSTED MEATLOAF
Another meatloaf recipe, this time with potato included and made more heart healthy by using ground turkey breast! All you need is a tossed green salad or steamed veggies for a nice basic meal!

- Preheat the oven to 350°F.
- In a large bowl, combine soup mix, ground turkey, breadcrumbs, ketchup, water and egg substitute.
- In a shallow baking pan, shape meat mixture into a loaf.
- Bake in the pre-heated 350°F oven for 45 minutes.
- Frost the loaf with the mashed potatoes; then sprinkle with the cheddar cheese and bacon bits.
- Bake 5 more minutes in order to melt the cheese, NO browning involved; then remove from the oven and let 'settle' 5 min before serving.
- Variation: you can also swap out the cheddar cheese for a different cheese such as monterey jack.

ROASTED VEGETABLE MEATLOAF WITH BALSAMIC GLAZE
Steps:
- Preheat oven to 425 degrees F.
- Heat the oil in a large saute pan over high heat. Add the zucchini, peppers, garlic paste, 1/4 teaspoon red pepper flakes, and salt and pepper, to taste, and cook until almost soft, 5 minutes. Set aside to cool.
- Whisk together the eggs and herbs in a large bowl. Add the meat, bread crumbs, cheese, 1/2 cup of the ketchup, 2 tablespoons of the balsamic vinegar, and the cooled vegetables and mix until just combined.
- Mold the meatloaf on a baking sheet lined with parchment paper. Whisk together the remaining ketchup, balsamic vinegar, and red pepper flakes in a small bowl. Brush the mixture over the entire loaf. Bake the meatloaf for 1 to 1 1/4 hours. Remove from the oven and let rest for 10 minutes before slicing.
TASTE OF OREGON FROSTED MEATLOAF
This is a lovely dish both in flavor and look. It can be made relatively quickly using frozen and cooked mashed potatoes, but the real deal is with homemade. Come to think of it, it could be a great way to use up leftover mashed potatoes.

- Combine the first 10 ingredients (everything up to the mashed potatoes).
- Mix well & shape into an oval loaf in a shallow baking dish.

THE BEST MEATLOAF
We opted for an all-beef meatloaf rather than the traditional mix of beef, veal and pork because we wanted that satisfying big beef flavor. Milk adds richness and tenderizes the meat, preventing it from getting tough or dry. We also cook the onion instead of adding it raw as many recipes suggest, which imparts a welcome sweetness and eliminates that harsh raw onion flavor.

- Arrange a rack in the center of the oven and preheat to 450 degrees F. Line a rimmed baking sheet with foil.
- Whisk the eggs, milk, Worcestershire sauce and 2 teaspoons salt in a large bowl until completely combined. Heat the oil in a large skillet over medium-high heat. Add the onion, garlic, thyme, 1/2 teaspoon salt and 1 teaspoon pepper and cook, stirring occasionally, until the onions are tender and lightly golden brown, 8 to 10 minutes.
- Add 3 tablespoons of the ketchup and cook until most of the moisture has evaporated and the mixture is thick and brick red colored, 3 to 4 minutes. Remove the skillet from the heat and let the onions cool slightly. Then add them to the beaten eggs and mix to combine.
- Add the beef to the egg and onion mixture. Break up the meat with a fork or wooden spoon, and then mix to thoroughly combine; you don't want to see any lumps of raw beef. Add the panko and mix to combine. Stir the meat vigorously with a wooden spoon for about 7 seconds; it will become more homogenous and tackier.
- Transfer the meat to the prepared baking sheet and shape into a 9-by-5-inch loaf. Smooth the top and evenly spread the remaining ketchup over top. Bake for 5 minutes, and then reduce the oven temperature to 350 degrees. Continue to bake until an instant-read thermometer inserted into the center of the loaf registers 150 degrees F, 30 to 35 minutes. Allow the meatloaf to rest for 20 minutes before slicing.
MEAT LOAF

- Heat oven to 350 degrees Fahrenheit. Grease a 9 by 5- inch loaf pan; set aside. In large bowl, beat eggs with milk and salt until well mixed. Stir in bread crumbs, let stand for 5 minutes to soften.
- Add turkey, onion, parsley and thyme to egg mixture; stir until well mixed. Transfer mixture to greased loaf pan. Bake 1 1/4 hours to 1 1/2 hours or until juices run clear when pierced in center of loaf.
- Meanwhile, prepare potato frosting: in 2-quart saucepan, heat yellow potatoes with enough water to cover to boiling over high heat. Reduce heat to simmer; cover and cook potatoes until tender-about 12 minutes.
- Meanwhile, microwave sweet potato on high until fork tender-6 to 8 minutes. Cut sweet potato lengthwise and scoop pulp into small bowl, avoiding fibrous layer next to skin; set aside to cool slightly. Drain cooked yellow potatoes and return to pan. With potato masher, mash potatoes until smooth. Add milk, 1/2 tablespoon salt, 1 tablespoon butter; mash until creamy. Separate egg, stirring egg white into mashed potatoes. Add egg white into mashed potatoes. Add egg yolk, remaining 1 tablespoon butter, and 1/4 teaspoon salt to sweet potato; mash until smooth and spoon into small pastry bag fitted with 1/4 inch wide star tip. Spoon some of mashed yellow potatoes into large pastry bag fitted with 1/4 inch wide star tip. Set both pastry bags aside.
- When meat loaf is done, cool 10 minutes. Carefully strain liquid from meat loaf into 2-quart saucepan and reserve to make gravy, if desired. Unmold meat loaf onto a pizza pan or oven safe serving platter.
- Heat oven to 450 degrees Fahrenheit. Pipe sweet-potato mixture lengthwise on top of loaf and around base. Pipe yellow potato mixture all over to cover meat loaf. Bake frosted loaf 15 minutes or until potato browns slightly.
- Meanwhile, prepare gravy, if desired. If loaf is baked on pizza pan, with 2 broad spatulas, carefully transfer to serving platter. Garnish with thyme sprigs, if desired. Use serrated knife and sawing motion to slice meatloaf.
- For Gravy.
- In saucepan with reserved meat-loaf liquid, whisk in 1 (14 1/2 ounce) can reduced sodium, nonfat chicken broth, 1 teaspoon Worcestershire sauce, and 1/4 teaspoon ground black pepper. Cook over medium heat, stirring constantly, until thickened and bubbly, about 5 minutes.
MELT-IN-YOUR-MOUTH MEAT LOAF
This recipe is anything but regular old meatloaf! Everyone will love this moist version made in the slow cooker, with milk, mushrooms, and a little sage for extra flavor.

- Preheat oven 325 degrees Fahrenheit.
- In a large mixing bowl, combine ground beef, cracker crumbs, salt, pepper, egg, onion and tomato sauce.

- In large bowl mix ground meat and A-1 sauce, minced onion, cilantro. Add beaten eggs, mix well. Add crackers or bread crumbs and catalina dressing and white pepper. Mix. Add cheese 1/2 cup at a time and mix, then add another until all cheese is mixed.
- Form into an oval loaf, place in low side baking pan. Chill if desired.
- Bake 350* 1 hour. Allow ten more minutes if chilled. I suggest placing a pan on the rack underneath to catch any grease drips from beef or turkey and the melted cheese sometimes drips from the bottom side. I have used a sharp cheese also. When cold this makes an excellent cold meat loaf sandwich. Some family members prefer cold.
- Cook 3 medium potatoes in water or microwave, peel and mash. Add beaten egg and miracle whip and salt. You may prepare instant potatoes if you desire. Make sure they are a little on the stiff side before adding the egg, miracle whip and salt.
- When loaf is baked, frost with mashed potatoes. Spread on with spatula. Make peaks all over it.You can also brush melted margarine over it but watch carefully when it is broiling.
- Broil about 5 inches away until peaks are browned. Take out of oven. Sprinkle with paprika if desired. Broil fresh mushrooms at the same time.
- Let set ten minutes before serving. Cut in wedges. Serve on a platter with broiled fresh mushrooms surrounding the loaf and slices of lemon in between.

- Preheat the oven to 325 degrees F.
- Place the carrot, celery, onion, red bell pepper, mushrooms, and garlic in a food processor, and pulse until very finely chopped, almost to a puree. Place the minced vegetables into a large mixing bowl, and mix in ground chuck, Worcestershire sauce, and egg. Add Italian herbs, salt, black pepper, and cayenne pepper. Mix gently with a wooden spoon to incorporate vegetables and egg into the meat. Pour in bread crumbs. With your hand, gently mix in the crumbs with your fingertips just until combined, about 1 minute.
- Form the meatloaf into a ball. Pour olive oil into a baking dish and place the ball of meat into the dish. Shape the ball into a loaf, about 4 inches high by 6 inches across.
- Bake in the preheated oven just until the meatloaf is hot, about 15 minutes.
- Meanwhile, in a small bowl, mix together brown sugar, ketchup, Dijon mustard, and hot sauce. Stir until the brown sugar has dissolved.
- Remove the meatloaf from the oven. With the back of a spoon, smooth the glaze onto the top of the meatloaf, then pull a little bit of glaze down the sides of the meatloaf with the back of the spoon.
- Return meatloaf to oven, and bake until the loaf is no longer pink inside and the glaze has baked onto the loaf, 30 to 40 more minutes. An instant-read thermometer inserted into the thickest part of the loaf should read at least 160 degrees F (70 degrees C). Cooking time will depend on shape and thickness of the meatloaf.
