- In a large bowl, combine the flour, pecans and brown sugar; stir in butter until crumbly. Press into an ungreased 13-in. x 9-in. baking dish. Bake at 350° for 10-13 minutes or until lightly browned. Cool on a wire rack., In a large bowl, beat cream cheese and sugar until smooth; fold in whipped topping. Spread over crust. Cover and refrigerate for 1 hour., In a small bowl, dissolve gelatin in boiling water; stir in cold water. Spoon over cream cheese layer. Chill until firm. Cut into squares.

- In a large bowl, cream butter and sugar until light and fluffy. Combine the flour, baking powder and salt. Combine the eggs, milk and vanilla. , Add the dry ingredients to the creamed mixture alternately with egg mixture, beating well after each addition. Divide dough in half; chill for 2 hours or until firm., Roll out one portion of dough into a 15x10-in. rectangle; carefully transfer to a greased 15x10x1-in. baking pan. Spread with raspberry filling. , Roll out remaining dough to 1/4-in. thickness. Cut into 1/2-in.-wide strips; make a lattice crust over filling. Bake at 350° for 30 minutes or until golden brown. Cool on a wire rack., In a small bowl, beat the butter, shortening, cream cheese and marshmallow creme until smooth. Gradually add the confectioners' sugar and milk until smooth. Drizzle over bars. Chill until set. Cut into bars.

RASPBERRY SQUARES
Steps:
- Preheat the oven to 350 degrees F.
- In a large bowl, mix the butter and sugar, then add the egg yolk and mix well. Add the flour and almonds and blend well, but keep the mixture a bit crumbly.
- Put half the mixture into a greased 13 by 9-inch baking pan. Bake for 20 minutes, and then remove the pan from the oven. Spread the jam evenly over the top, leaving about 1/4-inch from the sides. Crumble the remaining dough evenly over the jam and pat lightly. Bake for another 40 minutes. Serve after cooling.

- Bottom Layer: Combine first 3 ingredients in bowl.
- Mix together well until crumbly.
- Press in a greased 9x9 inch pan.
- Filling: Spread jam over bottom layer.
- Top Layer: Beat eggs until frothy.
- Add sugar, coconut, vanilla and baking powder.
- Stir to combine well.
- Spread over jam layer.
- Bake in 350 oven for 30 minutes or until set and lightly browned.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
- Line a rimmed baking sheet with aluminum foil. In a bowl, stir together the flour, brown sugar, walnuts and melted butter. Toast in the oven until walnuts are fragrant, about 15 minutes; stir occasionally. Sprinkle 2/3 of the walnut mixture evenly over the bottom of the 9x13 inch dish.
- In a large bowl, whip the egg whites with the lemon juice until they can hold a soft peak. Gradually add white sugar while continuing to whip to firm peaks. Fold in the strawberries.
- In a separate bowl, whip the cream with an electric mixer until stiff but not grainy. Fold into the strawberry mixture. Spoon over the crust in the dish and spread evenly. Top with the remaining walnut mixture. Freeze for 6 hours, or overnight.

I love raspberry and almonds together! I adapted this recipe from one I found on America's Test Kitchen. Toasting the nuts adds great flavor so don't skip this step. This recipe is easily doubled and would then be made in a 15" jelly roll pan.

- Pre-heat oven to 350 degrees, spray a 9x13" pan with nonstick cooking spray, you may also line the pan with foil with extra hanging over for easier removal, spray foil.
- In mixer bowl, mix flour, oats, sugars, extract, baking soda, salt, and nuts at low speed until combined, about 30 seconds. With mixer running at low speed, add butter pieces; continue to beat until mixture is well-blended and resembles wet sand, about 2 minutes.
- Transfer 2/3 of mixture to prepared pan and use hands to press crumbs evenly into bottom, bake until starting to brown, about 20 minutes.
- Using rubber spatula spread preserves evenly over hot bottom crust; sprinkle remaining oat/nut mixture evenly over preserves; bake until preserves bubble around edges and top is golden brown, about 30 minutes, turn pan halfway through baking time.
- Cool on wire rack then remove from pan using foil handles, cut into squares.
- NOTE:.
- After reading the first reviews for this, I realized the jam I used is lower sugar than many jams (9 gms per TBLS) It would be worth it to find a type that isn't overly sweet or try adding a little lemon juice to cut the sweetness.

- Preheat oven to 350°. Break up macaroon cookies. Place in a food processor bowl or blender container. Cover and process or blend with on-off bursts to make coarse crumbs (you will need 1 1/2 cups).In a 13 x 9 x 2-inch baking pan, place cookie crumbs and almonds. Dot with butter or margarine. Bake for 12 to 15 minutes or until toasted and browned, stirring several times. Remove from oven and cool. Set 3/4 cup of the crumb mixture aside for topping.In a large mixer bowl at low speed, beat raspberries with syrup, sugar, egg whites and lemon juice until foamy. Increase speed to medium-high and beat for about 10 minutes or until stiff peaks form, scraping bowl occasionally. At low speed, beat in whipped topping until no streaks remain. Spread evenly over cooled crumb mixture in baking pan. Smooth top. Sprinkle with reserved crumb mixture. Cover and freeze at least 8 hours or until firm. If freezing overnight, cover with foil. Can be made up to 1 week before serving.Place covered pan in refrigerator 1 hour before serving. Cut into squares.

FROSTY STRAWBERRY SQUARES
This is a recipe my mother has made for years. She always likes to tell people this dessert was served at John Steinbeck's house. It is a very light and refreshing treat after a heavy meal or on a warm summer night. The crust is cooked, but the top is frozen so it tastes similar to strawberry ice cream. This dessert needs to be frozen for at least six hours, so plan accordingly.

- Combine flour, brown sugar, walnuts and melted butter.
- Place in a 9x13" baking dish and bake at 350 degrees for 20 minutes, stirring occasionally.
- Take out 1/3 of mixture and set aside. Press remaining mixture into baking dish.
- For filling: Whip whipping cream until peaks form; set aside.
- Combine egg whites, sugar, strawberries and lemon juice (MAKE SURE MIXER BLADES ARE CLEAN AND DRY OR EGG WHITES WILL NOT WHIP).
- Beat at high speed until stiff peaks form, about 10 minutes.
- Fold in whipped cream.
- Spoon over crumb mixture.
- Sprinkle 1/3 crumb mixture over top.
- Freeze six hours or over night.

- For crumb mixture, combine flour, nuts, margarine, and brown sugar. Spread evenly on to a cookie sheet.
- Bake at 350 degrees for 20 minutes; stir occasionally.
- Sprinkle 2/3 of the crumbs into a 13x9 baking pan.
- In a large mixing bowl combine egg whites, strawberries, sugar, and lemon juice.
