STRAWBERRY YOGURT PIE image

Steps:

  • 1. NOTE:If you are using a premade graham crust, use 8 ounce size cool whip, if you are using a SPRINGFORM PAN then use 12 ounce of cool whip. FOR THE CRUST:Toast the pecans in preheated 375 degree oven for 5 -7 minutes. COOL. Mix cooled nuts with remaining ingredients and press into bottom and up the sides at least one inch, of a 9 inch spring form pan. Freeze at least 15 minutes before filling.
  • 2. Empty yogurt into a large bowl, then add the tub of whipped topping. Stir to blend. Add red food color if using, then add the chopped strawberries, and stir gently till mixed. Spoon mixture into prepared crust. Freeze for about 4 hours or over night.
  • 3. Note: You may top the pie with additional cool whip if desired, and garnish top with additional slices of fresh strawberries. Remove pie from freezer about 20 minutes prior to serving for easier cutting. Quick easy and refreshing.

Steps:

  • Mix yogurt with 3 and 1/2 cups of the dessert topping until blended. Sweeten the strawberries, if necessary. Mix in strawberries and spoon into crust.
  • Freeze for at least 3 hours or overnight, if possible, until it's firm.
  • Remove from freezer and top with remainder of dessert topping. Store in freezer.

Steps:

  • A full 24 hours before you make your frozen yogurt, place your ice cream maker insert into the freezer.
  • Add strawberries, sugar, lemon zest, lemon juice, and rum to a bowl and toss. Cover with plastic wrap and let the strawberries macerate at room temperature for 1 hour.
  • Add the strawberries with their juices to a food processor. Pulse the berries, and then add the vanilla beans seeds and yogurt. Continue to blend until smooth.
  • Place in the refrigerator to chill for 1 hour.
  • Turn your ice cream machine on and pour in the chilled yogurt mixture. Churn until the mixture looks slushy like soft serve, about 12 to 15 minutes.
  • Place in the freezer for several hours until hard enough to scoop.

Steps:

  • For the crust: Preheat the oven to 350 degrees F. Butter the bottom and sides of a 10-inch pie dish and set side.
  • In a medium bowl, combine the graham cracker crumbs, granulated sugar, ginger and melted butter. The texture should resemble wet sand. Press the crumbs into an even layer in the bottom and up the sides of the pie dish. Use the bottom of a measuring cup or glass to pack the bottom crust firmly. Bake until the crust firms up and browns lightly, 10 to 12 minutes. Remove from the oven and set aside on a rack to cool completely.
  • For the filling: In the bowl of an electric mixer fitted with the whisk attachment, whip the heavy cream to stiff peaks. Transfer to a medium bowl and refrigerate.
  • In the same mixing bowl of the electric mixer fitted with the paddle attachment, beat the cream cheese on medium speed until smooth. Slowly pour in the condensed milk and continue to mix until incorporated and smooth. Add the lemon zest and juice and salt and beat on medium-high speed until combined, 1 to 2 minutes. If necessary, transfer the mixture to a large bowl to allow for the whipped cream. Use a rubber spatula to fold the raspberries into the filling mix, then fold in the whipped cream.
  • To assemble: Spoon the filling into the completely cooled crust. Freeze the pie for at least 6 hours, up to 12 hours.
  • For the topping: In a medium bowl, toss the strawberries with the brown sugar and vinegar. Remove the pie from the freezer, top with the strawberry mixture and serve.

  • Place a rack in the center of your oven and preheat the oven to 350 degrees F. In the bowl of a food processor fitted with a steel blade, pulse the pretzels until they form mostly fine crumbs with a few more textured pieces remaining throughout. If you do not have or prefer not to use a food processor, place the pretzels in a ziptop bag and crush them with a rolling pin (you may need to double up the bag if it gets any small holes).
  • Melt the butter in a large, heatproof bowl in the microwave. Set 1/2 cup of the crushed pretzels aside, then add the remaining crumbs (about 1 3/4 cups) to the bowl with the melted butter. Add the brown sugar, then stir until evenly moist and combined. Press the crumbs into the bottom and up the sizes of a 9-inch pie dish. Bake for 8 minutes, until golden and fragrant. Set aside to cool slightly, then place in the freezer to cool quickly and completely. Do not proceed with the recipe until your crust and pie dish are at or below room temperature.
  • Set out the frozen yogurt and let it soften. DO NOT let the frozen yogurt get too liquidy or melty. It should be easily scoopable and soft but still retain some texture. Once it is ready, scoop the ice cream in a large mixing bowl (I used the same bowl I used for the crust—no need to wash in between). Fold in the reserved 1/2 cup crushed pretzels and diced strawberries. Spoon the mixture into the cooled crust and smooth the top with the back of a spoon or spatula. Place in the freezer for at least 4 hours or overnight to firm.
  • To serve: remove from the freezer and let stand at room temperature for 10 minutes to soften (may be longer or shorter depending upon the brand of ice cream you purchased and the temperature of your freezer and kitchen). Slice and serve topped with sliced strawberries, additional chopped pretzels, and whipped cream.
