Steps:
- For the filling: Preheat the oven to 400 degrees F. Toss the apples with 2 heaping tablespoons of the sugar, the flour, cinnamon and nutmeg. Add the butter, and toss. Divide the filling between two 6-ounce, 3 1/2-inch ramekins, tent each loosely with foil and bake until the apples are tender and the juice is bubbling, about 35 minutes. Remove the ramekins from the oven, remove the foil, give the apples barely a stir with a fork and press the top into the juices.
- For the topping: Whisk together the flour, the baking powder, salt and 1 teaspoon of the sugar in a small bowl. Quickly stir in the heavy cream, then work the dough with your fingers as if you were working butter into pie dough, to make moist, slightly flattened chunks of dough.
- Top each ramekin with dough, dividing evenly. Sprinkle each with 1/2 teaspoon of the remaining sugar, and bake until the topping is browned and crisp, 12 to 15 minutes. Let cool slightly, top with ice cream and serve.
PEACH COBBLER FOR TWO
Everyone notices a special taste in this cobbler. It's orange peel, which enhances the color and gives this traditional dessert a delicious distinction. Cobblers usually serve a large group, so it's convenient to have a recipe that makes just enough for two. - Betty Clark, Mount Vernon, Missouri

BERRY COBBLER FOR TWO
I just bought a cookbook "Small Batch Baking" and this was the second thing I tried. My ramekins are 7 oz each. I used frozen raspberries because that's what I had, even though the recipe calls for mixed berries I think any frozen fruit could be subbed. If you think your berries are tart adjust sugar to your tastes. This is also super easy to double or triple. I'm single and just don't need a bunch of leftover dessert sitting around trying to get my attention!:)

- In a large bowl, gently fold the berries, sugar, cornstarch, lemon juice, and vanilla extract together until thoroughly combined. Spread filling evenly into prepared pan.
- Whisk the flour, sugar, baking powder, and salt together in a large bowl. Using a pastry cutter or two forks, cut the butter into the mixture until it resembles coarse meal (pea-sized crumbs). A pastry cutter makes this step very easy and quick! You could also use a food processor, too. While slowly stirring, slowly drizzle in 1/2 cup buttermilk. Mix until evenly combined. Take handfuls of dough and gently flatten out. Place dough all over the top of the berry filling. There’s no special trick to this– just flatten the dough in sections and cover most of the berries.
- Brush the top of the biscuit dough with 1 Tablespoon of buttermilk, then sprinkle with coarse sugar. These two are optional, but both help achieve a shiny, crunchy, golden brown crust.

- Preheat oven to 375°F. Lightly grease two oven-safe baking dishes with 1-cup capacity each or, alternatively, one baking dish with at least 2-cup capacity.
- Mix the sugars, cornstarch, and nutmeg together in a small bowl. Place rhubarb in small saucepan and add the dry ingredients. Stir in the orange juice and water. Bring mixture to a boil over medium high heat, stirring constantly and gently, being careful not to break up the rhubarb chunks. Reduce heat to medium-low and cook for 1 – 1½ minutes, just until mixture starts to thicken, continuing to stir constantly and gently. Remove from heat and stir in the butter and orange rind. If making two separate cobblers, divide the sauce between the two dishes or, alternatively, transfer entire sauce to one baking dish that has a 2-cup capacity.
