I've been looking for recipes to use up my copious quanities of oats in my cupboard and came across this one on the Quaker site. It's very good, easy to make, and very portable!

Steps:
- Heat oven to 350°F degrees.
- In large bowl, combine sugars, yogurt, egg whites, oil, milk, and vanilla; mix well.
- In medium bowl, combine flour, baking soda, cinnamon, and salt; mix well.
- Add to yogurt mixture; mix well.
- Stir in oats and fruit.
- Spread dough onto bottom of ungreased 13x9-inch baking pan.
- Bake 28-32 minutes or until light golden brown.
- Cool completely on wire rack.
- Cut into bars.
- Store tightly covered.

Steps:
- Preheat the oven to 400 degrees F (200 degrees C). Coat a 10x14-inch baking dish with cooking spray.
- Combine brown sugar and butter in a large bowl; beat with an electric mixer until smooth and creamy.
- Mix together whole wheat flour, all-purpose flour, salt, cinnamon, baking soda, and allspice in a separate bowl. Gradually pour flour mixture into the butter mixture; blend well. Stir in oats and mix with a wooden spoon until incorporated. Press 1/2 of the oat batter firmly into the bottom of the prepared baking dish.
- Bake in the preheated oven for 10 minutes. Spread strawberries and blueberries over the crust and sprinkle with remaining oat batter. Press slightly to flatten batter and fruit. Bake until edges are golden brown, 20 to 25 minutes.
- Remove from the oven and let cool completely in the pan. Cut into 24 bars.

DELICIOUS RASPBERRY OATMEAL COOKIE BARS

- Preheat oven to 350 degrees F (175 degrees C). Grease one 8 inch square pan, and line with greased foil.
- Combine brown sugar, flour, baking soda, salt, and rolled oats. Rub in the butter using your hands or a pastry blender to form a crumbly mixture. Press 2 cups of the mixture into the bottom of the prepared pan. Spread the jam to within 1/4 inch of the edge. Sprinkle the remaining crumb mixture over the top, and lightly press it into the jam.
- Bake for 35 to 40 minutes in preheated oven, or until lightly browned. Allow to cool before cutting into bars.

FRUIT-FILLED OATMEAL BARS
Hearty, yummy, and even fairly healthy (if you want it to be!). These are not like granola bars but more like a brownie with a nice crust. Originally taken from BH&G "New Cook Book", 1989--now that I live overseas, I love these older cookbooks because so many of the recipes are still "from scratch" and don't use convenience products that are too expensive or haven't come here yet. Thanks to my Grams for sending it to me when I moved! :)

Steps:
- In mixing bowl, combine flour, oats, brown sugar, and baking soda.
- Cut in margarine/butter until mixture resembles coarse crumbs.
- Reserve 1/2 cup of the flour mixture.
- Press remaining flour mixture into the bottom of an ungreased 9x9x2 baking pan.
- Spread with desired filling.
- Sprinkle with reserved flour mixture.
- Bake at 350F for 30-35 minutes or until the top is golden.
- Cool in pan on wire rack.
- Cut into bars.
- FILLING OPTIONS:.
- ***Following cookbook's 'shortcut' suggestion of substituting 10 oz jar of preserves in place of homemade filling, I used a store-bought, very dense, low-moisture apple butter (like a thick jam). I have also tried it with blueberry preserves but the preserves were too moist--it made the bars sticky not good.***.
- RAISIN FILLING:.
- In medium saucepan, combine 1/2 cup water, 2 tablespoons sugar, and 2 teaspoons cornstarch. Add 1 cup raisins. Cook & stir until thickened & bubbly.
- APPLE-CINNAMON FILLING:.
- Peel/core/chop 2 medium apples. In medium saucepan, combine apples, 2 tablespoons sugar, 2 tablespoons water, 1 tablespoon lemon juice, 1/2 teaspoon ground cinnamon, and a dash of ground cloves. Bring apple mixture to a boil; reduce heat & simmer 8-10 minutes or until apples are very tender.
- APRICOT-COCONUT FILLING:.
- In medium saucepan, combine 1 cup diced dried apricots and 3/4 cup water. Bring apricot mixture to boil; reduce heat. Cover and simmer 5 minutes. Meanwhile, combine 1/4 cup sugar and 1 tablespoon all purpose flour. Stir into apricot mixture. Cook and stir 1 minute more or until mixture is very thick. Stir in 1/2 cup coconut.

- Heat oven to 160C/fan 140C/gas 3. Gently heat the sugar, golden syrup and butter in a pan until the sugar and butter have both melted. Stir the oats, raisins, walnuts, seeds and cranberries into the pan until coated in the butter.
- Spoon half the oaty mix into a traybake tin (23 x 23cm or thereabouts). Scatter the apricots over the top, then top with the remaining oat mix. Pack the mix down well and smooth with the back of a metal spoon. Bake for 35 mins or until dark golden. Leave to cool completely before cutting into 16 bars with a sharp knife.

- Remove the core and thinly slice apples.
- Place apple slices in a large bowl and gently mix in sugar, cornstarch, and cinnamon. Set aside.
- Preheat oven to 350˚F (180˚C).
- In another bowl, combine flour, oats, brown sugar, baking soda, salt, and butter. Mix until crumbly.
- Line a 9x13-inch (23x33 cm) baking dish with parchment paper and pour ⅔ of the oats mixture in the bottom of the pan, pressing firmly to pack it down to make a crust.
- Pour apples over the crust and spread in an even layer. Pour the remaining oat mixture over the top and spread evenly.
- Bake for 30 minutes, or until golden brown.

- Preheat oven to 350 degrees F. Butter and flour a 9 by 13 inch baking pan. Sift the dry ingredients together and set aside. In an electric mixer cream the butter, molasses and sugar until light and fluffy. Beat in the egg and add the reserved dry ingredients and mix until just incorporated. Fold in oats, raisins, nuts and chips. Spread dough in an even layer on prepared pan and bake for 20 to 30 minutes or until lightly browned. STRAWBERRY OATMEAL BREAKFAST BARS
I'm always on the lookout for easy and delicious things to make for breakfast that are on the one hand, relatively healthy and good for you, while on the other hand, not too good for you. I think these really do fit the bill. These are normally made with strawberry preserves, but here we're using fresh strawberries for a little lighter and lower-sugar approach. For best results, refrigerate before serving.

- Preheat the oven to 375 degrees F (190 degrees C). Butter a 9x12-inch baking dish.
- Remove the green tops from strawberries using the tip of small, sharp knife or strawberry huller. Place the berries cut-side down on a work surface and cut in half. Slice each half lengthwise 3 to 5 times before turning and cutting across in a nice, uniform dice.
- Combine diced strawberries, lemon juice, sugar, and cornstarch in a mixing bowl and stir until thoroughly combined and the cornstarch disappears. Set aside until needed.
- Combine oats, all-purpose flour, whole wheat flour, brown sugar, salt, and ginger in a mixing bowl. Pour in melted butter and stir thoroughly until dry ingredients are evenly coated.
- Transfer 60% of the oatmeal mixture into the prepared baking dish and spread out into an even layer. Press the mixture down with the back of a spoon or spatula to compress slightly.
- Place strawberries over the top using a slotted spoon. Do not press down. Reserve any accumulated juices in the bowl. Top with remaining oatmeal mixture and press down lightly with the back of a spoon or spatula. Drizzle reserved juices on top.
- Bake in the preheated oven until the top is golden brown, about 45 minutes. Press the top down with a spatula to compress slightly. Let cool completely, about 1 hour. Cut into bars and serve.

- Directions, Oven at 350 degrees, have a baking pan ready.
- Mix the dry ingredients together, add the oil and apple sauce and mix.
- Separate about 2 cups of the mixture. Put the mixture into a pan or two - we used 1 14"x12" pan. You can grease the sides of the pan, but it isn't necessary on the bottom.
- You want to pack the mixture down and have it be about 1/4 inch thick.
- Spread on the preserves and then crumble the remaining dry mixture on the top.
- Bake at 350 degrees for 25-30 minutes.
- Let cool 10+ minutes and enjoy.
- Oats & whole wheat are good for fiber, the soy adds some protein, and the apple sauce is a good partial substitute for oil/butter, keeping it pretty moist.

I took this out of my latest Easy Home Cooking magazine. It's a Quaker oatmeal recipe. I have been looking for an easy breakfast for my two little ones and this looks like a winner. I think any low fat yogurt would do nicely depending on the fruit you choose. Can't wait to try it!
