DELUXE HOLIDAY FUDGE
Our favorite fudge recipe combines the richness of chocolate with the crunchiness of nuts and the chewiness of dried cherries. Mmm!

Steps:
- Grease bottom and sides of square pan, 9x9x2 inches, with butter, or line with aluminum foil.
- Heat chocolate chips, marshmallows and milk in 2-quart saucepan over medium heat, stirring constantly, until chips and marshmallows are melted and mixture is smooth.
- Stir in vanilla, nuts and cherries. Immediately pour into pan. Drizzle with melted white baking chips. Cover and refrigerate about 2 hours or until firm. Cut into 1-inch squares. Microwave Directions: Place chocolate chips, marshmallows and milk in 8-cup microwavable measure. Microwave uncovered on High 3 to 5 minutes, stirring every minute, until chips and marshmallows are melted and mixture can be stirred smooth. Continue as directed in step 3.

CLASSIC FUDGE
Indulge in some melt-in-the-mouth fudge made with rich condensed milk. The perfect year-round treat, it's also great wrapped up as a gift for family and friends

Steps:
- Butter and line a 20cm square cake tin with baking parchment. Put the butter, condensed milk, sugar and milk in a large saucepan over a low heat. Stir continuously until the sugar dissolves.
- Increase the heat and bring to the boil. Bubble for 10 mins, stirring all the time until the mixture reaches 115C on a sugar or probe thermometer. Remove from the heat and leave to cool to 110C. Add the vanilla, then beat in a stand mixer or with an electric hand whisk until it cools to 60C. This will help break up any large sugar crystals. The fudge should be thick and matte-looking.
- Spoon the fudge into the prepared tin and press down with a spoon to smooth the surface. Leave to set, then cut into squares. Will keep for up to three weeks in an airtight container.

FUDGE DELUXE
Most fudge recipes call for marshmallow creme, but I never keep it on hand. This one calls for marshmallows and chocolate chips. It's easy to make and always turns out great and it's an easy recipe to double with no more effort! The nuts are optional. I'm allergic, so I skip them.

- In heavy 2 quart saucepan, combine 1st 4 ingredients.
- Bring to a boil over medium heat.
- Boil 5 minutes, stirring constantly.
- Remove from heat; Immediately add chocolate chips and marshmallows. (If you use large marshmallows, quarter them first).
- Stir until marshmallows and chocolate are melted.
- Stir in vanilla and nuts (opt). Spread into a buttered 9"x9" pan.
- Cool.
- Cut into small squares.
