CHUNKY FRUIT 'N' NUT FUDGE
Variations on this fudge are endless, but this recipe is my favorite. Besides five types of chips, it includes everything from dried fruit to nuts. Every bite is packed with flavor and crunch.

- In a large bowl, combine cherries and cranberries. Add enough warm water to cover; set aside. Line a 15x10x1-in. pan with foil and grease the foil with 1-1/2 teaspoons butter; set aside. , In a large heavy saucepan, melt remaining butter. Stir in the milk, chips and cream. Cook and stir over low heat for 15-20 minutes or until chips are melted and mixture is smooth and blended (mixture will first appear separated, but continue stirring until fully blended). Remove from the heat; stir in marshmallow creme and extract. , Drain cherries and cranberries; pat dry with paper towels. Stir the fruit, cashews and chocolate chunks into chocolate mixture. Spread into prepared pan. Let stand at room temperature until set., Using foil, lift fudge out of pan. Discard foil; cut fudge into 1-in. squares.

- In a bowl, cream butter and brown sugar until light and fluffy. Add eggs and vanilla; mix well. Combine oats, flour, baking soda and salt; add to the creamed mixture. Spread two-thirds into an ungreased 15x10x1-in. baking pan; set aside. , For filling, heat the milk, chocolate chips, butter and salt in a microwave-safe bowl until chips are melted. Remove from the heat; stir in walnuts and vanilla. Spread over top. Drop remaining oat mixture by tablespoonfuls over chocolate. , Bake at 350° for 20 to 25 minutes. Cool on a wire rack.

Crispy top, with an ooey, gooey, chocolaty fudge center. I hope that this turns out as well for you as it does for me! I place a large piece of aluminum foil or a cookie sheet under my 9x13-inch pan, as it can sometimes get a little bit of overflow. Worth the little bit of mess!

- Preheat oven to 350 degrees F (175 degrees C).
- Combine 1 cup butter, brown sugar, white sugar, and eggs in a large bowl; mix until smooth.
- Mix flour, baking soda, and oats together in another bowl. Add to the butter mixture slowly; mix using an electric mixer until combined.
- Spread 3/4 the oat mixture into an ungreased 9x13-inch baking pan using a spatula. Press lightly into the bottom of the pan to make the surface even.
- Combine chocolate chips, sweetened condensed milk, 1/3 cup butter, and vanilla extract in a saucepan over medium-low heat. Stir until melted and smooth, about 2 minutes. Pour fudge over the oatmeal base and spread evenly.
- Drop tablespoons of remaining oatmeal mixture over the fudge. Press oatmeal down lightly to flatten and swirl into the fudge.
- Bake in the preheated oven until the top is lightly browned, 25 to 30 minutes; the chocolate should still be moist. Cool completely on a wire rack, about 45 minutes. Cut into squares.

Our Fudgy Nut Bars are part brownie, part pecan treat and all fudgy, nutty perfection. Serves a dozen, scrumptiously!

- Preheat oven to 400°F. Microwave chocolate and 1/4 cup butter in large microwaveable bowl on HIGH 1 min. or until butter is melted. Stir until chocolate is completely melted. Add 3/4 cup sugar; mix well. Blend in eggs and vanilla. Stir in flour until well blended. Stir in pecans; set aside.
- Mix graham crumbs, 1 Tbsp. sugar and 2 Tbsp. butter; press firmly onto bottom and 1/2 inch up sides of lightly greased 8-inch square baking pan. Spread chocolate mixture over crust.
- Bake 15 to 20 min. or until center is set. Cool completely before cutting into bars to serve.

- Heat oven to 350°F. Spray bottom only of 13x9-inch pan with cooking spray.
- In large bowl, stir Base ingredients until well blended. Press evenly in bottom of pan.
- To make Topping, in medium microwavable bowl, microwave 1/2 cup butter uncovered on High 30 to 60 seconds or until melted. Add chocolate chips; stir to melt. Microwave 15 seconds, if necessary to melt chips.
- Add condensed milk; stir until completely blended. Pour over base in pan, spreading evenly. Sprinkle with nuts.

The absence of white sugar in these bars appealed to me when I found the recipe. I played with it a bit to reduce the fat content and make them more healthful but just as tender and delicious as the original. The mix of dried fruits gives these a natural sweetness that is just wonderful. You can replace the cinnamon and nutmeg with an equivalent amount of Recipe #145505. Noe that the preparation time includes time to cool the dried fruit mix after simmering, so it is not as labor intensive as the times imply.)

- Bring 1 cup water to boil in a medium suacepan along with the butter and dried fruit . Reduce to a simmer and cook for 5 minutes. Mix in the apple butter or apple sauce. Allow the fruit combination to cool 10-20 minutes. (Tip: Dried fruit can be quite sticky when chopping. Lightly spray your knife with cooking spray first and the task will go more quickly.).
- Mix together the flour, baking soda, spices and nuts in a bowl. Beat together the egg and egg whites. Add beaten eggs, vanilla, and fruit slurry to the bowl with the flour mix and stir until combined.
- Bake in 9 inch pan square pan at 350 degrees for 25 to 30 minutes.
- Allow to fully cool before trying to cut and serve.

- In a large bowl, cream sugar and butter until light and fluffy. Beat in vanilla and eggs. Combine the flour, baking soda and salt; gradually add to creamed mixture. Stir in oats by hand. Press two-thirds of mixture into a greased 15x10x1-in. baking pan. , For filling, heat butter, milk and chocolate chips in a saucepan over low heat, stirring constantly, until chocolate is melted. Remove from heat; stir in the nuts, vanilla and salt. Spread over oat mixture in pan. , Drop reserved oat mixture by teaspoonfuls onto filling. Bake at 350° for 25-30 minutes. Cut into bars while warm.

FRUIT AND NUT BARS
A real standout at the pot-luck dessert table amid the brownies and chocolate chip cookies. Very easy to make, but do it the night before to give them time to cool ALL the way. They're better the next day anyway. If you need to leave out the nuts just up the amount of fruit.

- prepare cookie sheet or jelly-roll pan by lining with foil and spraying with cooking spray; they'll never come out of the pan otherwise!
- preheat oven to 400°F.
- steam dried fruit for about 15 minutes (I like to use Sun Maid Fruit Bits to get a variety and avoid the chopping).
- beat eggs.
- heat eggs and sugar in saucepan until sugar is melted.
- remove from heat and add salt and vanilla.
- add flour 1/2 cup at a time and stir until combined.
- stir in nuts (any kind, I like pecans).
- pour into prepared pan, taking care to fill the corners, the mixture is very sticky.
- bake 15-16 minutes.
- let cool completely.
- turn tray upside down onto cutting board, gently peel foil, then cut into bars.

- For cookie dough cream together margarine and sugar.
- Mix in eggs and vanilla.
- In separate bowl sift flour, soda and salt.
- Add dry ingredients to creamed mixture. Set aside while you make the filling.
- For fudge filling: in a saucepan over boiling water, mix chocolate chips, sweetened condensed milk, margarine and salt.
- Stir until chips are melted and mixture is smooth.
- Remove from heat and stir in nuts (if using) and vanilla.
- Spread about 2/3 of the dough in bottom of greased 15x10 inch jelly roll pan (or one 9x13 and one 9x9 inch pan).
- Cover with fudge filling.
- Dot with remainder of dough.
