Steps:

  • Preheat your oven to 350 degrees F. Coat a 13 by 9-inch baking dish with nonstick cooking spray and set aside.
  • Melt the butter in a saucepan over medium heat. Add the onion and cook until soft, about 5 minutes; season with salt and pepper. Stir in the flour and cumin and cook for 1 minute to remove the raw starchy taste of the flour. Gradually add the broth, stirring to prevent lumps. Once all of the broth is added, stir in the milk. Continue to stir constantly until the sauce thickens, about 8 to 10 minutes.
  • Add half of the grated cheese and stir the sauce until the cheese has melted. Turn off the heat and transfer the sauce to a bowl. Place a piece of plastic wrap directly on the surface of the sauce to prevent a skin from forming.
  • Heat a large skillet over medium-high heat and add the chorizo. Cook and stir until it starts to brown, about 4 minutes, using a wooden spoon to break up any large pieces while it cooks. Add the turkey and continue to cook until both meats are browned 8 to 10 minutes. Drain out excess oil from the pan, if needed. Stir in the Worcestershire sauce, lemon juice, oregano; season with salt and pepper.
  • Line the bottom of the prepared baking dish with 1 layer of plantains (about 1/3 of the plantain slices), making sure that they don't overlap. Top the plantains with half of the meat mixture, spreading it out into an even layer so it covers the plantains. Top with half of the cheese sauce, spreading evenly with a spatula. Add another single layer of plantain slices side by side and cover with the remaining meat mixture and the remaining sauce. Add the final layer of plantains and sprinkle with the remaining cheese and a dusting of paprika over the top. Bake until the sauce is bubbly, about 45 to 60 minutes. Let cool for 10 minutes before cutting and serving.

1/4 cup (1/2 stick) unsalted butter
1 medium onion, finely chopped
Kosher salt and freshly ground black pepper
1/3 cup all-purpose flour
1 tablespoon ground cumin
1 3/4 cups low-sodium chicken broth
1 cup milk
2 cups shredded pepper-jack cheese, divided
6 ounces raw Mexican chorizo, casings removed
1 pound ground turkey
2 tablespoons Worcestershirek sauce
1 tablespoon lemon juice
1 teaspoon dried oregano
4 to 6 ripe black-skinned plantains, peeled, halved horizontally and thinly sliced lengthwise
Paprika, to taste
Chopped fresh cilantro leaves, for serving

Sausage and Mixed Mushroom Lasagna image

Steps:

  • Preheat the oven to 350 degrees F. In a medium pot heat 1 tablespoon of the oil over medium-high heat. Add the garlic and cook until fragrant, about 1 minute. Add the tomatoes with their juices, oregano, 3/4 teaspoon salt and 1/4 teaspoon pepper. Bring to a simmer and continue to cook until the tomatoes soften and the sauce thickens, 20 minutes, breaking up the tomatoes with a spoon as they soften. Reserve 2/3 cup of the sauce for assembling the lasagna and set the rest aside.
  • Meanwhile, heat the remaining 1 tablespoon oil in a large skillet over medium-high heat and add the mushrooms. Cook until the mushrooms have released their liquid, 5 to 7 minutes. Add the sausage and continue to cook, breaking the sausage up with a spoon, until the sausage is browned and cooked through, another 10 minutes. Add the tomato sauce and stir to combine.
  • Thinly slice about a quarter of the mozzarella and set aside; grate the rest on a box grater. Combine the grated cheese with the ricotta and the egg. Spread the reserved 2/3 cup tomato sauce in the bottom of a 9-by-13-inch baking dish. Top with 1 pasta sheet, a third of the ricotta mixture and a third of the meat sauce. Repeat with the remaining pasta, ricotta and meat sauce. Cover with foil and bake until the sauce is bubbling around the edges and the pasta is tender, about 45 minutes. Remove the foil, top with the sliced mozzarella and continue to bake until the cheese is melted, 15 minutes more. Let stand for 20 minutes and sprinkle with chopped parsley before serving with a green salad and some garlic bread.

1 teaspoon dried oregano
2 tablespoons extra-virgin olive oil
2 cloves garlic, thinly sliced
One 28-ounce can whole plum tomatoes, lightly crushed
Kosher salt and freshly ground pepper
Two 4-ounce packages mixed mushrooms, coarsely chopped
1 pound sweet Italian sausage, removed from casings
1 pound mozzarella cheese
Two 15-ounce containers ricotta cheese
1 large egg
3 fresh lasagna sheets (about 7 ounces)
2 tablespoons chopped fresh parsley
Serving suggestions: Green salad and garlic bread

Steps:

  • Preheat broiler.
  • Prepare beef patties and simmer in tomato sauce for about 10 minutes, set aside.
  • Spray cookie sheet with olive oil. Salt and pepper unpeeled eggplant slices on both sides. Drizzle with olive oil. Layer them on cookie sheet and broil for 10 to 15 minutes on each side, and set aside.
  • Drain the fried chorizo and set aside. Toast pine nuts in broiler for about 10 minutes.
  • Cover bottom of baking dish with about 1 1/2 cups of Bechamel sauce. Add 1 layer of eggplant then top with beef patties and sauce. Sprinkle with grated Manchego cheese and toasted pine nuts. Repeat steps and finish with a layer of eggplant. Pour remaining Bechamel sauce on top and sprinkle with fried chorizo, remaining pine nuts and rest of Manchego cheese. Broil in middle of the oven for about 15 to 20 minutes or until golden brown.
  • In a bowl, soak the bread in milk until saturated. Squeeze out the milk and place into a separate bowl along with ground beef, chorizo, eggs, bread crumbs, Parmigiano cheese, parsley, marjoram and garlic. Mix until combined. Knead until the mixture is firm enough to roll. Roll into small round patties, not too thick.
  • In a large, nonstick skillet, heat the olive oil on high heat and add the patties. Fry about 2 minutes on each side. Transfer meat patties to a plate. Add patties to the tomato sauce and simmer for about 10 minutes.
  • Melt the butter in a saucepan over medium heat. Add the flour and cook until smooth; stirring continuously, about 2 minutes. Slowly add the milk and whisk constantly. Once smooth, simmer until thickened, about 10 minutes. Add the nutmeg.

Steps:

  • Heat the 2 tablespoons of oil in a wide pot over medium-high heat. Once hot add the chorizo, ground beef onion, and garlic. Using a spatula, break up the meat as small as you can as it browns. Saute until dark brown, about 10 minutes.
  • Add the red wine and simmer until the wine is reduced by half, about 1 minute.
  • Stir in the tomatoes, 2 tablespoons smoked paprika, panko, heavy cream, and salt. Cover the pot, reduce the heat to very low, and cook for 15 minutes.
  • Bring a large pot of salted water to a boil over medium-high heat. Add the lasagna noodles and cook according to the package instructions. Drain and set aside.
  • Put 1 lasagna noodle on each of 4 plates. Spoon the meat mixture over the pasta and spread it out evenly. Sprinkle on about 1/8 of the parsley and grated manchego. Lay another lasagna noodle on top. Sprinkle with more parsley and manchego over the second noodle and dust with remaining 1 tablespoon smoked paprika. Drizzle with extra-virgin olive oil and serve.
