GARLIC ROAST LAMB WITH HOTPOT POTATOES
A leg of lamb stretches to feed a crowd of up to eight, especially when combined with sliced potatoes and carrots in gravy

- Heat oven to 190C/170C fan/gas 5. Cut small pockets into the skin and flesh of the lamb by piercing it with the point of a sharp knife. Stuff each pocket with a slice of garlic, using 3-4 of the cloves, and a few leaves of rosemary. Stuff some more inside the lamb, with some thyme, where the bone has come from. Put in a roasting tin, season well and cover with foil.
- Melt half the butter in a large frying pan. Fry the onions, stirring frequently, until softened and golden. Tip into a second large roasting tin. Cook the chopped mutton or lamb in the pan until brown. Add to the onions in the tin, and toss with the potatoes, carrots, remaining garlic and herbs (chopped), 2 tbsp of the flour and some seasoning.
- Pour the stock into the frying pan, then add the Worcestershire sauce and the remaining butter. When melted and boiling, pour over the potatoes, cover with foil and bake with the lamb for 1 hr.
- Uncover both the lamb and the hotpot, and cook for 45 mins more until the potatoes are golden and cooked all the way through. Allow the lamb to rest for 15 mins before carving. Leave the potatoes in the oven (covered if starting to brown too much) until ready to serve.
- Drain the fat from the lamb's roasting tin, reserving the juices. Put the tin on the heat and stir in the remaining flour. Pour in 450ml boiling water or stock and stir until thickened to a gravy. Cut the hotpot into 8 and lift onto warmed plates. Carve the lamb into thick slices and place on top, then spoon round a little gravy. Serve with the green beans and spinach - add a little grated nutmeg to the spinach, if you like.

GARLIC MASHED POTATOES
This classic potato dish is always on everyone's favorites list for a Thanksgiving side.

- Peel potatoes and quarter lengthwise; cut crosswise 1/2 inch thick. In a 5-quart saucepan, combine potatoes and garlic cloves; cover with water (about 8 cups) by 1 inch. Add 1 tablespoon salt.
- Bring to a boil; reduce heat, and simmer until potatoes are easily pierced with the tip of a paring knife, 25 to 30 minutes.
- Drain; return garlic and potatoes to pan. Stir over medium-high heat until dry, 1 to 2 minutes. Remove from heat.
- In a small saucepan, bring milk to a boil; pour over potatoes. Add butter and 1 teaspoon of salt. Mash until smooth and creamy.
SPECIAL GARLIC & CHEESE POTATO CASSEROLE
The recipe doesn't designate a cooking time so I'm guessing. However, cooking time aside, this sounds scrumptious! I'll be making it very soon.

- The Pan:.
- Large oven dish, must be at least 6 inches deep.
- If not this deep, make sure it is large around. I'd say minimum 4" deep.
- A large disposable foil casserole pan should work fine.
- Directions:.
- Peel (or not) and slice potatoes to no thicker than a dime (2-3mm).
- Layer the bottom of your oven dish with 2-3 layers of potatoes.
- Cover potatoes with a thick layer of grated cheese.
- Crush one clove of garlic over the top of the cheese, spreading out evenly.
- NOTE: If you know how much cheese and garlic you WILL use, just crush the garlic and mix it with the cheese to make spreading easier.
- Continue to do this 3-4 times depending on how deep your oven dish is.
- End up with a cheese and garlic layer to finish, not potatoes.
- Mix milk and egg together and pour over the top of the cheese.
- Bake at 180º C (350º F)until potatoes are soft and cheese topping is browned off
- Cooking time will vary depending on number of layers and thickness of potato slices.
- VARIATION: adding meat of your choice to this with the cheese/garlic layer, would make this a great main dish.
- If other ingredients are added, you may have to double the egg/milk mixture, and adjust the cooking time.

- Rub thyme between fingers to release oils; place in a saucepan. Add butter, garlic, salt, and pepper. Cook over medium, stirring often, until butter melts, 3 to 4 minutes. Remove from heat. Let stand for 15 minutes.
- Meanwhile, preheat oven to 400°F. Thinly slice Yukon Gold and sweet potatoes into 1/16-inch-thick slices (preferably using a mandoline).
- Remove sprigs from butter and discard. Reserve 1 tablespoon herb butter in a small bowl; set aside. Brush bottom of a large ovenproof or cast-iron skillet with some remaining herb butter. Cover bottom of skillet with a layer of sliced Yukon Gold and sweet potatoes; start from center and work outward in concentric circles, overlapping slices. Generously brush top with more herb butter. Repeat layering with remaining potato slices, brushing with herb butter after each layer. (You will have about 6 layers.)
- Heat skillet over medium-high until mixture is sizzling, 2 to 4 minutes. Carefully cover with aluminum foil. Transfer skillet to oven and bake for 15 minutes. Remove foil. Continue baking, rotating skillet halfway through, until center is tender when pierced with a wooden pick and some potato slices on top curl and darken, about 45 minutes. Brush with reserved 1 tablespoon herb butter and continue baking for 5 minutes. Let cool for about 15 minutes. Run a rubber spatula around edges of skillet to loosen, gently sliding spatula underneath. Slice into wedges while in skillet; top with thyme leaves.
