Steps:

  • Slice the chicken breast into ½ inch (1 ¼ cm) thick strips.
  • Place the flour, eggs, and bread crumbs into 3 separate bowls.
  • Roll a chicken strip in the flour, dusting off excess. Dip the strip into the egg, then place into the bread crumbs, coating it completely.
  • Repeat with the remaining chicken.
  • Heat the oil in a pan over medium heat to 350˚F (180˚C).
  • Preheat oven to 350°F (180˚C).
  • Fry the breaded chicken strips until both sides are golden brown.
  • Remove from heat and drain on a paper towel.
  • Slice the baguette into thirds or fourths (each baguette piece should be roughly the same length of the fried chicken strips).
  • Hollow out the insides of the baguette pieces with a knife.
  • Lay two slices of mozzarella on top of each other with a 1 inch (2 ½ cm) overlap. Place a chicken strip on the overlapping region, then fold the mozzarella tightly around the chicken.
  • Push the rolled chicken strips into a baguette piece.
  • Slice the stuffed baguette pieces into 1 inch (2 ½ cm) slices, then place them tightly side-by-side on a baking sheet lined with foil.
  • In a small bowl, mix together ingredients for garlic butter.
  • Brush the garlic butter evenly over the baguette slices, making sure some drips in between the slices.
  • Wrap the foil over the re-assembled baguette and bake for 20-25 minutes, until cheese is melted and the top is starting to brown.
  • Remove the foil and serve with marinara!

KITTENCAL'S PARMESAN GARLIC BREAD OR GARLIC TOAST

For a nice change substitute finely shredded white cheddar cheese for the Parmesan cheese and fresh chopped chives for the parsley and also you could add in 1/4 cup mayo in with the butter mixture :)

Steps:

  • Set oven to 375°F.
  • ** FOR GARLIC BREAD; cut slices down the length of the bread about 1-inch intervals without cutting all the way through.
  • In a bowl, combine the softened butter with garlic, parsley and Parmesan cheese; mix well to combine.
  • Spread the butter/garlic mixture between bread slices, and then on the top of the loaf (you may sprinkle more Parmesan cheese on top of the loaf if desired).
  • Wrap the bread in heavy-duty foil leaving the top partially uncovered.
  • Bake until heated through (about 15 minutes).
  • ** FOR GARLIC TOAST; slice the bread into slices, then spread the garlic butter mixture over the top of each slice of bread, then sprinkle more Parmesan cheese over the top of each slice or you can sprinkle shredded cheddar cheese on top in place of the Parmesan.
  • Place onto a baking sheet and bake (350 degrees F) until lightly toasted to desired doneness.
  • Serve warm.
  • TO MAKE AHEAD: Combine all ingredients (except the bread) store covered in refrigerator for up to 3 days or freeze in a covered container ----- this bread can be made without the addition of the Parmesan cheese if desired, but of course it's better with the cheese!

1 loaf French bread (not the long thin kind)
1/2-3/4 cup butter, softened (no substitutes)
1 -2 tablespoon fresh minced garlic
2 teaspoons dried parsley or 2 tablespoons fresh parsley
1/3 grated parmesan cheese (you may increase slightly if desired)
1 pinch salt (or to taste)

GARLIC & PARMESAN BUTTER (TO FREEZE FOR FRENCH LOAF)

This is quick and easy to make and have on hand for when you want garlic bread quickly. I make up the garlic / parmesan butter and keep in the freezer until I need it. Then I just take it out to make up and replace when I've finished. It is usually soft enough to spread by the time I've sliced my bread. I use Flora Pro Active Low Cholesterol Spread to make mine but if using butter it will need to be thawed a little longer to spread. I like to use the par baked dinner rolls you buy in the supermarket and slice them in halves lengthwise. This spread is so much nicer than store bought garlic bread, the bottom is still slightly soft and the top toasty. I guessed the servings because it's hard to know exactly. I have also used this in cooked rice, mashed potatoes and on top of freshly steamed vegetables.

Garlic & Parmesan Butter (To Freeze for French Loaf) image

Steps:

  • Mix the butter and all of the other ingredients together well and put back in original butter container and freeze. Make sure to label top of container. If you use some of the spread for making garlic bread immediately, it will fit back in the original container.
  • Just take container out of the freezer when you want to make up garlic bread. By the time you slice the bread it will be ready to spread depending on what spread you use. Butter will take a little longer but whatever spread you use it can safely be re-frozen.
  • To make up: I like to slice my French loaf diagonally and not too thick, If using rolls I cut in half lengthways.
  • Spread quite thickly over the entire surface and bake at 150degC (300degF) on baking paper lined tray for about 10 - 15minutes until starting to brown & bubble on top. The bottom will still be reasonably soft and the top toasty.

500 g butter, soft (I use Flora pro active, a low cholesterol spread)
3 garlic cloves (I use minced garlic from a tube)
1/2-3/4 cup parmesan cheese, shredded
1 teaspoon dried parsley
1 teaspoon chives, dried
1 teaspoon mixed herbs, dried (optional)
ground black pepper
sea salt, small amount to taste
1 French bread, loaf (or small dinner rolls)
