GARLIC PRAWNS IN THE MICROWAVE
Another from the mother in law. I don't leave tails intact, personal preference. Preparation time includes peeling prawns. Spring onions also known as scallions or green onions. UPDATE - thank you to Karen Elizabeth would never have thought to use this as way to cook the prawns to ADD to other dishes such as she did with a vegetable stir fry - great idea, thank you. A PLEASE NOTE - I now have a 900W microwave and I find 3 1/2 to 4 minutes does it, When this recipe was first presented wattages in ovens where very low so the higher wattages today will determine the cooking times.

Steps:
- Peel and devein prawns, leaving tails intact.
- Put prawns into a microwave proof dish or divide prawns into 4 microproof ramekins.
- Combine all other ingredients and pour over prawns or divide between the 4 ramekins.
- Microwave on high for 5 minutes, stirring occasionally.
- Serve with crusty bread.

SHRIMP IN GARLIC BUTTER (MICROWAVE)
This is quick, simple and delicious. I usually serve this with a bed of whole grain rice yum yum!

- 1. 1. Place butter in custard cup. Microwave at high 30 to 45 seconds until melted. Stir in garlic powder and parsley flakes.
- 2. 2. Separate shrimp; place in 9 or 10 inch diameter dish. Pour butter mixture evenly over shrimp, cover tightly.
- 3. 3. Microwave 5 to 8 minutes until shrimp is opaque; stirring every 2 minutes. Let stand uncovered 1 to 1 1/2 minutes.

- Microwave butter 30 to 45 seconds on high until melted.
- Add garlic powder and parsley flakes.
- Separate shrimp: Place in a glass pie dish.
- Pour butter mixture over shrimp. Cover tightly with plastic.
- Microwave 5 to 8 minutes, until shrimp are opaque. Stir every 2 minutes.
- Let stand covered 1 1/2 to 2 minutes.
- Serve with rice or pasta.
GARLIC PRAWNS
This is a great easy prawn marinade, they are great on the BBQ, we put them out as appetizers but they can also be a main course. I've also sauteed them with the marinade and used the sauce with pasta or just lapped it up with French bread! ENJOY.

- In a glass dish, mix together the olive oil, mustard, garlic, lemon juice, orange juice, basil and white wine. Add the prawns, and stir to coat. Cover, and let marinate for 1 hour.
- Heat an outdoor grill to high heat.
- Thread prawns onto skewers. Grill for 3 to 5 minutes, turning once, until pink.
- If desired, reserve marinade; transfer to a saucepan and bring to a boil. Reduce heat and simmer for 5 minutes. Serve with prawns.

GARLIC PRAWNS
These are tastier than anything I've ever eaten in a restaurant, and, better still, can be made a few hours ahead of your guests arriving. The recipe can be easily adjusted to feed less or more as required. The quantities given here are for a main course. I would normally serve this with steamed rice. This recipe is adapted from English food writer, Delia Smith.

Steps:
- Remove prawn heads and peel prawns, leaving tails intact.
- 'Butterfly' prawns by turning them on to their backs and, working from the tail, use a small, sharp knife to slit them almost in half lengthwise.
- Press down lightly with your hand to flatten them slightly.
- Remove and discard the 'vein' located along the length of the cut.
- Place the prawns in a single layer into a buttered baking dish.
- Now, simply combine the melted butter, garlic, lemon rind and juice, 1 tablespoon of the chopped parsley and a good pinch or two of black pepper and pour evenly over the prawns in the baking dish.
- At this stage, the dish can be covered with plastic wrap and kept in the fridge until you are ready to cook it.
- To cook, preheat oven to 230°C (450°F).
- Place the baking dish on the highest shelf of the oven.
- Cook prawns for 5-8 minutes, or until pink.
- The prawns will take more like 7-8 minutes to cook if they have been prepared earlier and chilled.
- To serve, sprinkle lightly with salt and with the reserved parsley.

You are never too old to learn new tricks. Sometimes I must appear as a gentle dog, I go along thinking that I can and will do some recipes that same ol' way, day after day, week after week. You know, you've probably been there yourself. One recent holiday, the statement turned out to be the truest statement that I have come to know. Well one of many true statements I have come to know....anyway, jumping back into the story.....I was buzzing along like a honey bee running back to the old bee hive stuck up inside the old shed, and blow me down with a piece of paper towel, I forgot to steam the shrimp! Our guests would soon be arriving, and they expected.....well....food. And lots of it too. All four burners were covered with various foods whistling away, and the oven was packed up like the attic after Christmas. I had 2 pounds of fresh shrimp that I had purchased the day before to be made....today! Was wondering for a moment what I should do. I could sit on them as a mother hen who is warming the underside her great berth, or, I could use the microwave. Nah. No. Nada. Not gonna do this. I don't want the shrimp to be like an old farm tire that has lost its usefulness. Ok. well, I'll try it. Holy confetti. Jumping Joe Flat. It worked! Euphoria set upon the house that stood on Longmeadow Farm and people started smacking their lips, yelping, and a joyous uproar could be heard from the house that special Holiday eve. Now, don't go saying you can't microwave shrimp, cause this might make you change your mind.

- Mix together butter, water, (or broth), seasonings, onion, and garlic if using, and pepper, in microwave dish/casserole dish. Heat this fluid/butter for 30/60 seconds on high. Take out carefully, and add shrimp, all in one layer. Add onion and garlic if using.
- Add extra ingredients if needed/seasonings.
- Set timer for microwave for 3 minutes, and cook. Make sure to use a plastic wrap to cover dish, venting on one side for air. After 3 minutes, check to make sure the shrimp are cooked through. If not put back into oven for 30 second intervals.
- Take out shrimp and set on top of crackers, add extra seasonings, and devour.
