Garlic Lover's Pot Roast image

Steps:

  • Using the tip of a sharp paring knife, make 20 small evenly spaced slits about 1 1/2 inches deep all over the pot roast. Using your fingers, insert the garlic cloves as deep into the slits as possible. Season with salt and pepper.
  • In a Dutch-oven, heat oil over high heat. Carefully add meat and sear on all sides until very well browned, 4 to 6 minutes per side. Add onion, carrots, celery, and 2/3 cup water. Cover and reduce heat to medium-low; cook until roast is very tender, 3 to 3 1/2 hours, turning 2 to 3 times. Add more water or wine, if desired, as needed so that there is always a little liquid in bottom of Dutch-oven. If done in the oven, the temperature should be 300 degrees, and the roast should cook for 3 to 3 1/2 hours until tender.
  • Transfer meat to a cutting board and let stand 10 minutes. Slice meat and serve drizzled with pan juices.

Portuguese Pot Roast in Wine & Garlic image

Steps:

  • In a medium mixing bowl, whisk half the wine into tomato paste until smooth.
  • Stir in herbs. Set aside.
  • Place beef and chourice pieces in covered (18 X 12 X 7 1/2-inch) oval roasting pan. Evenly distribute garlic and onions around meat. Pour in wine mixture. Add the water and remaining wine. Cover and marinate in refrigerator overnight or up to 48 hours.
  • Preheat oven to 450 degrees. Remove pan from fridge, place on bottom rack of oven and cook covered for 2 hours. As marinade reduces to gravy, baste meat often to keep moist.
  • Remove chourice, cover with foil and keep warm.
  • Lower temperature to 400 degrees. Add potatoes and carrots; cook covered for 30 minutes; uncover and continue cooking until meat is browned and potatoes tender, about 30 minutes more.
  • Final Comments.
  • NOTE: If gravy is too liquid, remove meat and vegs, place pan on top of stove and cook uncovered over medium-high heat until reduced. If too thick, add water.

Steps:

  • Spray a cold Dutch oven with nonstick cooking spray, then preheat over medium heat, Brown roast on all sides in the Dutch oven.
  • Drain any fat.
  • Add water, wine or broth, onion, garlic, bouillon granules, thyme, and pepper.
  • Heat to boiling; reduce heat.
  • Cover and simmer for 1 hour.
  • Add carrots to Dutch oven and simmer for 40 minutes.
  • Then, add beans and simmer 10 minutes more or until beans and meat are tender.
  • Transfer roast and vegetables to a severing platter.
  • Keep warm while making gravy.
  • For gravy, skim fat from pan juices. Stir together cornstarch and 2 tablespoons water. stir mixture into pan juices.
  • Cook and stir until thickened and bubbly.
  • Then cook and stir for 2 minutes more.
  • To serve, Spoon gravy over meat and vegetables.

Pot-roasted Pork in White Wine with Garlic, Fennel, and Rosemary image

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • With 2 or 3 bits of string, tie up your pork loin, do this any way you like. It doesn't have to be fussy, you just want to keep the meat in a snug shape while it's cooking. Season generously with salt and pepper, then roll the meat in the fennel seeds until covered.
  • In a casserole pan or roasting tray, fry the meat for a couple of minutes in half the butter and a little olive oil, until nice and golden.
  • Throw in the garlic, herbs, fennel, and wine, then cover the tray loosely with some wet greaseproof paper and cook until an inserted meat thermometer reaches 150 degrees F. As the pork loin is off the bone it cooks very quickly. Remove from the oven and allow the meat to rest on a plate. Then, without using any more heat, finish off your sauce in the pan, scraping any goodness off the bottom and adding the rest of the butter. Remove any large bits.

Red Wine Pot Roast image

Steps:

  • Preheat the oven to 275 degrees F.
  • Heat the olive oil in a heavy ovenproof pot (with a lid) over high heat. Salt and pepper both sides of the roast, then sear it for about a minute on one side and a minute on the other side. Remove the meat to a plate.
  • Reduce the heat to medium high and add the tomato paste, celery, garlic and onions. Stir it around and cook until the vegetables start to soften and the tomato paste releases its flavor, 2 to 3 minutes. Pour in the glorious wine, then stir and scrape the pot to get up all the browned bits on the bottom. Pour in the broth, then stir in the marmalade.
  • Return the meat to the pot and top it all off with the potatoes, carrots, parsnips, rosemary and thyme. Push the veggies and herbs into the liquid, then put the lid on the pot, transfer to the oven and roast until the meat is fork-tender, 3 to 4 hours. (Mmmm. The liquid becomes something magical.)
  • Transfer the roast to a serving dish (if it falls apart that's a good sign!) and place the vegetables all around it, then spoon on as much sauce from the pot as you'd like. Total, unmistakable, comfort food.

AWESOME RED WINE POT ROAST

I call this my 'famous Seamus' pot roast because my tiny Siamese cat, Seamus, sat in the kitchen the entire time this pot roast was cooking. I've been making this recipe for 40+ years and I just throw the ingredients together; it's very forgiving. My son-in-law also says it's the best thing he ever ate. When boys hang around the oven, it can't be bad.

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Sprinkle the roast evenly with the flour and set aside. Heat the canola oil in an oven-proof Dutch oven with lid over medium-high heat.   • Cook and stir onion and garlic in a skillet over medium heat until browned, 4 to 5 minutes. Combine onion mixture, hot water, and chicken bouillon in a bowl.

Alcatra ( Portuguese Pot Roast With Wine, Bacon & Garlic) image

Steps:

  • In a large heavy Dutch oven, saute the bacon in the olive oil until drippings are rendered and bacon is browned a bit and crisp; transfer bacon to a paper towel-lined plate to drain.
  • In the bacon drippings, brown the beef roast well on all sides over moderately high heat.
  • Transfer to the plate with bacon, then add onions, garlic, bay leaves, peppercorns and cloves to the Dutch oven.
  • Saute about 10 to 15 minutes or until lightly browned.
  • Blend in tomato paste, lower the heat, cover and steam for 20 minutes.
  • Remove and set aside half of the tomato-onion mixture; place the beef roast back into the Dutch oven with the bacon, then spoon remaining tomato-onion mixture on top.
  • Carefully pour the wine and salt around the beef roast and bring to a simmer.
  • Preheat oven to 375 degrees F.
  • Cove and bake in the 375 degree oven for 2 hours; remove and turn beef over in the liquid.
  • Lower oven temperature to 325 degrees F then bake uncovered about 1 hour longer or until meat is falling-apart tender (and it will be!).

Red Wine Apple Juice and Garlic Pot Roast image

Steps:

  • Combine 1/4 of the onion, the chopped apple, and 2 tablespoons of the garlic in the bowl of a food processor. Process until smooth.
  • Combine the salt, pepper, ginger, 2 tablespoons of garlic and flour in a shallow container. Gently press the roast onto the flour mixture to coat all sides. Brush off any excess flour. Heat the oil in a large, heavy skillet. Brown the roast in the hot oil, turning until golden on all sides.
  • Place the browned roast a roasting pan and scatter the celery, potatoes and the remaining onion around the roast.
  • Pour apple cider, wine, onion soup mix, and processed mixture into a large bowl and mix well.
  • Pour the mixture over the vegetables and roast.
  • Cover the pan with foil, and cook at 300 deg F for 4 hours. Baste the roast in the juices every hour or so.
  • After 4 hours add the carrots to the pan and add the remaining 2 tablespoons of garlic over the top of the roast, pressing the garlic into the surface and crevasses in the roast with a spoon or your fingers.
  • Cover the pan with the foil and increase heat to 425 deg F. Cook for an additional 3 hours. Baste the roast in the juices every hour or so.
  • Serve with the juices, or thicken with corn starch for a wonderful gravy.

Steps:

  • Cut 4 of the garlic cloves into thin slivers.
  • Cut small slits in the roast and slide a garlic sliver into each one.
  • Heat the oil in a large pot and brown the beef on all sides.
