Geera Pork image

Steps:

  • Marinate pork in salt, chive, thyme, black pepper, garlic, culantro, and pimento pepper for four hours or overnight.
  • Heat oil.
  • Mix garam massala with 1/4 cup water, add this to hot oil and cook for about 3 minutes until thick and most of the water has evaporated.
  • Add pork and stir until coated with massala.
  • Add water until pork is just covered. Bring to a boil. Lower heat, cover and simmer for 20 -35 minutes or until almost cooked.
  • Add minced scotch bonnet pepper and ground cumin.
  • Stir thoroughly and cook for an additional 5-10 minutes until tender.
  • If while cooking it gets too dry, add about 1/2 cup water to prevent burning.
  • When it is done the water should have reduced to a somewhat thick gravy.

  • Cut the Pork (3.5 pound) into 3/4-inch pieces and wash with the juice of a Lime (1) and cool water. Drain and place in a bowl.
  • Season with Roasted Cumin Powder (1 1/2 tablespoon), Green Caribbean Seasoning (1 tablespoon), Salt (3/4 teaspoon), and Freshly Ground Black Pepper (1/4 teaspoon). Mix well to coat and combine.
  • Heat the Vegetable Oil (2 tablespoon) in a wide pan on medium heat, then add the Cumin Seeds (1/2 teaspoon). Turn the heat down and allow them to cook for about 3 minutes. The goal is to create a wonderful base of flavor. Then go in with the Scallion (2), Red Bird's Eye Chili Pepper (8), Pimiento Pepper (2), Garlic (4 clove), Fresh Cilantro (2 tablespoon), and Fresh Parsley (1 tablespoon).
  • After about 3 minutes after adding the peppers etc, turn up the heat to medium-high and start adding the pieces of seasoned pork to the pot. Stir well to coat the pieces of pork with that amazing base of flavors we created. Do not cover the pot as we want to sear the pieces of pork.
