FRIKADELLEN (GERMAN MEAT PATTIES)

Call them Frikadellen, Buletten, Fleischpflanzerl, Fleischküchle or Klopse. Whatever they are called, German meat patties are the best. Enjoy!

Frikadellen (German Meat Patties) image

Steps:

  • Soak the bread in water, then squeeze out the water.
  • In a bowl, mix the meat, onion, eggs, bread, mustard, stock cube, parsley and pepper and knead until you get an even mixture.
  • Form flat hamburgers no bigger than the palm of your hand.
  • In a frying pan, fry the hamburgers in olive oil until cooked through.

1/2 baguette or equal quantity of any white bread, cut into very small pieces
1 lb ground beef (or half pork, half beef)
1 small onion, finely chopped
2 eggs
1 tablespoon mustard
1 vegetables, crushed or 1 meat stock, cube crushed
1/4 cup fresh parsley, chopped
pepper
olive oil

This is a easy way to make Frikadellen. You can make them on the grill as well. I always experiment with additional spices and ingredients,such as a pinch of nutmeg, Paprika, BBQ sauce... enjoy

German Frikadellen ( Burgers) image

Steps:

  • 1. Soak Bread slices in warm water for about 5 minutes. Chop onion & parsley while bread is soaking When bread is soft squeeze water out of bread ( this will help bind the meat)
  • 2. Place all ingredient into large mixing bowl. ( I use both hands, just like Mom & Oma did) Mix all ingredients together until a sticky-dough like consistency is obtained.
  • 3. Heat Olive Oil in skillet on medium heat. Form small burgers and place carefully into hot oil. ( if mixture is too sticky, add some breadcrumbs) Let each side cook about 8 minutes or until well done.
  • 4. The Frikadellen can be served on a Hardroll with Ketchup and some thinly sliced onion, to taste. or the can be served with Fried Potatoes and green Salad.

1 lb ground beef
3 slice frenchbread
1 large egg
1/2 finely chopped onion
pinch salt and pepper
1 tsp maggie seasoning or worchester sauce
2 Tbsp olive oil, extra virgin
2 Tbsp chopped fresh parsley
plain bread crumbs

  • Break the bread up into small pieces, place them in a small bowl and pour water/milk over them and let them soak for 15 minutes while you're preparing the other ingredients. Squeeze out any excess liquid.
  • Heat some oil or butter in a frying and saute the onions until soft and translucent, 5-7 minutes. Add the garlic and cook for another minute.
  • Place all of the ingredients (except for the olive oil and butter) in a large bowl along with the onion mixture and the soaked bread. Use your hands to thoroughly knead the mixture until well blended and the meat is smooth. The more you knead it, the better the results. Form the meat mixture into balls according to desired size and slightly flatten them. Cover and chill the patties in the fridge for at least 30 minutes.
  • Heat the olive oil and butter in a frying pan. Once hot add the Frikadellen / Frikadeller and fry on both sides on higher heat until nicely browned, then lower the heat and continue to fry over medium heat until cooked through according to desired doneness. Traditionally served with potato salad or a crusty bread roll slathered with mustard. See blog post for other serving ideas.
