GERMAN SPINACH OMELET

German Spinach Omelet image

Steps:

  • Mix eggs with salt, pepper, nutmeg, and milk.
  • Melt butter.
  • Cook in smaller saute pan with lid cause they want it to be tall.
  • Add bell peppers; saute.
  • Add mushrooms saute.
  • Add eggs; stir once.
  • Add spinach.
  • Cover with lid ajar.
  • Cook on low.
  • Cook until semi solid (you dont have to do this step).
  • Serve like pizza with rye toast.

1/4 teaspoon salt
1 teaspoon pepper
1/4 teaspoon nutmeg (start with a pinch reviews say 1/4 teaspoon is too much)
4 tablespoons milk
1 tablespoon butter
1/4 cup bell pepper, diced
1/2 cup mushroom, sliced
1/2 cup spinach
4 slices rye toast

GERMAN SPAETZLE DUMPLINGS

Traditional German dumplings. You can also mince a few pieces of bacon in a pan, and heat the cooked spaetzle in the bacon drippings-only omit the butter, if preparing recipe with bacon.

German Spaetzle Dumplings image

Steps:

  • Mix together flour, salt, white pepper, and nutmeg. Beat eggs well, and add alternately with the milk to the dry ingredients. Mix until smooth.
  • Press dough through spaetzle maker, or a large holed sieve or metal grater.
  • Drop a few at a time into simmering liquid. Cook 5 to 8 minutes. Drain well.
  • Saute cooked spaetzle in butter or margarine. Sprinkle chopped fresh parsley on top, and serve.
