BIG DADDY'S GET UP GRANOLA

Big Daddy's Get Up Granola image

Steps:

  • Preheat the oven to 275 degrees F. Lightly grease a half sheet tray lined with parchment paper.
  • In a large bowl, combine the oats, peanuts, almonds, walnuts, coconut and brown sugar. Mix well. Add the molasses and peanut oil. Toss well until all ingredients are evenly dispersed and coated. Spread the granola out evenly on the sheet tray. Bake in the oven for 60 minutes, stirring occasionally to achieve even color.
  • Remove from the oven and transfer to a large bowl. Fold in raisins and graham crackers. Stir the blueberries into the yogurt in a small bowl. Spoon the yogurt into serving glasses or bowls and top with graham cracker granola.

1 1/2 cups rolled oats
1/2 cup peanuts, roasted
1/2 cup almonds, blanched
1/2 cup chopped walnuts
1/2 cup sweetened coconut
2 tablespoons brown sugar
2 tablespoons molasses
3 tablespoons peanut oil
1/2 cup raisins
1/2 cup coarsely crushed graham crackers
1 pint blueberries
1 quart vanilla yogurt

Ultimate Fruity Granola image

Steps:

  • In a large bowl, combine the oats, almonds, sunflower kernels and flax. In a small saucepan, combine the brown sugar, maple syrup, honey, oil, salt and cinnamon. Cook and stir over medium heat for 2-3 minutes or until brown sugar is dissolved and mixture is heated through. Remove from the heat; stir in vanilla. Pour over oat mixture and toss to coat., Transfer to a 15x10x1-in. baking pan coated with cooking spray. Bake at 350° for 20-25 minutes or until golden brown, stirring every 8 minutes. Cool completely on a wire rack. Stir in dried fruits. Store in an airtight container.

Steps:

  • Spread rolled oats on a 15x10x1-in. baking pan. Bake at 350° for 5 minutes. Stir; bake 5 minutes longer or until toasted. Meanwhile, combine honey and oil in a small saucepan. Cook and stir over medium heat for 2-3 minutes or until heated through. Remove from the heat; stir in vanilla. Remove oats from oven; toss with nuts, bran and coconut. , Pour hot honey mixture over oat mixture; toss well. Return to oven and bake 20-25 minutes, stirring every 6 minutes. Remove from oven. Stir in raisins and dates. Cool. Store in an airtight container. Serve with yogurt and fresh fruit of your choice if desired.
