For a special occasion or when company's coming, this delicious seafood dish makes a lasting impression. You'll be surprised at how fast you can prepare it. Shrimp Monterey image

Steps:

  • Preheat oven to 350°. In a large skillet, heat butter over medium-high heat; saute shrimp and garlic just until shrimp turn pink, 3-5 minutes. Using a slotted spoon, transfer to a greased 11x7-in. baking dish. , Add wine to skillet; bring to a boil. Cook until liquid is reduced by half; pour over shrimp., Sprinkle with cheese and parsley. Bake, uncovered, until cheese is melted, 8-10 minutes. If desired, serve over linguine.

Steps:

  • Grate cheese.
  • Combine with remaining ingredients, toss well and enjoy!

16 ounces jalapeno jack cheese
1 tomatoes, diced (We've found we like to substitute a can of Rotel tomatoes)
1 bunch green onion, chopped
1 (4 ounce) can green chilies, chopped
1 (4 ounce) can black olives, chopped
1 (2/3 ounce) package dried Italian salad dressing mix, Good Seasons

This is a take on the O'Charley's dip of the same name. It's a huge hit at all of our family get togethers. My family likes this so much, we've actually made a whole meal of it! This can also easily be doubled (or even tripled).

Three Cheese Shrimp Dip image

Steps:

  • Preheat oven to 325°.
  • Mix together all ingredients EXCEPT cheddar and monterey jack cheeses.
  • Spread mixture in a casserole dish (spray dish with cooking spray for easy removal).
  • Bake, uncovered, until top begins to brown. Approximately 20 minutes.
  • Remove dish from oven and sprinkle shredded cheeses on top.
  • Bake again until the cheese is bubbly.
  • Remove from oven.
  • The recipe calls for Tortilla Chips for dipping, but I've also used Fritos Scoops and crackers. Very tasty either way!

Spinach and Shrimp Dip image

Steps:

  • Drop the shrimp into a pot of boiling water and cook just until the shrimp turn pink, 2 to 3 minutes. Let cool and chop. Set aside. In a heavy saucepan, over low heat, mix together the cream cheese, heavy cream, 4 tablespoons of the butter, and garlic. Cook, stirring, until the cream cheese is melted. Add the Jack cheese, lemon pepper, lemon juice, paprika, and salt and pepper to taste, and stir until cheese is melted. Melt the remaining tablespoon of butter in another saucepan. Squeeze out any water remaining in the thawed spinach. Add the spinach and cook, 2 to 3 minutes. Drain the spinach and add it to the cream cheese mixture. Stir and simmer for 5 to 8 minutes. Add the shrimp. Serve the dip in a chafing dish along with toast points or French bread for dipping.

1 1/2-2 cups fresh peeled shrimp
1 pound cream cheese, at room temperature
1 1/2 cups heavy cream
5 tablespoons butter
4 cloves garlic, minced
1 1/2 cups shredded Monterey Jack cheese

  • In a large bowl, beat the cream cheese, mayonnaise and mustard until smooth. Stir in the shrimp, crab, 1/3 cup Monterey Jack cheese and onions. , Cut the top fourth off the loaf of bread; carefully hollow out bottom, leaving a 1/2-in. shell. Steps:

  • Prepare spinach according to package directions. I usually cook it in the microwave about 3-4 minutes. Drain or blot with paper towels to absorb some of the excess water.
