GRANDMA'S LACE COOKIES
This is one of my favorite cookie recipes that has been passed down to me from my Grandmother. Friends and family love them-- they are so addictive!

- Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil.
- Melt butter in a microwave-safe bowl in a microwave. Add sugar and stir to combine. Add beaten egg and mix well. Stir in oats, flour, vanilla extract, salt, and baking powder.
- Drop teaspoonfuls of dough onto the prepared baking sheet.
- Bake in the preheated oven until edges are golden brown, about 8 minutes. Let cool completely before removing cookies from foil.

GAME DAY COOKIES

- Position racks in the upper and lower thirds of the oven; preheat to 350 degrees F. Line 2 baking sheets with parchment paper; set aside. Cook the bacon in a medium skillet over medium heat, stirring occasionally, until browned and crisp, about 10 minutes. Pour off the drippings into a small bowl, keeping the bacon in the skillet; set the drippings aside and let cool.
- Add 2 teaspoons brown sugar and the water to the skillet with the bacon and cook, stirring, until the sugar dissolves and the bacon is crisp, about 1 minute. Transfer the bacon mixture to a plate and spread out; let cool.
- Whisk the flour, baking powder, baking soda and salt in a medium bowl. Beat the butter, 2 tablespoons of the reserved bacon drippings, the remaining 1/2 cup brown sugar and the granulated sugar in a large bowl with a mixer on medium-high speed until light and fluffy, 2 to 3 minutes. Beat in the whole egg, egg yolk and vanilla until well combined. Reduce the mixer speed to low and beat in the flour mixture until just combined. Add the pretzels, chocolate chips, candy-coated chocolates and bacon and beat until just combined. Stir in the potato chips with a rubber spatula.
- Roll the dough into large balls (about 3 tablespoons each). Arrange 2 inches apart on the prepared baking sheets. Bake, switching the pans halfway through, until the cookies are golden and set around the edges but still soft in the middle, 13 to 15 minutes. Let cool 5 minutes on the pans, then transfer to racks to cool completely.
DR. SIEGEL'S DIET COOKIES
From a friend who obtained it from a famous diet Doctor. Eat 6 cookies throughout the day along with 6 oz. fish or chicken, 2 cups veggies and a salad for dinner. Use diet for one month and you can expect a 15 lb. weight loss. I tried them and they are tasty but would add maybe add 1/2 cup of Spenda and more spices next time! They DO fill you up!! Can't vouch for weight loss yet but sounds like it will work!!!

- Preheat oven to 375° Fahrenheit.
- Combine first 8 ingredients in large bowl, mix well with spoon.
- Blend banana, butter, sugar, eggs, egg whites, and vanilla at medium speed with an electric mixer until well incorporated.
- Add wet ingredients to dry, mix well and allow to stand for 5 minutes.
- Divide in half, then half again.
- Each portion makes 6 cookies. (I used an ice cream scoop to measure out the dough.).
- Bake for 12 minutes on cookie sheet or parchment paper.
- Cookies spread very little during baking. Allow to cool slightly and transfer to wire rack.
GG'S LACE COOKIES
My grandmother had two cookies she was famous for...this is one of them. they are crunchy, rich, fancy and almost a bit like brittle candy. These are sandwich cookies and great for parties and having with tea.

- Place butter, shortening, syrup and sugar in the top of a double boiler and bring to a boil over direct heat. Remove from heat and blend in flour and nuts.
- Drop by teaspoonfuls on a greased, foiled line cookie sheet.
- Bake at 325 degrees for 8-10 minutes. Cool slightly before removing from sheet.
- Place chocolate in new pan and melt over double boiler. When almost melted, remove from heat and stir until melted.
- Brush one cookie with chocolate and cover with another.
- Refrigerate til set.
LACE COOKIES WITH GOOEY CENTER

- The day before, make the ganache center: In a saucepan, heat the cream until boiling and pour over the chopped chocolate. Whisk to combine and then strain. Chill overnight. The next day, whip the ganache in a mixer with a whisk attachment until almost stiff, but still a little gooey.
- Preheat the oven to 350 degrees F.
- In a mixer with a whisk attachment, combine the salt, brown sugar, and corn syrup. Add the flour, butter, and vanilla extract, and mix well. Add the espresso and pecans and mix just to combine.
- Line a baking sheet with parchment paper. Dollop large tablespoonfuls of batter onto the parchment paper, leaving plenty of room between them as the lace cookie tuiles will spread out as they bake to about 5-inches in diameter.
- Bake until the edges are browned, about 8 to 10 minutes. When done, the tuiles will be bubbly and flat.
- Once the tuiles are baked, and while still hot but cool enough to hold together, individually peel the tuiles off the parchment paper, and drape them over a short, 3 to 4-ounce rocks or lowball drinking glass and leave them to cool. Repeat until all the tuile batter is used up. When cool, store carefully in an airtight container.
- When ready to serve, fill lacey tuile-cookie cups with the ganache, and dot with raspberries then give them a dusting of powdered sugar.
GELT COOKIES

- Beat butter, 1 1/2 cup white sugar, and confectioners' sugar together in a bowl using an electric mixer until smooth and creamy; mix in cornstarch and 2 cups flour. I work at a retirement community and during the holiday season, the hallways smell delicious; especially outside Mrs. B's apartment. This is an old family recipe and she does not share it with a lot of people. I am really flattered that she shared it with me. This a really easy lace cookie recipe. Beware! this is a fragile cookie.

- Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with a silicone liner (such as Silpat®).
- Place almonds into the bowl of a food processor; alternate pulsing and running at full speed every few seconds until finely chopped and crumblike. Be careful not to go too far; you don't want them too fine and pasty.
- Combine butter, brown sugar, and honey in a saucepan over medium heat. Stir a few times and cook until melted and dissolved. Bring to a boil, then carefully remove from the heat.
- Add vanilla extract, salt, and flour, and whisk until smooth. Add chopped almonds and mix with a spatula until everything is combined.
- Drop eight uniformly sized, rounded spoonfuls of batter (each about 2 teaspoons, or 15 grams) onto the prepared sheet. Fine-tune the cookie shapes and make sure they are evenly spaced.
- Place in the center of the preheated oven and bake until golden brown and a bit darker around the outsides, 10 to 12 minutes, rotating the pan halfway through.
- Remove from the oven and slide the silicone liner off the baking sheet and directly onto the countertop. Allow to sit until cool and crisp, 3 to 5 minutes, then gently peel cookies off the liner. Repeat to bake remaining batches.
- Spread melted chocolate over the flat side of one cookie. Place a second cookie, flat-side down, on top to make a sandwich and press very gently to seal. Repeat to form remaining cookies. Let sit until chocolate has firmed up, about 30 minutes.
