GINGER, LEMON & CORIANDER FISH SOUP
The Health Kick soup of all soups! This soup is incredibly good for colds, flus and other pesky symptoms that arise during the winter months! I cannot say enough about this soup because it is the healthiest and most tasty dish I have ever made. I love it and so will you! You can omit the coriander if it isn't your flavour, and substitute with lemongrass if you wish. If you don't want the fish, add chicken instead! Just as nice!

Steps:
- Bring 6-8 cups of water to boil in a large pot and add lemon slices (squeeze them into the water and then throw them in the pot).
- Add as much ginger and garlic as you can handle! the more, the better - reduce heat to low.
- Julienne (long ultra-thin slices) carrot and scallions and add to pot.
- Slice fish (or chicken if you want to substitute) into bite size pieces and add to soup mix - bring back to boil for 1-2 minute, then reduce heat to simmer.
- Add all other ingredients and simmer for 1/2 hour.
- Variation: add fresh chilli sparingly, if you like it hot!
- Lemongrass is a wonderful additive if you have it in your pantry.

LIME CORIANDER SOUP
This soup is only available in the most fine dining restaurants. It is the most delicious soup you could ever think of, tasting of fresh coriander n lemon. You could add the vegetables or just leave them out and add only chicken if using the non veg version. Its so simple to make and if you prepare it on a dinner party, it would be an instant star try it !!!!!

Steps:
- Stock:.
- Boil water or prepared stock with salt on a high flame.
- Add lemon zest, coriander roots, peppercorns, ginger skin.
- When it starts to boil, boil it for 3 minutes, then turn off flame let it stand one minute.
- Pass it through a sieve and return the stock to the pan. Note: will be of a very light green colour.
- Soup: (cooked on high flame).
- Boil the sieved stock with 1 tsp salt.
- When it starts boiling, add the vegetables and boil for 1 minute.
- Add msg and pepper / green chillies; cook for another minute.
- Mix cornflour in water or remaining stock if there is any. Add 1/2 cup coriander leaves to the soup mix well now immediately add cornflour.
- Cook till it boils.
- Reduce heat and add lemon juice, sugar, boiled pieces of shredded chicken.
- Cook for 4 minutes only (do not overcook).
- Turn off flame add 1/3 cup remaining coriander leaves; mix well.
- Serve immediately.

Steps:
- Keep water to boil in big saucepan.
- Go on adding vegetable. I add according to the cook time the vegetables take. Add onions, potato and carrots. let it cook for 2 minutes then add rest of the vegetables except coriander.
- Chop little coriander ( 2 tablespoon) and add to the soup. Take the remaining coriander leaves with stems in blender and blend it in smooth paste, Add this paste to the soup.
- Add salt, black pepper powder, dry basil leaves and finely cut parsley. Stir well. Let it cook. Grate the lemon zest and add to the soup. Now squeeze the lemon and add the juice.
- In a small bowl mix take 3 tablespoon cold water and mix the corn flour nicely till it becomes smooth paste. Add this paste slowly stirring continuously so as to avoid lump formation.
- Let it cook for another minute.
- The soup is ready to serve. Serve hot.
