- Whisk together soy sauce, 3 tablespoons oil, the ginger, sugar, chopped scallion, and 1/2 teaspoon pepper.
- Arrange pork chops in a 9-by-13-inch nonreactive baking dish. Reserve 3 tablespoons marinade, and pour remainder over pork chops. Marinate, covered with plastic wrap, flipping chops halfway through, for 45 minutes.
- Heat remaining tablespoon oil in large skillet over medium-high heat. Remove pork chops from marinade, and sear for 3 1/2 to 4 minutes. Reduce heat to medium. Flip chops, and sear until just cooked through, 3 1/2 to 4 minutes more. Transfer chops to a board or platter. Let rest for 5 minutes.
- Add reserved 3 tablespoons marinade to skillet. Simmer over medium heat until thickened, about 30 seconds. Spoon sauce over chops. Garnish with thinly sliced scallion.

- In a large bowl, combine garlic, tamarind, sambal oelek, ginger, salt, cumin, fish sauce and turmeric. Rub mixture evenly over pork, and let marinate for at least 1 hour and up to overnight.
- Heat oven to 400 degrees. Heat oil in a cast-iron skillet over medium-high heat. HONEY-SOY BRAISED PORK WITH LIME AND GINGER
This is a wonderfully simple and hands-off way to prepare a flavorful hunk of meat, equally suited to a weeknight or a dinner party. There is no need to brown the pork first because the meat gets appealingly dark and caramelized while braising in the rich combination of soy sauce and honey. Fresh cilantro, scallions and a squeeze of lime added just before serving bring freshness. This meal is flexible: It works over rice or other whole grains, tossed with noodles or wrapped in lettuce leaves.

- Heat the oven to 325 degrees. Place the pork in a large Dutch oven that has a lid. Scatter the garlic, ginger, red-pepper flakes and lime zest over the top. In a measuring cup, whisk together the tamari, honey and sesame oil, then pour it over the pork. Using tongs, turn to coat all sides of the pork in the sauce, and spoon some over the top so that some of the garlic and ginger is on top of the pork. Cover, transfer to the oven and cook for 2 hours.
- Uncover the pot and flip both chunks of pork. Cover the pot and braise until the pork shreds easily with a fork, about 1 more hour. Transfer to the stovetop.
- Using tongs, transfer the pork to a serving platter or a large shallow serving bowl. Using a ladle, skim and discard the excess fat off the surface of the cooking liquid remaining in the Dutch oven, if desired. Bring the sauce to a boil over medium-high heat and let it simmer until reduced and slightly syrupy, about 8 minutes.
- While the sauce simmers, coarsely shred the pork using two forks. Sprinkle the lime juice over the top of the meat. Drizzle about half the sauce over the top of the shredded meat, then toss to combine. Serve over rice or noodles or in lettuce cups. Top with sesame seeds, scallions and cilantro. Pass the remaining sauce at the table, if desired, as well as extra lime wedges and red-pepper flakes.

SOY LIME GLAZED PORK CHOPS

- 1. Mix the soy sauce, honey, lime juice and zest, and Hoisin sauce together in a bowl.
- 2. Trim and pat-dry the pork chops. Place the flour on a shallow bowl and seasoned with salt and pepper. Heat a large heavy skillet over medium-high heat. Dredge the chops in the flour and shake off excess. Add the oil to the skillet and then the chops, cook until lightly browned, about 4 minutes. Turn and repeat on the other side until lightly browned, about 2 minutes more. Transfer the chops to a plate.
- 3. Add the scallion whites and garlic to the pan and cook stirring until wilted, about 30 seconds. Add the soy mixture and increase the heat to high and cook, scraping up any browned bits with a wooden spoon until the mixture thickens. Return the chops to the pan and cook, turning often, until glazed and hot, about 2 to 3 minutes. Serve chops drizzled with glaze, scallions tops scattered over, and greens if desired.

GINGER LIME PORK CHOPS
I was looking through one of my old cookbooks for some new inspiration and came across this recipe. Since I had some beautiful fresh limes, I gave it a go. The meat comes out so beautifully tender and flavourful. The minimum marinating time is 1 hour but if you can marinate the chops longer, by all means do so. Marinating time is included in the prep time.

- Trim the fat from the pork chops.
- Place in a single layer in a dish.
- Grate the zest and squeeze the juice from the limes.
- Combine the juice and zest with the oil, ginger, coriander and cumin and mix well.

GRILLED LIME-GINGER MARINATED PORK LOIN
This is another one of my experimental yet successful creations. DH, the guinea pig, heartily approved. The pork loin turns out tender and juicy with many layers of flavor: smokiness from the grill, tanginess from the lime juice, nuttiness/saltiness from the soy sauce and a little heat from the ginger and red pepper flakes.

- Preheat gas grill to medium heat.
- Into a gallon-sized resealable plastic bag, place pork loin first and then remaining ingredients. Seal bag, gently squeezing as much air out as possible. With your hands, toss and squeeze the bag until the pork loin is well-coated. Marinate at room temperature for 30 minutes or refrigerated for NO MORE THAN two hours. GARLIC-LIME PORK CHOPS
I came up with this recipe because my husband loves pork chops and I was tired of eating them. It turned out to be so good, I wont make them any other way. The pork chops have a great lime flavor with a little kick. I always serve with rice and veggies. This recipe is for 2, but I have made it for 4. Just use smaller half inch pork chops.

- Rinse pork and place in dish to marinate. Stab pork with a fork till there are plenty holes. Cut the lime in half and squeeze both halves over the pork. Sprinkle salt & pepper and garlic powder over one side of pork. Cover and place in fridge for 20-30 minutes.
- In a large skillet, heat vegetable oil and green onions over medium heat.
- Place pork chops in skillet seasoned side down and sprinkle adobo and creole seasoning on top side of pork. (go heavy on the creole seasoning for a spicy kick).
- Cover and cook for about 7 minutes.
- Uncover and turn pork over. Cover and cook for 5 minutes.
- Continue turning pork over every 5 minutes until pork is completely cooked.
- Serve with rice.
EASY CHILI-LIME PORK CHOPS
I through this together one night when I was tired after a long day at work but didn't want to eat plain chops. The chili-lime seasoning is readily available in the ethnic food aisle of grocery stores in areas with a large Hispanic population or it can be obtained at Latin grocery stores. I have the Klass brand, but there are others that are just as good. This recipe is flavorful but not spicy. If you want spicy feel free to add additional hot chilies. Be sure to get pork chops that do NOT have "broth" or "flavoring solution" added because they have too much salt and the company-added seasonings tend to overpower recipe ingredients.

- Measure and mix dry seasonings.
- Rub seasoning mix on pork chops.
- Saute pork chops in skillet over medium heat, turning once, until nearly cooked. Use a little olive oil in the pan if chops are lean enough to be likely to stick.
- Turn heat to very low, sprinkle sherry over chops, and cover the pan.
- Let chops sit about 5 minutes or until fully cooked. Chops should be nicely browned and not dried out.
- Remove to a serving platter and pour any pan juices overtop.
- Note: Chili-lime pork chops could get MUCH fancier with the use of fresh lime juice, lime zest, specific varieties of chilies, etc. but this easy version was what I was up to after a 10 hour shift in the near-100-degree heat.
- Note: This would be very good cooked on the grill and served with sauteed onions and peppers.
