Steps:
- Combine the beer, peach nectar, peaches and syrup in a large pitcher; stir to blend. Serve immediately.
- Place 1/2 cup water, the sugar and ginger in a small saucepan. Bring the syrup to a boil over high heat. Reduce the heat and simmer until the sugar dissolves, about 5 minutes. Let the syrup cool completely, about 20 minutes. Strain before using.
GINGERED PEACH PEAR NO COOK FREEZER JAM

Steps:
- Stir sugar and contents of package in a bowl until well blended.
- Add peaches, pears, gingerroot and lemon zest and juice. Stir 3 minutes.
- Ladle jam into clean jars.
- Twist on lids and let stand until thickened, about 30 minutes.
- Tip: For best results, use fully ripe pears and crush with a potato masher.

Steps:
- Bring peaches, ginger, and pectin to a boil in a large saucepan over medium heat. Stir in the sugar and butter; cook and stir until the sugar is dissolved. Return to a boil, stirring constantly for 1 minute more. Remove from heat, and skim off any foam with a spoon.
- Sterilize the jars and lids in boiling water for at least 5 minutes. Pack the peach jam into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
- Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil over high heat, then carefully lower the jars into the pot using a holder. Leave a 2 inch space between the jars. Pour in more boiling water if necessary until the water level is at least 1 inch above the tops of the jars. Bring the water to a full boil, cover the pot, and process for 10 minutes.
- Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

Steps:
- Bring boiling-water canner, half full with water, to simmer. Wash jars and screw bands in hot soapy water; rinse with warm water. Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use. Drain well before filling.
- Peel and pit peaches; finely chop or grind fruit. Measure exactly 4-1/2 cups prepared fruit into 6- or 8-qt. saucepot. Stir in ginger.
- Stir pectin into prepared fruit in saucepot. Add butter to reduce foaming. Bring mixture to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly. Stir in sugar. Return to full rolling boil and boil exactly 1 min., stirring constantly. Remove from heat. Skim off any foam with metal spoon.
- Ladle immediately into prepared jars, filling to within 1/4 inch of tops. Wipe jar rims and threads. Cover with two-piece lids. Screw bands tightly. Place jars on elevated rack in canner. Lower rack into canner. (Water must cover jars by 1 to 2 inches. Add boiling water, if necessary.) Cover; bring water to gentle boil. Process 10 min. Remove jars and place upright on towel to cool completely. After jars cool, check seals by pressing middles of lids with finger. (If lids spring back, lids are not sealed and refrigeration is necessary.)

Another fantastic recipe from my upstairs neighbor, who likes to raid my fruit trees, and always gives me the wonderful things she makes with that fruit. I love to use this jam poured over chicken pieces in a crock pot, or covered in the oven.

Steps:
- Place the peaches in boiling water for 1 minute, or until the skins loosen.
- Then plunge them in ice water.
- Slip off the skins, halve the fruit and remove the pits.
- Cut the peaches into 1 inch pieces.
- In a large, non-reactive pot, mix the peaches, sugar, ginger, lemon juice and allspice.
- Simmer over medium heat for 30 minutes, or until the mixture thickens and mounds on the spoon.
- Ladle into jars and store in the fridge for up to 2 months.

- Bring a canner of water to a boil and sterilize your jars and rings. Put your lids in hot water to wait for you.
- Cut your peaches in half, remove the pits and peel them. Cut the peaches into even sized pieces; about 1/2 to 3/4 inch in size. Add the peach pieces, water, and piece of fresh ginger to a heavy-bottomed saucepan. Bring the mixture to a boil over high heat, cover the pan, drop the heat to medium low, and simmer for 4 minutes or until the peaches are softened but still have shape and body to them. Remove the mixture from the heat, fish the ginger piece from the peaches, and scoop 4 cups of the cooked peaches into a liquid measuring cup. Add the dried ginger, lemon juice and calcium water and stir well. You can keep any excess for topping ice cream!
- Pour the measured 4 cups of peaches back into the saucepan and bring to a full, rolling boil over high heat. While stirring constantly, slowly add in and incorporate the sugar/pectin mixture. Stir enthusiastically for 1 to 2 minutes to dissolve the pectin and return the preserves to boiling. As soon as they return to a full boil, remove the pan from the heat.
