Steps:
- Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 9 inch springform pan.
- Using a fork, combine gingersnaps, hazelnuts, 3 tablespoons brown sugar and melted butter. Press mixture onto the bottom and two inches up the sides of the pan to form the crust.
- With an electric mixer, beat cream cheese and brown sugar until light and fluffy. Stir in the pumpkin. Mix in the cream, maple syrup, cinnamon, allspice and vanilla. Beat in the eggs, one at a time, mixing until smooth.
- Pour batter into prepared crust. Bake in the preheated oven for 90 minutes, or until center of cheesecake is set. Allow to cool in pan for 30 minutes, then refrigerate overnight.

- Preheat oven to 350°. In a large bowl, cream butter and brown sugar until light and fluffy. Beat in egg and molasses. In a small bowl, whisk flour, ginger, cinnamon, baking soda and cloves; gradually beat into creamed mixture. Reserve 1 cup dough for topping; press remaining mixture onto bottom of a greased 9-in. square baking pan., For cheesecake batter, in a small bowl, beat cream cheese and 1/4 cup sugar until light and fluffy. Beat in pumpkin and spices. Add egg; beat on low speed just until blended. Pour over crust., Drop reserved dough by tablespoonfuls over cheesecake batter. Sprinkle with remaining sugar., Bake 25-30 minutes or until center is almost set. Cool 1 hour on a wire rack. Refrigerate at least 2 hours. Cut into bars.

- to 350 degrees F. Wrap the bottom of a 9-inch springform pan tightly in foil – this is the easiest way to ensure no liquid oozes in or out of the springform pan while the crust and the cheesecake bake. Make sure it’s tightly wrapped so it does not fall off while you’re transferring anything in or out of the oven!
- Add the gingersnap cookies to the bowl of a food processor and pulse until the cookies are crushed into small crumbs. You will have about 2 ½ cups of gingersnap crumbs. If you do not have a food processor, you can also place the gingersnaps in a resealable bag and use a rolling pin & some elbow grease to crush them. Either way works! Transfer the gingersnap crumbs to a large bowl with the brown sugar. Mix to combine. Pour the melted butter over top and mix to combine, until the entire mixture is moist. Transfer the gingersnap mixture to the prepared springform pan. Press the crumbs into an even layer. I like to press them halfway up the sides of the springform pan and use the bottom of a measuring cup to press it in really well and create some nice edges.

- Meanwhile, as the gingersnap crust bakes, prep the cheesecake filling. In the bowl of a stand mixer, combine the cream cheese, sour cream and granulated sugar. Using your mixer’s paddle attachment, beat the mixture on medium speed for 3-4 minutes until the mixture is smooth and creamy, then add in the pumpkin puree. Use a spatula to occasionally scrape down the sides of the bowl. Reduce the speed to low and slowly add in the beaten eggs, vanilla extract and pumpkin spice. Mix until just combined.
