GLUTEN-FREE BREAD FOR CELIACS

I absolutely love this recipe. The bread is a bit heavier than wheat bread but it's also much more filling and absolutely delicious. It works great in my bread machine but I also mix it by hand and place it in a muffin tin for little biscuits that I take for lunch.

Gluten-Free Bread for Celiacs image

Steps:

  • Place water, eggs, corn oil, and vinegar in a bread machine.
  • Pour corn flour, milk powder, tapioca flour, flaxseed meal, rice flour, sugar, xanthan gum, and salt into the bread machine and mix well. Make a well in the center with your fingers and add yeast.
  • Run Whole Wheat cycle. Remove dough from the machine after the cycle is done, about 1 hour 45 minutes.

3 large eggs
3 tablespoons corn oil
1 teaspoon vinegar
1 ½ cups corn flour
½ cup skim milk powder
1 cup tapioca flour
½ cup flaxseed meal
¼ cup white rice flour
3 tablespoons white sugar
2 ½ teaspoons xanthan gum
1 ½ teaspoons salt
2 ¼ teaspoons active dry yeast

WONDERFUL GLUTEN FREE WHITE BREAD

Like most Celiacs, white bread is one of the foods our gluten-free family misses the most. I created this after much trial and error in trying to make a bread that tastes like real wheat bread.

Wonderful Gluten Free White Bread image

Steps:

  • In a small bowl, combine water, sugar and yeast. Set aside until foamy, about 5-10 minutes.
  • In the mixing bowl of a stand mixer, combine yeast mixture with remaining ingredients. Mix on medium speed for 2 minutes.
  • Spoon into a greased loaf pan. Using the back of a wet spoon, smooth the top of the bread.
  • Place in a warm place for 1 hour or until bread has risen just over the top of the loaf pan.
  • Bake at 375 degrees for 25 minutes. Remove from oven and immediately remove bread from pan. Place on wire rack to cool.
