GLUTEN-FREE CORNBREAD

I love bread, but am gluten-intolerant. This recipe gives you all the taste and none of the gluten!

Gluten-Free Cornbread image

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease an 8-inch square pan.
  • Mix cornmeal, sugar, flour, and baking powder together in a bowl.
  • Whisk milk, butter, and egg together in another bowl. Stir into cornmeal mixture just until combined and some lumps remain. Fold in corn. Pour batter into the pan and smooth out the top.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 20 to 25 minutes.

This recipe came from my aunt who is a fabulous cook! She made this every year for Thanksgiving and I use it for any special occasion. The recipe can easily be cut in half to feed about 6-8 people. I have also used fat free sour cream with no difference in taste.

Steps:

  • Preheat oven to 350 degrees F.
  • Melt the 1/2 cup of butter in a large casserole dish in the microwave.
  • Mix the remaining ingredients in a large bowl until moistened.
  • Pour into the casserole dish.
  • Bake for 45 minutes to an hour or until it is golden brown on top.
  • Bake a little longer for a more cake-like consistency or a little less if you want it more like a pudding.

GLUTEN FREE CORN CASSEROLE

This corn casserole recipe is almost identical (at last) to the traditional Jiffy corn mix, sour cream, etc recipe that my family has made for years. Upon diagnoses of celiac disease, this was one of the first things I decided to try and replicate while converting it to gluten free ingredients....and I think Ive got it!! Since we never make this casserole just for my family, many non-celiacs have tried it as well and cannot believe it is Gluten Free!   • Mix together the first five ingredients. Fold in the rest of the ingredients and pour into a greased 9x13 baking pan. Top with the swiss cheese.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 4-cup souffle dish with butter. Dust dish with flour; tap out excess.
  • Beat cream-style corn, egg yolks, and cayenne pepper in a large bowl with an electric mixer until smooth.
  • Beat egg whites with cream of tartar in another bowl with an electric mixer until stiff peaks form. Fold a large spoonful of whipped egg whites into corn mixture until incorporated.
  • Fold corn mixture into remaining egg whites. Pour into the prepared souffle dish.
  • Bake in the preheated oven until souffle is golden brown and center is set, 25 to 30 minutes.

  • Thoroughly coat the inside of a 2 quart baking dish with the remaining 1 tablespoon of butter(I used 8×11, but any 2 qt shape/size will work). Pour the mixture into the dish and bake for 40 minutes. Then cover with foil and bake for another 20-25 minutes, or until well browned and set in the middle with a slight jiggle. Serve warm.
