  • Heat oven to 200C/180C fan/gas 6. Drain the peaches, but reserve the juice. Tip the peaches into a deep baking dish, roughly 20 x 30cm. Scatter over the lemon zest and juice and 1 tbsp of the agave, then toss everything together.
  • In a bowl, combine the flour, oats, butter, remaining agave and 4 tbsp of the reserved peach juice. Mix together, first with a spoon, then with your fingers, until you have a rough crumbly mixture. Scatter over the peaches, then bake for 35 mins until golden and crunchy on top.

This is a reconstruction free of allergens. It's quite sweet if you have avoided sugar for a while but it's PERFECT for those just making the change. You can't even tell that this is sugar free. * A word on xylitol and erythritol. Some folks with IBS cannot that tolerate xylitol can usually use erythritol. Unlike maltitol or other sugar alcohols, xylitol is naturally derived from birch trees in a distillation process similar to soy sauce. So, if you don't have an issue with distillation (and those of you who drink any distilled alcohol or partake of soy sauce should not), then xylitol is a pretty cool sweetener. Truvia is pricier but a great choice for those with IBS. It's a blend of the stevia leaf and erythritol, another plant-derived sugar alcohol. Why do you care? Well...other sugar substitutes (Splenda, Equal, maltitol) are completely artificial and have various known and suspected negative health effects. ** For celiacs, I learned that many buckwheat flours are prepared on shared machines with gluten-containing grains. Run raw buckwheat kernals through a grain grinder or food processor to assure yourself of truly gluten-free flour.

Place pan on a large baking sheet to catch leaks, and bake peaches for 20 minutes, until beginning to soften.
  • Meanwhile, combine rolled oats, almond flour, sweet rice flour, oat flour, corn starch, sugar, baking powder, and salt in the bowl of a stand mixer or a large mixing bowl and whisk to combine. Add the cold butter and vanilla extract and, if using a stand mixer, beat with the paddle attachment on medium speed until the dough clumps together when pinched. If working by hand, cut in the butter by hand or with a pastry cutter and mix until the butter incorporates and the dough clumps together when pinched.
  • Top warm peaches with crumbles of the dough and bake for 40-45 more minutes, until the filling is bubbling and the crumbles are golden brown.
