- For glaze, in a small saucepan, combine vinegar and lemon zest; bring to a boil. Cook 10-12 minutes or until mixture is thickened and reduced to about 1/3 cup (do not overcook)., Grill plums, covered, over medium heat 2-3 minutes on each side or until tender. Drizzle with glaze; top with cheese.

SALAD WITH WARM GOAT CHEESE
Steps:
- Slice the Montrachet into 12 (1/2-inch-thick) slices. (The easiest way to slice goat cheese is to use a length of dental floss.) Dip each slice into the beaten egg whites, then the bread crumbs, being sure the cheese is thoroughly coated. Place the slices on a rack and chill them for at least 15 minutes.
- For the dressing, place the vinegars, sugar, salt, pepper, and egg yolk in the bowl of a food processor fitted with a steel blade and blend for 1 minute. With the motor running, slowly pour the olive oil through the feed tube until the vinaigrette is thickened. Season, to taste.
- Toss the salad greens with enough dressing to moisten, then divide them among 6 plates.
- Melt 1 tablespoon oil and 1 tablespoon butter in a saute pan over medium-high heat until just under smoking. Cook the goat cheese rounds quickly on both sides until browned on the outside but not melted inside. Top each salad with 2 warm rounds and serve.

- In a small sauté pan, toast the pine nuts over medium heat, tossing often, until golden brown, about 3 minutes. Remove from the heat.
- In a small liquid measuring cup or bowl, whisk together the olive oil, vinegar, salt and pepper.
- Place the arugula in a large salad bowl. Pour just enough dressing over the greens to moisten, and toss to coat. Add the peaches, basil, goat cheese and toasted pine nuts and toss to coat. Add more goat cheese and dressing if desired. Toss gently and serve immediately.

- Toast nuts: Spread nuts in a layer on a tray. Toast in a 180C / 375F oven for around 5 minutes until they are lightly browned and smell toasty. Immediately transfer to a small bowl to cool. - Put the pecans in a small pan over a medium heat. Add 1 tbsp of the honey and a pinch of salt. Let the honey heat and bubble, shaking the pan from time to time, for 4-5 minutes or until the pecans are browned and glazed with the honey. Transfer to a sheet of compostable baking paper, then leave to set.
- Put the onion slices in a ceramic or glass bowl with the vinegar, sugar and a good pinch of salt, then stir well. Set aside for 15 minutes, then drain, reserving the juices and onions separately.
- Heat the grill to high and line the grill pan with foil. Lightly brush one side of the bread with a little olive oil, then grill, oiled side up, for 1-2 minutes until lightly toasted. Turn the slices over so the charred side is now underneath and top with a slice of goat’s cheese, then season with the crushed pepper.
- Grill for 1-2 minutes until the cheese is bubbling and golden. Meanwhile, heat the remaining 2 tbsp honey in a small saucepan until just simmering. Remove the pan from the heat.
