Steps:
- About 45 minutes before serving, in a 12" skillet, over medium heat, in 2 tablespoons butter, cook the onion until tender, about 5 minutes; remove to a plate and keep warm.
- Meanwhile, cut fillets in half crosswise.
- On waxed paper, combine flour and salt, pepper, paprika; coat fillets with mixture.
- In same skillet, over medium heat, in 1/4 cup butter, fry the fish, turning once, until fish is browned and flakes easily when tested with a fork. Put fish on a platter. Fry until all fish are done.
- To mixture left in the skillet, add lemon juice and Worcestershire sauce and bring to just boiling, stirring. Pour over fish. Top with cooked onion and garnish with watercress.
FRIED FLOUNDER WITH SWEET PEPPER MAYO

- For the sweet pepper mayo: Combine the mayonnaise, peppers, cornichon, parsley and lemon zest and juice in a medium bowl and stir to combine. Season with hot sauce to taste. Refrigerate while you make the flounder.
- For the flounder: Heat 2 inches of vegetable oil in a medium Dutch oven to 375 degrees F.
- Cut the flounder crosswise into pieces about as thick as 2 fingers. Whisk together the all-purpose flour, rice flour, seafood seasoning and baking powder in a large bowl (no need for salt as the Old Bay has salt in it). Whisk in the club soda to make a smooth batter slightly thinner than pancake batter.
- Spread flour for dredging on a plate and season with salt and pepper. Dredge half of the flounder in the flour, then dip in the batter and add to the hot oil. Fry until golden and very crisp, turning occasionally, 4 to 5 minutes. Drain on paper towels.
- Return the oil to 375 degrees F and immediately dredge, batter and fry the second batch. Serve right away with the sweet pepper mayo.
GOLDEN FLOUNDER
The topping puffs up slightly to a golden brown. It's a perfect topping for a mild fish. I never had good luck cooking under a broiler, so I wrapped the fish in foil and baked at 400 degrees for about 15 mins. Then I carefully transferred the filets to a foil-covered baking sheet, topped with the egg mixture and broiled about 5 mins. Don't prepare the topping too far in advance, it becomes watery.

- Place the egg yolks in a food processor or blender. Blend in the salt and pepper. Pour the oil through the funnel in a thin, steady stream with the machine running. Add in the lemon juice. Beat egg whites until stiff but not dry. Fold in the yolk mixture. Broil the fish about 2 inches from the heat source for about 6-10 mins, depending on the thickness of the fillets. Spead the sauce over the fillets and broil 3-5 minutes longer or until the sauce puffs and browns lightly.

- Wash fillets in cold water and pat dry. Sprinkle with salt and pepper. Dredge fillets in flour. Place oil and 2 tablespoons butter in flat, heavy-bottomed skillet and heat on medium-high until butter melts. Keeping heat at medium-high, cook fish on 1 side about 3 minutes (more or less, depending on size of fillets), until deep brown and crispy. Turn fish and cook on second side, about 3 minutes. - Heat oven to 450*, then coat baking sheet with cooking spray. Place bread crumbs, salt & pepper in a small dry skillet over medium heat. - In a bowl, combine almonds, raisins, capers, almond oil, and lemon juice; set aside.

EGG BATTER PAN-FRIED FLOUNDER WITH GREEN GARLIC
For savory, moist, delicate flounder, it is difficult to beat this fast, easy method. Lightly coat the fillets in flour, then dip them in a mixture of beaten egg and milk. Slide them into a hot skillet filled with oil to a 1/4-inch depth and let them fry until golden, a mere two minutes or so per side, without jostling them around too much. Serve with a sauce of green garlic cooked in butter, with the juice of half a lemon providing a jaunty, bright finish. A sprinkling of chopped parsley makes for an elegant presentation, lifting an already elevated weeknight dish. Use fluke or sole in place of the flounder if you'd like, or scallions for the green garlic.

- Season the fish fillets with salt and pepper. Make the egg batter by whisking together the eggs and milk in a shallow bowl, along with a pinch of salt.
- Put the flour on a plate. Coat each fillet lightly on both sides, then submerge the fish in the egg batter. (This can be done up to 30 minutes ahead.)
- Pour about 1/4 inch oil in a wide skillet over medium-high heat. When the oil looks wavy, lift the fish from the egg batter one piece at a time, allowing excess batter to drip off. (Discard remaining batter.) Carefully lay each fillet in the pan and let fry gently until golden, about 2 minutes per side. Remove and blot briefly on paper towels, then transfer to a warmed serving platter.
- Pour off any remaining oil and return the pan to the heat. Melt the butter in the pan and add the green garlic, and a little salt and pepper. Let cook without browning for about 1 minute, then add the lemon juice.
- Spoon the green garlic butter over the fish. Sprinkle with parsley, garnish with lemon wedges and serve immediately.

- Place the fillets on a flat surface and sprinkle with salt and pepper.
- Break the egg into a shallow wide dish and add salt, pepper and water. Beat well to blend.
- Spoon the flour onto a flat dish.
- Dip the fillets in the flour. Coat well on all sides, but shake off excess flour.
- Dip the fillets in the egg mixture to coat well on all sides. Drain off excess egg mixture.
- Heat enough oil in a skillet to coat the bottom lightly. Add a few pieces of fish at one time in a single layer without crowding. Let cook about 1 1/2 minutes or until golden brown on one side. Turn the pieces carefully and cook on the second side about one minute or until golden brown. Carefully transfer the pieces to a warm serving platter.
- Continue cooking the fish a few pieces at a time, adding more oil as necessary.
- Wipe the skillet and add the butter. Cook until the butter is melted and starts to brown. Add the lemon juice. Pour the butter over the fish. Sprinkle with parsley and serve.

CRUNCHY LOW FAT OVEN-FRIED FLOUNDER
I don't really care for fish all that much, but decided to try this recipe one night out of a change of pace. I was shocked that the fish actually turned out tasting really good; almost like real fried fish! My husband, who usually won't eat any seafood, really liked this dish too. Please keep in mind that you may need a little more of the ingredients than this recipe calls for such as the cornflakes, depending on how crunchy you want your fish. I used a little more when I made it. Hope you like it!

- Thaw the fish in microwave until the fish is tender.
- In med.
- bowl mix together the sour cream, lemon juice and chili powder.
- Dip the fish sour cream mixture then coat the fish with the corn flake crumbs.
- Place in a baking dish and drizzle the margarine over the fish.
- (The "I Can't Believe it's Not Butter" spray also works if you want an even lower fat and calorie dish.) Bake uncovered for 10-12 minutes or until fish flakes easily w/ a fork.
- ****I suggest to prevent the fish sticking to the pan, spray the baking pan a little before the fish goes in.
- I didn't spray it and the fish ended up sticking a little.
