- Preheat the oven to 400 degrees F.
- In a large bowl, toss together all of the ingredients. Spread the mixture in a single layer on a baking sheet. Bake until the potatoes and onions are golden brown and cooked through, about 40 minutes. Serve immediately or cool and store in an air-tight container in the refrigerator, reheating the next day in a preheated 400 degrees F oven for 10 to 15 minutes.

- Heat a 10-inch heavy skillet over medium high heat.
- Slice potatoes and onions very thin. Salt potatoes and onions. Add oil and butter to the pan. When the butter foams, add potatoes and onions to the skillet.
- Place a dinner plate on top of potatoes and weight it with any heavy object: a sack of flour, heavy canned goods, etc. Let the potatoes and onions crust, 2 to 3 minutes, then turn, replace weights, and let them crust again. Keep turning the potatoes and onions over for about 20 minutes, until they are evenly golden and crusted.
GOLDEN POTATO AND ONION GRATIN
I couldn't find this among all the potato and onion recipes and it is really quite good. I don't really like potatoes while my boyfriend would eat them everyday if he could - this is one of the ways I will eat them so he can have them once a week. I got this off of MSN. The recipe calls for a bread crumb topping but I have made it without and it is still fabulous. I will serve this with roast chicken or ham.

- In nonstick 12-inch skillet heat the 2 tablespoons of olive oil over medium heat. Add onions and cook 1 hour or until tender and deep golden brown, stirring occasionally. Add chicken broth and cook for 1 minute, stirring.
- Recipe can be prepared up to this point a day ahead. Cover and refrigerate onions until ready to use.
- Preheat oven to 375 degrees F. In a large bowl, toss potato slices with pepper and onion mixture. Transfer potato mixture to shallow 3 1/2 quart casserole dish or 13 x 9 inch glass baking dish. Cover casserole and bake 1 hour or until the potatoes are fork-tender.
- Meanwhile, in the same skillet, heat remaining 1 teaspoon of olive oil over medium/high heat. Add bread crumbs and cook five minutes or until toasted, stirring occasionally. Remove skillet from heat, stir in parsley.
- To serve, uncover potatoes and sprinkle with bread crumb mixture.

- Place potatoes in a large saucepan of cold salted water. Bring water to a boil. Reduce to a simmer, and cook until potatoes are fork-tender, about 20 minutes. Warm milk in a small saucepan. Drain potatoes, and return to the pan. Add warm milk, butter, salt, and pepper.
- Mash the mixture with a potato masher until all the liquid is incorporated and the butter has melted. Transfer mixture to a metal mixing bowl. Cover with aluminum foil; set over double boiler to keep warm.
- Meanwhile, heat olive oil in a large skillet on medium heat. Add onions, and saute stirring often, until golden brown, 10 to 12 minutes.
- Adjust the seasoning of potatoes with salt and pepper, if desired. Transfer the potatoes to a serving dish. Spoon the onions over the potatoes, and crumble Roquefort cheese over the top. Serve immediately.

- Preheat oven to 450 degrees F (230 degrees C).
- Combine potatoes and onion in a roasting pan; cover with canola oil and olive oil. Add garlic, onion soup mix, rosemary, and black pepper and stir until potatoes and onion are evenly coated. Cover roasting pan with aluminum foil.

- Cook the peeled and cubed potatoes in large pot with salted boiling water just until tender; about 15 minutes.
- Drain.
- In a seperate saucepan combine butter, soup and sour cream, heat until just melted.
- Layer in a spray coated 13x9" baking dish; potatoes, soup mixture, cheese and onions (in that order).
- Bake uncovered in a 350 degree oven for 30-40 minutes.

- In a large saucepan, cover potatoes and carrots with 2 inches of cold water and bring to a boil over high heat. Reduce heat and simmer until potatoes are tender, about 20 minutes.
- Meanwhile, cook bacon in a large skillet over medium heat until crisp; drain on paper towels, then crumble when cooled. Discard all but 2 tablespoons of the bacon drippings from skillet; add oil and onion to drippings and sauté 10 minutes or until softened and lightly browned. Stir in thyme; cook 2 minutes longer.
- When potatoes are fork-tender, drain in a colander and transfer mixture to a large bowl. Add buttermilk, butter, and salt; mash with a potato masher until potatoes are smooth, with small flecks of carrot visible. Stir in onions. Crumble bacon over top.
