- Remove the pan from the heat and add the Gorgonzola, Parmesan, salt, pepper, and parsley. Whisk rapidly until the cheeses melt, and then serve. If you must reheat, warm the sauce over low heat until melted, then whisk vigorously until the sauce comes together.
MUSHROOM-GORGONZOLA CREAM SAUCE

- Cook 1 pound sliced assorted mushrooms in 2 tablespoons olive oil in a pot over medium-high heat, stirring, until browned and tender, about 7 minutes. Season with salt and pepper. Add 3 minced garlic cloves and cook, stirring, until softened, 30 seconds. Add 1 cup heavy cream; bring to a simmer and cook until thickened, 2 to 3 minutes. Toss with 12 ounces cooked fettucine, adding up to 1/4 cup pasta-cooking water to loosen the sauce. Off the heat, stir in 2 ounces crumbled gorgonzola until creamy; season with salt and pepper.
GORGONZOLA PASTA SAUCE
Extremely easy and quick pasta sauce recipe. Use for cooked chicken or shrimp, too. For a lower fat version, substitute half and half for the cream and add a teaspoon of cornstarch for thickening.

- Place a heavy skillet over medium heat. Pour cream into skillet, bring to a simmer, and cook cream until it reduces by half, about 8 minutes, stirring occasionally. Season with salt, black pepper, and cayenne pepper.
- Bring a pot of salted water to a boil. Pour dried ravioli into boiling water and cook, stirring occasionally, until pasta is tender, 16 to 18 minutes. Drain pasta, reserving a cup of pasta water.
- Gently fold cooked ravioli into cream sauce and turn heat to low. Mix in Gorgonzola cheese, stirring gently until melted. If sauce is too thick, thin it with a little pasta cooking water.

- Trim any rind from the cheese. Put into a 4 - 6 cup saucepan with the milk and the butter. Warm gently.
- Break up any bits of Gorgonzola until it has dissolved. Simmer for just a moment. Remove from heat.
- Cook pasta. Drain.
- When pasta is nearly done, return sauce to stove. Add cream, and a little salt and pepper. Turn the heat to medium high, and stirring all the while, reduce a little, like for Alfredo sauce. Stir in the Parmesan cheese. Toss with pasta in a heated dish, or in pasta pan, and serve in warm bowls with more grated cheese along side and a pepper mill.

- 1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions. Drain and reserve 1/2 cup of pasta water.
- 2. Meanwhile, in a large skillet heat butter over medium heat and cook garlic until softened but not brown, about 1 to 2 minutes. Add cream and nutmeg and season with salt and pepper to taste. Cook, stirring occasionally until the sauce is slightly thickened and reduced, about 5 minutes. Add crumbled Gorgonzola and cook, stirring often until the cheese is melted and the sauce has thickened. Stir in the chives.
- 3. Toss the pasta in the sauce and transfer to serving bowls. Serve with grated Parmigiano-Reggiano if desired.

- Make roux first by melting butter in a small saucepan. Slowly add flour and cook, stirring constantly, until mixture has browned. Set aside to chill.
- In medium saucepan, heat oil. Add garlic and sauté a minute or two. Add milk and cream and bring to a boil. Reduce heat and simmer 10 minutes, then add cheeses and pepper.
- Cook about 15 minutes until cheeses are completely melted, stirring constantly.
- Add roux in small portions, mixing well after each addition so that roux is incorporated.
- Continue adding portions of roux until mixture is the consistency of melted chocolate. Add salt to taste.
- Serve with toasted garlic breadsticks and veggies of choice.

- For sauce:.
- Bring stock and milk to simmer in small saucepan.
- Melt butter in medium saucepan over low heat; add flour and stir 5 minutes, do not brown.
- Gradually whisk in stock mixture.
- Increase heat to medium and bring sauce to boil, stirring constantly.
- Reduce heat to low and cook until thickened, stirring frequently, about 8 minutes.
- Add cream and simmer until reduced to 2 1/2 cups, stirring frequently, about 10 minutes.
- Add gorgonzola and parmesan and stir until smooth.
- Season with salt and pepper.
- (Can be prepared 1 day ahead. Press plastic onto surface of sauce to prevent skin from forming. Cool,cover and refrigerate.).
- For Bread:.
- Trim ends off bread,cut loaf crosswise in half and cut each piece in half, leaving one long side attached; open bread flat.
- Set on baking sheet.
- Heat oil in small saucepan over low heat.
- Add 2 tablespoons parsley, garlic and herbs de provence; season with salt and pepper.
- Stir until heated through.
- Brush oil mixture over bread and broil bread until golden brown, about 1 1/2 minutes.
- Fold bread back into loaf shape; cut diagonally into 2-inch-wide slices.
- Rewarm sauce over low heat, stirring constantly.
- Pour onto heated platter and top with bread slices.
- Sprinkle with remaining 1 tablespoon parsley and serve immediately.

- Garlic Oil:.
- Preheat oven to 450°F.
- Wrap garlic head in foil and roast in middle of oven until tender, about 45 minutes.
- Carefully unwrap garlic and cool.
- Horizontally halve garlic head and arrange, cut sides down, in a small bowl with oil.
- Let mixture stand, covered and chilled, 2 to 3 days to infuse oil with garlic flavor.
- Preheat broiler.
- In a saucepan boil cream, stirring occasionally, until reduced to about 1/2 cup.
- Add Gorgonzola and cook over low heat, stirring constantly, until cheese melts and sauce is smooth.
- Remove pan from heat and keep sauce warm, covered.
- Horizontally halve baguette and arrange, cut sides up, on a baking sheet.
- Broil bread 2 to 3 inches from heat until golden. (If crust is soft, you may broil crust side of baguette as well.)
- Brush cut sides of baguette with garlic oil and season with salt.
- Cut baguette crosswise into 1-inch-thick slices.
- Pour warm Gorgonzola sauce onto center of a large plate and arrange roasted garlic bread slices around sauce.
