A fancy sandwich for a quick lunch. Cream cheese is blended with mayonnaise and shredded cheese, then grilled between slices of French bread.

- In a medium bowl, combine cream cheese, mayonnaise, shredded cheese and garlic salt. Beat until smooth.
- Preheat a large skillet over medium heat. Spread cheese mixture on 4 slices of bread, then top with the other 4 bread slices. Lightly butter both sides of each sandwich. Place sandwiches in skillet, and grill until golden brown on both sides, about 4 minutes per side.

- Saute onion in 1 teaspoon butter in a small skillet until tender and lightly browned. Add olives; cook 1 minute longer. Spread mustard over bread slices. Layer one slice with onion mixture and cheeses. Top with remaining bread. Spread outside of sandwich with remaining butter., Toast sandwich in a small skillet over medium heat for 2-4 minutes on each side or until cheese is melted.

A quick comfort meal at my house is always tomato soup and grilled cheese sandwiches. Since DH and I are both 50+, I feel that _perhaps_ we may be ready for a more grown-up version of this meal. Let's start with the sandwich. If I don't get _fired_ over this, I'll tackle the soup next. ;-)

- Place slices of bread on a cutting board. Brush topsides with olive oil. Turn over one side of bread (so oiled side is facing down).
- Top with desired fillings in the order listed.
- Place remaining slices of bread on top (oiled-side-up)and cook on a preheated nonstick griddle for 2 to 3 minutes per side, or until golden brown and cheese is melted.

GOURMET GRILLED CHEESE SANDWICH MILAN STYLE
In Milan, toasted cheese sandwiches are a popular gourmet treat. The cheese is laid over the artisan bread and then topped with olives, roasted peppers and herbs. The sandwich is closed, pressed tightly and browned on both sides with olive oil. This easy to make recipe is perfect for anyone in a time crunch. They only take 5 - 10 minutes to make! - Mix the sliced olives and sliced roasted red peppers in a bowl with garlic and cilantro or green onion. Sprinkle 4 slices of bread with half of the cheese and then top with the pepper-olive mixture. Apply the remaining cheese as another layer. Top with a second piece of bread and press together.
- Heat the olive oil in a large skillet and gently brown the sandwiches, turning once or twice as the cheese melts and holds the bread together. Some of the cheese will ooze out and crisp in the skillet, which is delicious, even if it burns slightly.
- Serve hot, on a paper napkin lined plate to absorb the excess cooking fat. Enjoy!

GOURMET GRILLED CHEESE
This is a tasty. flavorful alternative the normal, everyday grilled cheese sandwich. I tried this at a local restaurant and made up my own "home" version. It is delicious!

Steps:
- Spread about 1/2 tbsp of butter (more or less, if you prefer) on one slice of bread, and place on skillet or griddle (butter side down).
- On the other side, spread 1 tbsp Chive & Onion Cream Cheese (once again you can use more or less than the recipe calls for, just use your judgment).
- Place 1 to 2 tomato slices on top of cream cheese.
- Then place 1 slice of pepper jack cheese and 1 slice of cheddar cheese on top of the tomato slices (I don't recommend using more than 1 slice of each kind of cheese, otherwise the sandwich will be overloaded).
- Spread 1/2 tbsp of the butter on the other slice of bread and place (butter side up) on the top of the sandwich.
- Repeat for the 2nd sandwich.
- Cook until golden brown on each side & enjoy!

- Stir the cream cheese, Miracle Whip and Montery Jack cheese together.
- Spread the cream cheese mixture over half of the bread, top with a cheese slice.
- Place another slice of bread over the cheese slice making a sandwich.
- Spread the second amount of Miracle Whip over the bread, using it like butter.
- Turn the sandwich over, spreading it onto that slice.
- Spray a frying pan with cooking spray and grill the sandwiches, turning once, until brown.
